EARTHED. IMPORTANT : the wires in this lead are coloured in accordance with the following codes. Green and Yellow : Earth Blue : Neutral Brown : Live Connect the Green/Yellow wire to the terminal in the plug marked "E" (or by the earth symbol) or coloured Green. Connect the Brown wire to the terminal in the plug marked "L" or coloured Red. Connect the Blue wire to the terminal in the plug marked "N" or coloured Black. Seek professional advice if you are unsure of the correct procedure for the above.
ABOUT YOUR FACTORY FITTED PLUG
The cord is already fitted with a plug incorporating an appropriate fuse. If the plug does not fit your socket outlet, see paragraph below. Should you need to replace the fuse in the plug supplied, an appropriately rated approved BS 1362 fuse must be used (refer to electrical specification for fuse rating). If the plug supplied does not fit your socket outlet, it should be removed from the mains lead and disposed of safely. The flexible cord insulation should be stripped back as appropriate and a suitable alternative plug fitted. The replacement plug must be equipped with an appropriate fuse. If the plug has external access to the fuse (non-rewirable type plug) please note that the fuse cover is an important part of the plug. Please ensure that it is always refitted correctly. If you lose this cover, please do not use the plug. You may contact our helpline for a replacement. For any problems or queries, please contact our helpline (see phone number on helpline leaflet). Assembly Before using the appliance for the first time: - Remove all packaging, stickers or any other accessories from inside or outside the appliance. - Place the plate or stone (H) support in the four support slots (I). - According to model, place the mini-pan rest (M) in the two locking clips (O) situated under the appliance base (N). cooking stone (C or G) on the element, polished (bevelled) side up. Never place the Pierrade
cooking stone that comes with the appliance or that has been purchased from an authorised dealer and only on the support for which it was designed. - Place the plate (A, B, D, E or F) on the element. Never place aluminium foil or any other object under the Pierrade
cooking stone or between the element and reflector. Place the appliance in the centre of the table, out of children’s reach. Place the appliance on a firm surface, avoid using on soft surfaces i.e. table felt. Never place the appliance directly on a fragile surface (glass table, tablecloth, varnished furniture…). This product has been designed for domes- tic use only. Any commercial use, inappro- priate use or failure to comply with the ins- tructions, the manufacturer accepts no res- ponsibility and the guarantee will not apply. Plugging and preheating Completely unwind the cord. Check the electricity supply is compatible with the power and voltage indicated underneath the appliance. Only plug in the appliance on an earthed socket. Model with fixed cord: if the power supply cord is damaged, it must be replaced by the manufacturer or its service agent or a similarly qualified person in order to avoid a hazard. Any error in connecting the appliance invalidates the guarantee. Plug the cord into the appliance (according to model) and then into the mains socket. Check that the cable does not get in the way of guests sitting at the table. Never leave the appliance plugged in when not in use. When in use, never leave the appliance unattended. - Model with switch: Press switch (P): the light comes on - Model with thermostat: Place the thermostat (P) on position 6. Leave the appliance to preheat: - 5 to 8 minutes for the raclette function. - 15 minutes for the Pierrade
cooking stone or grill functions - 10 minutes for the pancake plate For the first ten uses put a little cooking oil on the Pierrade
cooking stone after preheating and wipe off with a soft cloth. This prevents the food sticking too much to the stone (according to model). Cooking (according to model) After preheating, the appliance is ready for use. Raclette function: Each person places a slice of cheese in their mini-pan (L) before placing it in the appliance. Leave the cheese to melt, 3 to 5 minutes, thermostat (according to model) on position 6. When the cheese has melted, slide it onto a plate. According to model, a mini-pan rest (M) allows the empty mini-pans (L) to be stored during the meal. Never leave the mini-pan to heat if empty. Pierrade
cooking stone function: Set the thermostat (according to model) to the position of your choice. Whilst in use, because of its composition, it takes 5 to 10 minutes for the Pierrade
cooking stone to respond to a change in thermostat. Each person places slices of meat, fish, vegetables or fruit on the stone to cook to their taste. Season to taste on your plate, accompanied with cold sauces, a salad and potatoes. Never place frozen or heavy food on the hot stone.
Moul/Gustivio EurOuest 0603 26/06/03 9:21 Page 3738 Never let the stone come into contact with acid foods i.e. vinegar, mustard, gherkins, pickles, etc. Never place objects on the stone. Never leave the appliance on for more the 30 minutes whilst empty, the stone will become too hot for cooking on. Small cracks caused by the expansion of the stone are natural and of no importance to the appliance's performance. They are therefore not a reason for replacement. After several uses the stone will become darker in appearance. During first use the appliance may give off a slight odour and smoke. Grill function: The grill plate is suitable for cooking small pieces of meat or raclette accompaniments (bacon pieces, mushrooms, onions, small sausages…). Set the thermostat (according to model) to the position of your choice. Cook according to the recipe or to taste. To preserve the non-stick coating of the grill plate use only thermoplastic or wooden utensils. Pancake function: Set the thermostat (according to model) to position 6. Spread batter on the plate and leave to cook for 1 to 2 minutes on each side. During first use the appliance may give off a slight odour and smoke, this is normal.. Do not touch hot surfaces of the appliance. After use - Models with switch: Press switch (P): light goes out. - Models with thermostat: Put the thermostat (P) on position min. Unplug cable from the mains supply, then, according to model, disconnect the appliance. Leave the appliance to cool completely (for models with stones wait at least 1 hour without touching). During the cooling period make sure the appliance is out of children’s reach. The plates (A, B, D, E and F), mini-pan (L) and appliance body (K and N) should be washed with a soft cloth, hot water and washing up liquid. The plate (A, B, D, E and F) and the mini- pan (L) can be washed in a dishwasher. Do not use scouring pads or scouring powder. Never immerse the appliance or the cable in water. Stone washing precautions (C or G): Each stone (C or G) is a unique natural element. More or less permeable according to its porosity, if a stone is submerged in water during cleaning it can split or shatter after being heated in the appliance. Wash the stone under slow running water rubbing with an abrasive sponge and wipe dry. Avoid detergents. Never plunge or soak the hot or cold stone in water. Never put the stone in the dishwasher. Recipes Raclette function: RACLETTE SAVOYARDE For 8 people: 1.5 kg to 2 kg raclette cheese,
2.5 kg potatoes, 16 slices of Savoie ham, a few
peppers, some button mushrooms, 1 jar gherkins, 1 jar pickled onions, some tinned mini corn-on-the-cob Cook the potatoes in their jackets. Slice the cheese, cut the peppers in quarters and thinly slice the mushrooms. Place the gherkins, onions, mushrooms, corn and peppers in individual serving dishes. Place a slice of cheese on each mini-pan and leave to melt. Eat the raclette with the ham, potatoes and accompanying garnishes.
For 6 people: 500 g raclette cheese, 24 Agen prunes, 12 small cocktail sausages, 18 slices smoked streaky bacon, 12 potatoes, baked in their jackets, 400 g crème fraîche, 1 lemon, 1 bunch of chives, mixed salad, salt and pepper, 36 cocktail sticks Mix the crème fraîche, with the lemon juice, chopped chives, salt and pepper. Put in a bowl Moul/Gustivio EurOuest 0603 26/06/03 9:21 Page 3839 and place in the fridge. Roll half a slice of bacon around each prune and each sausage, holding in place with a cocktail stick. Place the hot, cooked potatoes on the table with the bowl of prepared crème fraîche and raclette cheese. Plug in the appliance and slide in the mini-pan with a slice of cheese. Use the upper cooking plate to cook the prunes and sausages. Ham or other cooked meats can be added to accompany this dish.
FOUR CHEESE RACLETTE
For 4 people: 200 g Gorgonzola, 200 g Mozarella, 200 g Emmenthal, 200 g raclette cheese, 2 bunches spring onions, 400 g broccoli, 4 tomatoes, 100 g Parma ham, 100 g salami, 200 g Dublin Bay prawns, 1 cup artichoke hearts, 1 cup mini corn-on-the-cob, 1 cup sliced peppers, lightly toasted white bread Slice the cheese. Wash the spring onions and cut into small pieces, Separate the broccoli florets, then cook the onions and broccoli in boiling water for 10 minutes. Keep hot. Cut the tomatoes in half and place on the grill. Slice the ham and salami finely and serve. Cook the prawns in a court-bouillon or in a frying pan. Serve with the cheese. Place the ingredients on the table with the artichoke hearts, mini corn-on-the-cob, peppers and toast. According to taste, melt the cheese of your choice with the raclette appliance and eat with the accompanying garnishes. Pierrade
cooking stone function: Turn off the appliance before the end of the meal: the stone will remain hot for at least 10 minutes, the last pieces of food will continue to cook. BASIC

SOLE AND PRAWNS GRILLED WITH CHIVE
BUTTER For 4 people: 4 small skinned sole, plaice or dab fillets, prawns or large shrimps, fines herbes (thyme, parsley…), chives, oil, salt, pepper Wash the fish and drain. Arrange on a large plate and sprinkle with salt, pepper, herbs and chives. Keep chilled in the fridge. Prepare the chive butter: using a fork, mix the softened butter with the juice of 1/2 a lemon, finely chopped chives, salt and pepper. Roll the butter by hand to form a sausage shape, wrap in cling-film and place in fridge for 1 hour to firm up. Preheat the appliance and cook the lightly oiled prawns and fish. Place the chive butter in a dish on the table. Serve with potatoes or rice. MIXED GRILL Per person: 1 lamb chop, 1 lamb’s kidney, 1/2 slice lamb’s liver, 1 chipolata sausage, 1 slice smoked bacon, 1 tomato, 1/2 onion, oil, ground coriander et cumin, salt, pepper Preheat the appliance and cook the meat and vegetables. Serve with chips, crisps or a salad.
PRAWNS AND SHRIMPS WITH MAURESQUE
SAUCE For 4 people: 8 to 12 prawns, 16 large shrimps, lemons or limes. Mauresque sauce: 2 egg yolks, 2 glasses of olive oil, 1 teaspoon mustard, 1 shallot, 1 clove of garlic, 1 lime, 1 tablespoon crème fraîche, 1 teaspoon paprika, 1 tablespoon tomato puree, 1/2 teaspoon harissa, salt, pepper Prepare the mauresque sauce: crush the shallot and the garlic well. Place in a large bowl with the salt, pepper, mustard and egg yolks. Mix well and then add the oil a little at a time to make a mayonnaise. Blend in the lime juice, crème fraîche, paprika, tomato puree and harissa. Keep in the fridge. Preheat the appliance. Cut the shells of the prawns and shrimps and open out. Grill.
