PRECAUTIONS AND TIPS FOR YOUR SAFETY

- Always unplug the power cord prior to applying or removing the motor from the machine.

- Never remove the electrical plug with wet or damp hands.

- Do not leave the machine unattended, especially when it is plugged into the mains.

- Do not use the machine in proximity to heat sources (e.g. stoves) or in areas where there may be water (e.g. sinks).

- Use this device only as described in this manual and for a maximum uninterrupted work time of 15 minutes.

- Use only the cable supplied with the equipment and extensions suited to the current indicated in the motor rating plate.

- This product is intended for use in a domestic environment.

- When working with the machine equipped with motor, avoid wearing ties, scarves or long chains; also remember to pull back your hair and hold it with a clip.

- Any repairs to the electrical system must be carried out by skilled personnel. It is forbidden for unauthorized individuals to access the internal part of the motor.

- The total amount of ingredients (liquids + solids) must not exceed the level marked inside the bowl.

This appliance is not to be used by children.

Keep the appliance and its cable out of the reach of children.

When using electrical appliances, basic safety precautions should always be followed including the following:

1) Read all instructions.
2) To protect against risk of electrical shock do not put (the machine or the motor) in water or other liquid.
3) Close supervision is necessary when any appliance is used by or near children.
4) Turn the appliance OFF, then unplug from the outlet when not in use, before assembling or disassembling parts and before cleaning. To unplug, grasp the plug and pull from the outlet. Never pull from the power cord.

This appliance has a polarized plung (one blade is wide than the other). To reduce the risk of electric shock, the plug will fit in a polarized outlet only one way. CONTROL PANEL

1- On/Off switch.
2- Red LED light (left) of the blade access cap: when the light is on, the cap is not closed properly.
3- Blue LED light: when the light is on, the machine is ready for use.
4- Red LED light (right) of the lid: if the light is on, the lid is not closed properly.
5- Pulse button: push button to move the blade.

FRESH PASTA RECIPE

* 2 ^3/4 cups (500 g) soft wheat flour
* 4 whole eggs
* a small amount of water

For a better-tasting pasta, use a mixture that is half soft wheat flour and half durum wheat flour (semolina).

ATTENTION: The volume of eggs and water must not exceed 8.5 fl. oz. (250 ml).

HOW TO PREPARE THE MACHINE FOR USE

  • Before using the machine for the first time, clean all parts with a damp cloth.
  • To clean the rollers, feed a small amount of pasta dough through the rollers; throw the dough away when done.
  • Attention! Check the voltage. Make sure that the voltage of your power outlet matches the rating indicated on the machine's rating plate.

HOW TO PREPARE DOUGH

Measure out the ingredients according to your recipe (Fig. 2).

Open the machine lid and pour the ingredients into the mixer bowl (Fig. 3).

Make sure the blade access cap is closed and left red led is off.

Close lid and turn on the machine by pressing the On/Off switch (Fig. 4).

After about 3 minutes, you should have a smooth and firm dough. Open the lid to remove the dough (Fig. 5).

To remove dough more easily (Fig. 6), stop the machine when the dough is in the upper part of the tray by pressing the Pulse button.

HOW TO MAKE PASTA SHEETS AND PASTA USING THE PASTA MIXER

Cut the dough you've made into 4-5 pieces (Fig. 7).

Attach the smooth roller accessory to the machine. Set the selector to 0 by pulling it out and rotating it, so that the rollers are fully open (Fig. 8).

Feed one of the dough pieces through the rollers (Fig. 9).

Repeat this step 5-6 times, folding the pasta sheet each time and, if necessary, adding more flour (Fig. 10/11).

Cut the finished sheet into 10 in. (25 cm) lengths (Fig. 12).

Attach the selected cutting accessory and start feeding the sheet through the rollers to form the desired pasta (Fig. 13).

Note 1: If the rollers are not able to cut, it means that the sheet of pasta is too soft. In this case, we recommend kneading the dough with your hands, adding some flour, and feeding it through the smooth rollers again.

Note 2: If the sheet of pasta is too dry and is not “gripped” by the cutting rollers, we recommend kneading the dough by hand and adding some water. Feed the dough through the smooth rollers again.

Lay the pasta on a damp clean tea towel. Cook immediately. If you plan on storing the pasta (for 1 month at the most), you can use the handy Marcato Tacapasta Drying Rack to allow it to dry.

Pasta dries in about 5-6 hours, depending on temperature and humidity, and can be stored in suitable kitchen containers.

CLEANING AND MAINTENANCE

A) How to remove and replace the blade

- Unscrew the blade access cap (Fig. 14).

- Push the blade towards the access hole (Fig. 15).

- Pull the blade upwards (Fig. 16).

- To replace the blade, follow the previous steps in reverse.

B) How to remove and replace the lid

- Lift the lid all the way (90°) and push back on lid until it's released from the pin (Fig. 17).

- To replace the lid, reverse the previous step.

C) How to attach and remove accessories

- Insert the accessory into the hexagonal hole on the side of the machine.

- Rotate the accessory 30^ until it is fully seated (Fig. 18).

D) Cleaning

- Always unplug the power cord before cleaning or performing maintenance.

- Never wash the machine and accessories with water or in the dishwasher.

- To clean the machine after use, use a brush and a toothpick or wooden skewer (Fig. 19).

- Any repairs must be performed by qualified service personnel.

- Do not access internal parts: please contact Marcato for assistance.

- For proper storage, we recommend storing the machine and its accessories inside their original packaging.

PIZZA DOUGH RECIPE:

* 2 3/4 cups (500 g) flour

* 1 teaspoon salt

* 1 ½ tablespoon (15 g) fresh brewer's yeast

* approximately 1 cup (250 ml) of warm water

* 1/4 cup oil (to taste)

* a pinch of sugar

Dissolve the brewer's yeast in warm water and then add the sugar.

Measure out the flour, pour everything into the mixer, then add 4 tablespoons of oil. Close lid and switch machine ON. After 2 minutes, add the salt and continue to knead for another 4-5 minutes.

Take the dough out, work it into a ball, and sprinkle with flour. Cover it with a clean dish towel and let it rise for 1 hour in a warm spot, away from any drafts.

When it's done rising, cut the dough into two pieces. Attach the Roller 220 accessory by Marcato and pass the dough through several times until it reaches the maximum width of the rollers. Sprinkle with flour as needed to obtain a soft, smooth dough.

When finished rolling, you can make the pizza bigger by pressing the dough out with your hands. To make your pizza thicker, cut out its shape, and let it rise for a while longer.

Preheat the oven to 435^ F ( 225^ C). Place the dough on a tray and add your favorite toppings. Bake in the oven for about 20 minutes.

* 1 cup of milk

* 1 cup (250 g) butter or margarine, melted in a water bath

* 3 egg yolks

Mix the egg yolks with the sugar, then add the melted butter and the milk. Pour the yolk mixture and flour into the mixer and add the salt and any optional flavorings. Close lid, turn machine ON, and allow it to knead for 12-15 minutes. The resulting dough should be smooth and soft.

Preheat oven to 350^ F ( 180^ C), and prepare a greased baking sheet. We do not recommend using parchment paper to line the baking sheet. Use the Marcato Biscuit Maker (cookie press) to create the desired cookie shape (The Marcato Biscuit Maker can create up to 20 different shapes of cookies). Arrange the cookies onto the pre-greased baking sheet.

Bake for about 20 minutes or until golden. Remove tray from oven and allow cookies to cool before removing from tray or decorating (if desired).

BREAD RECIPE: WHOLEMEAL BREAD RECIPE:

* 2 3/4 cups (500 g) flour

* 1 12 tablespoon (15 g) fresh brewer's yeast

* 1/4 cup oil (to taste)

* 1 teaspoon salt

* approximately 1 cup (250 ml) of warm water

* a pinch of sugar

* 1 12 tablespoon (15 g) fresh brewer's yeast

Dissolve the brewer's yeast in warm water and then add the sugar. Place all ingredients in the mixer, then add 1/4 cup of oil. Close lid and switch machine ON. After 2 minutes, add the salt and continue to knead for another 4-5 minutes.

Take the dough out, work it into a ball, and sprinkle with flour. Cover it with a clean dish towel and let it rise for 1 hour in a warm spot, away from any drafts.

When it's done rising, put it back in the mixer and knead for 4-5 more minutes. Remove it, work the bread into the desired shape, and let it rise for about one and a half hours.

Preheat the oven to 425^ F ( 220^ C), and bake the bread for 20-40 minutes, depending on its shape (the bigger the bread, the longer the baking time), until the crust is golden brown.

After 20 minutes, check the bread occasionally by testing it with a woo-den skewer or cake tester: if the skewer comes out dry, the bread is done; otherwise, bake it a little while longer. Once the bread is done, remove it from the oven and cover it with a cotton dish towel to keep it soft.
