2. Intended use
This appliance is intended exclusively for processing foods in the usual household quantities in private households:
- Grinding fresh meat
● Making sausages in natural or artificial skin
The appliance is not intended for processing frozen foods or other hard foods, e.g. bones or nuts, and not in commercial or industrial applications.

4. Safety information
⚠️ DANGER! ELECTRIC SHOCK!
■ Ensure that the power cable is not damaged. Keep it out of hot areas and route it in such a way that it cannot be pinched.
- To avoid potential risks, a damaged power cable for this appliance should be replaced by the manufacturer or the manufacturer's customer service department or a similarly qualified person.
■ Use the appliance only in dry indoor areas, not outdoors.
■Never immerse the motor unit in water or other liquids! Otherwise there is a risk of an electric shock.
⚠ WARNING! RISK OF INJURY!
■ Never use the appliance for purposes other than those described here. There is a significant risk of accidents if the protective features of the appliance are disabled during improper use!
- Never put your hand into the openings on the appliance. Never insert objects of any kind into the openings – except for the appropriate pusher for the attachment and the foodstuffs to be processed. If you do, there will be a serious risk of accidents!

CO time
The CO time (continuous operation time) is the amount of time an appliance can be operated without the motor overheating and becoming damaged. After the appliance has been operated for this length of time, it must be switched off until the motor has cooled down.
7. Assembly/disassembly
! ATTENTION!
The metallic components are coated with a thin film of oil to protect them from corrosion. Therefore, clean all parts carefully before first use as described in detail in the section 10. Cleaning. Rub all the metal parts afterwards with a little cooking oil.
i Note
▶ Before using the appliance for the first time, remove the protective film from the appliance.
7.1. Assembling the meat grinder

1) Coat all metal parts with cooking oil.
2) Insert the feed screw 8 into the meat grinder attachment 7.
3) Then insert the cross blade ⑨ so that the side with the blades is facing away from the feed screw ⑧. Ensure that the angled recess of the cross blade ⑨ lies correctly on the angled axle.
WARNING!
▶ The cross blade ⑨ is very sharp! Risk of injury!
① ATTENTION!
The appliance will be damaged if the cross blade ⑨ is inserted in the wrong direction!
4) Select the required perforated disc 10/11.
5) Insert the selected perforated disc 10/11 into the meat grinder attachment 7 so that the tabs on the perforated disc 10/11 fit into the recesses on the meat grinder attachment 7.
6) Once everything is correctly inserted, screw on the locking ring 12 hand-tight.
7) The fully assembled meat grinder attachment ⑦ is connected to the motor unit ④ via a bayonet lock:
- Press the release button ⑯ while inserting the meat grinder attachment ⑦ into the motor unit ④ so that the symbol 🔒 on the meat grinder attachment ⑦ is aligned with the symbol 🔒 on the motor unit ④ (Fig. B).
- Then rotate the feed tube ③ on the meat grinder attachment ⑦ to the middle position (Fig. B) so that the symbol 🔒 on the feed tube ③ points to the symbol 🔒 Let go of the release button ⑯. The meat grinder attachment ⑦ is now firmly attached to the motor unit ④.
- Finally, place the filler bowl ② on top of the feed tube ③.
- For removal, press the release button 16 and turn the feed tube 3 back to the right (Fig. B) 📋. You can then pull out the meat grinder attachment 7.
7.2. Fitting the sausage stuffer attachment

1) Remove the meat grinder attachment ⑦ as described in 7.1. Assembling the meat grinder.
2) Disassemble all parts fitted onto the meat grinder attachment ⑦ and clean them.
3) Coat all metal parts with cooking oil.
4) Insert the feed screw ⑧ back into the meat grinder attachment ⑦.
5) Insert kibbeh attachment B ⑮ so that the tabs fit into the recesses on the meat grinder attachment ⑦.
6) Then fit the sausage stuffer attachment 13 on the front of kibbeh attachment B 15.
7) Screw on the locking ring ⑫ hand-tight.
8) Fit the meat grinder attachment ⑦ as described in 7.1. Assembling the meat grinder.
7.3. Fitting the kibbeh attachment

1) Remove the meat grinder attachment ⑦ as described in 7.1. Assembling the meat grinder.
2) Remove any attachments that might be fitted and clean the meat grinder attachment ⑦.
3) Coat all metal parts with cooking oil.
4) Insert the feed screw ⑧ back into the meat grinder attachment ⑦.
5) Insert kibbeh attachment B ⑮ so that the tabs fit into the recesses on the meat grinder attachment ⑦.
6) Place kibbeh attachment A 14 on kibbeh attachment B 15 and screw on the locking ring 12 hand-tight.
7) Fit the meat grinder attachment ⑦ as described in 7.1. Assembling the meat grinder.
8. Use
DANGER!
▶ Never open the housing of the motor unit 4 - there are no serviceable parts whatsoever inside. Opening the housing will invalidate any warranty claims.
! ATTENTION!
▶ Do not use the appliance continuously for longer than 7 minutes. Then leave the appliance switched off for about 30 minutes to avoid overheating.
i Note
The REV button 18 can only be activated when the motor is stopped.
1) Fit the desired attachment (see section 7. Assembly/disassembly).
2) Set up the appliance such that it is perfectly stable.
DANGER!
▶ Never reach after a connected or running appliance if it falls over or into water – or in any other dangerous situation! In an emergency, immediately pull the power plug!
i Note
▶ Depending on the type of use, note the information in the respective sections 8.1. Grinding meat, 8.2. Processing sausage, 8.3. Using the kibbeh attachment.
3) Place the food to be processed in the filler bowl ② and place a collecting container in front under the discharge opening.
4) Plug the plug into the power outlet.
5) Press the ① button ⑰ to switch on the appliance.
6) Push the food into the feed tube ③ and press it down lightly with the pusher ①.
WARNING!
▶ Only use the pusher ① to press the food into the feed tube ③ – never use your fingers, a fork, spoon handle or the like.
! ATTENTION!
▶ Never push so hard that you hear the motor slow down. Otherwise, the appliance may become overloaded and could be damaged.
8.1. Grinding meat
■ Use pieces of meat that easily fit into the feed tube ③. Cut the meat first, if necessary. Make sure that the meat does not contain bones or tendons.
WARNING!
▶ Minced meat is very susceptible to bacterial growth. It is therefore important to practice good hygiene when working with meat. Otherwise, there could be health risks.
■ Process the ingredients as described above.
8.2. Processing sausage
1) Run the meat twice through the meat grinder before using it to make sausage.
2) For the sausage filling, you may add finely diced onion, spices and other ingredients, for example, depending on the recipe. Then knead the mixture well. Place it in the refrigerator for 30 minutes before processing it further.
3) Slip the sausage skin (natural or artificial) over the sausage stuffer attachment 13 and tie the other end closed. You will need around 1.60 m of sausage skin for each 1 kg of sausage stuffing.
i Note
Soak natural skin in lukewarm water for about 3 hours and wring it out before use. This gives the natural skin back its elasticity. You can purchase natural sausage skin from butcher suppliers near abattoirs or from your butcher.
4) Operate the appliance as described in section 8. Use.
5) The sausage filling is pressed through the sausage stuffer attachment 13 into the sausage skin. Once the sausage has reached the required length, switch off the appliance, pinch the end of the sausage and twist it a few times around its longitudinal axis.
i Note
Sausage expands during cooking and freezing. Therefore, do not overfill the sausages; otherwise, they could burst.
8.3. Using the kibbeh attachment
You can use the kibbeh attachment 14/15 to form hollow rolls of meat or vegetables, which you can then stuff with a filling of your choice.
1) Run the meat through the meat grinder twice before pressing it through the kibbeh attachment 1415 (see section 8.1. Grinding meat).
2) Fit the kibbeh attachment 14/15 (see section 7.3. Fitting the kibbeh attachment).
3) Operate the appliance as described in section 8. Use.
9. Faults
If the drive is blocked by compacted food:
■ Press the ① button ⑰ to stop the meat grinder.
- Hold the REV button 18 pressed. The drive now runs in reverse. This will move the food backwards a little to clear the drive.
■ Once the drive is free, release the REV button 18.
■ Press the ① button ⑰ to start the meat grinder again.
If this does not clear the drive, clean the appliance as described in section 10. Cleaning.
If the motor stops suddenly, the internal overload fuse may have been tripped. This is intended to protect the motor.
■ Switch the appliance off and allow it to cool for about 30 minutes before using it again.
■ If the appliance still does not function, wait another 15 minutes.
If after this time the appliance still does not function, it may have a defect. In this case, contact your dealer.
If the power cable is damaged or damage to the parts of the appliance is apparent:
- Immediately switch off the appliance by pressing the ⏻ button 17!
■ If this cannot be done safely, pull the power plug.
■ Have this damage repaired by customer service before using the appliance again.
10. Cleaning

DANGER!
▶ Never immerse the motor unit ④ in water or other liquids! Otherwise, there is a risk of an electric shock if moisture enters the appliance and reaches the electrical wiring.
▶ Disconnect the plug from the mains power socket before cleaning the appliance. This prevents the risk of accidents from unexpected, accidental start-up and electric shock.

WARNING!
The cross blade ⑨ is very sharp! Risk of injury!

ATTENTION!
▶ Do not use any cleaning agents, abrasive agents or solvents. These can damage the appliance and expose the food to residues.
■ Clean all exterior surfaces and the power cable with a slightly dampened cloth. For stubborn dirt, add some mild detergent to the cloth. Afterwards, wipe with a cloth moistened only with fresh water to ensure that all detergent is removed. Always dry the appliance properly before using it again.
■ Clean all accessories that can come into contact with food with hot washing-up water and a household detergent suitable for food.

Note


The plastic parts of the accessories are suitable for washing in the dishwasher.
▶ Place these plastic parts in the upper basket of the dishwasher if possible and make sure that none of the parts can get stuck. Otherwise, the parts could become deformed!
■ Dry all parts thoroughly before using the appliance again.
i Note
▶ After cleaning, rub a little cooking oil onto the metal parts again. Otherwise, the metal parts could become discoloured.
11. Storage
- Wrap the power cable around the cable retainer ⑤.
■ After drying, rub a little cooking oil onto the metallic attachments if you will not be using the appliance again immediately. This provides good protection against corrosion.
■ Store the appliance in a dry location protected from sunlight and dust.
12. Disposal

The symbol of the crossed-out wheelie bin means that this appliance may not be disposed of in regular household waste at the end of its service life.
The appliance must be deposited at an established collection point, recycling centre or disposal company.
Please erase all personal data before returning an appliance.
The packaging is made from environmentally friendly material which can be disposed of at your local recycling plant.
Dispose of the packaging in an environmentally friendly manner.
13. Kompernass Handels GmbHwarranty
Dear Customer,
This appliance has a 3-year warranty valid from the date of purchase. If this product has any faults, you, the buyer, have certain statutory rights. Your statutory rights are not restricted in any way by the warranty described below.
Warranty conditions
The warranty period starts on the date of purchase. Please keep your receipt in a safe place. This will be required as proof of purchase.
If any material or manufacturing fault occurs within three years of the date of purchase of the product, we will either repair or replace the product for you or refund the purchase price (at our discretion).
This warranty service requires that you present the defective appliance and the proof of purchase (receipt) within the three-year warranty period, along with a brief written description of the fault and of when it occurred.
If the defect is covered by the warranty, your product will either be repaired or replaced by us. The repair or replacement of a product does not signify the beginning of a new warranty period.
Warranty period and statutory claims for defects
The warranty period is not prolonged by repairs effected under the warranty. This also applies to replaced and repaired components. Any damage and defects present at the time of purchase must be reported immediately after unpacking. Repairs carried out after expiry of the warranty period shall be subject to a fee.
Scope of the warranty
This appliance has been manufactured in accordance with strict quality guidelines and inspected meticulously prior to delivery.
The warranty covers material faults or production faults. The warranty does not extend to product parts subject to normal wear and tear or to fragile parts which could be considered as consumable parts such as switches or parts made of glass.
The warranty does not apply if the product has been damaged, improperly used or improperly maintained. The directions in the operating instructions for the product regarding proper use of the product are to be strictly followed. Uses and actions that are discouraged in the operating instructions or which are warned against must be avoided.
This product is intended solely for private use and not for commercial purposes. The warranty shall be deemed void in cases of misuse or improper handling, use of force and modifications / repairs which have not been carried out by one of our authorised Service centres.

14. Recipes
14.1. Classic meat patties
Ingredients
■ 400 g beef shoulder
■ 100 g beef brisket
1 onion
■ 1 roll (day-old, soaked in water)
1 egg
■ 1 tsp. mustard
■ Salt, pepper, paprika powder
■ Cooking oil
Preparation
1) Peel onions, cut into pieces and process through the fine perforated disc ⑪.
2) Also pass the meat through the fine perforated disc ⑪ (for particularly fine meat patties, pass through twice).
3) Squeeze out the roll and add to the mixture along with the egg, mustard and spices.
4) Knead everything well, shape into patties and fry in a pan until golden brown.
14.2. Coarse bratwurst
Ingredients
■ 400 g pork shoulder
■ 100 g pork belly
■ 2 garlic cloves
■ 1 tsp. marjoram
■ 1 tsp. salt
■ 1/2 tsp. pepper
■ Skin for filling
Preparation
1) Cut the meat into cubes and cool well.
2) Process the meat and garlic through the fine perforated disc ⑪.
3) Mix well with spices.
4) Fit the sausage stuffer attachment ⑬ onto the appliance.
5) Fill the meat mixture into the skins and fry or grill.
14.3. Salmon tartare
Ingredients
■ 300 g fresh salmon filet
■ 1 tbsp. lemon juice
■ 1 tsp. mustard
■ 1 tsp. finely chopped dill
Salt, pepper
Preparation
1) Cut the salmon into cubes and freeze it lightly in the freezer.
2) When the salmon is lightly frozen, process it through the fine perforated disc ⑪.
3) Carefully mix the minced salmon with the remaining ingredients.
4) Serve as an appetizer with toast or on dark rye bread.
i Note
Use only fresh fish and consume the tartare promptly.
14.4. Vegetarian lentil patties
Ingredients:
■ 250 g boiled lentils
1 carrot
■ 1 small onion
■ 1 clove of garlic
■ 65 g rolled oats
■ 1 egg
■ 1 tsp. cumin
Salt, pepper
Preparation
1) Roughly chop the carrot, onion and garlic, then process them together with the lentils through the fine perforated disc ⑪.
2) Combine this lentil mixture with the rolled oats, egg and spices into a shapable mixture.
3) Shape into small balls and fry in a pan or bake in the oven.
14.5. Kibbeh
Ingredients for the mince filling
■ 350 g lean beef or lamb
2 onions
■ 10 g flour
■ 25 g coarsely chopped pine nuts
■ 1/2 tsp. each of allspice, cinnamon, cumin, caraway, cloves, nutmeg (all ground)
Salt and pepper
Ingredients for the shell
■ 500 g bulgur wheat (soaked)
■ 500 g lean beef or lamb
■ 1 onion
■ 1 pinch pepper, 1 pinch chili
Mince filling
1) Prepare the mince filling first and leave it to cool while you prepare the shell:
2) Pass the meat through the meat grinder twice (using first the coarse, then the fine perforated disc 10/11).
3) Mix the meat, flour, pine nuts and spices well.
4) Chop and sear the onions. Add the mince and mix it with the onions. Thoroughly fry the mixture, then let it cool. Make sure to cook the meat mixture until crumbly - this makes it easier to fill the kibbeh shell.
Shell
1) Pass the meat for the shell through the meat grinder twice in a row (using first the coarse, then the fine perforated disc 10/11 ).
2) Mix with the bulgur wheat, the finely chopped onion and the spices.
3) Process the mixture twice more with the meat grinder.
4) Swap out the perforated disc ⑪ and the cross blade ⑨ for the kibbeh attachment ⑭/⑮ (see section 7.3. Fitting the kibbeh attachment) and make kibbeh shells of about 7 cm in length.
Preparation
Fill each kibbeh shell with the mince as soon as it is made, pinching the ends together to create small pouches.
In a deep fat fryer:
Deep-fry the finished kibbeh in hot oil (190 °C) for about 3 minutes. They should have a golden brown colour.
In a hot air fryer:
Spray the finished kibbeh with some oil and bake at 210 °C for about 25 minutes until golden brown.
i Tip
Kibbeh can also be frozen uncooked and then cooked later.
