Low-temperature cooking Low-temperature cooking is a method for cooking high-quality cuts of meat until just done. The meat remains tender and succulent. Cooking times for the low-temperature method are longer than those for conventional cooking. Suitable dishes
Use suitable glass, porcelain or ceramic dishes with a lid (e.g. a gratin dish with a lid). Tips for low-temperature cooking
Use only fresh, high-quality cuts of meat.
Carefully remove sinews and fat. Fat develops a strong, distinct flavour through low-temperature cooking.
Place the plates in the warming drawer together with the meat for the last 45–60 minutes.
To keep low-temperature cooked meat hot, turn back the operating dial o level 5 after low- temperature cooking. – It is not necessary to turn the meat. – The meat can be sliced immediately after low- temperature cooking with no standing time. – With this method of cooking, the meat may look pink on the inside. This does not mean that it is raw or not properly cooked. – Low-temperature cooked meat is not as hot as conventionally roasted or braised meat. Sauces or gravy should be served very hot. – Small pieces of meat can be kept hot for up to 45 minutes, larger pieces for up to 2 hours. Searing and completion times All tender pieces of beef, pork, veal and lamb are suitable for low-temperature cooking. Searing and cooking times depend on the thickness and weight of the meat.
