How to adjust the cutting thickness on the Graef UNA 98?
Turn the thickness adjustment knob located on the side of the device. For a thin cut, turn towards 0; for a thick cut, turn towards increasing numbers. The maximum thickness is approximately 15 mm.
How to use the food guide?
The food guide is useful for pieces smaller than 10 cm. Place the food on the carriage, position the food guide against the back wall of the carriage and press it against the food. Then proceed to slice normally.
How to clean the slicer blade?

Safety instructions

This unit complies with the statutory safety regulations. Improper use can, however, lead to personal injury and property damage.

To handle the unit safely, follow the instructions below:

  • Check the unit for external, visible damage to the housing, the connector cable and the plug before using it. Do not put a damaged unit into operation.
  • If the machine's connecting cable is damaged, continued use of the machine is only allowed it has been replaced with a new one. Have it installed solely by the manufacturer or its customer service or a similarly qualified person to prevent hazards.
  • Repairs are only allowed to be performed by a specialist or by the Graef customer service department. Improper repairs can lead to extreme hazards for the user and damage the unit. Furthermore, the warranty claim expires.
  • Only Graef customer service is authorised to repair the unit during the warranty period, otherwise the warranty expires for subsequent damages.
  • Defective components must be replaced solely with genuine spare parts. Fulfilment of the safety regulations is only guaranteed if these parts are used.
  • This unit must not be used by children. This unit and its power cable must be kept away from children.
  • This unit may be used by persons with reduced physical, sensory or mental abilities or deficiencies in experience and knowledge, if they are supervised or have been instructed in the safe use of the unit, and in addition understand the resulting dangers.
    • Children must not play with this unit.
  • In the absence of supervision and prior to assembly, during cleaning disconnect the unit from the mains.
  • The unit is not intended to be used with an external timer or a separate telecontrol system.
  • This unit is intended to be used in household and similar applications such as: staff kitchen areas in shops, offices and other working environments; farm houses; by clients in hotels, motels and other residential type environments; bed and breakfast type environments.
  • If the supply cord is damaged, it must be replaced by the manufacturer, its service or similarly qualified persons in order to avoid a hazard.

  • Always pull the supply line from the electric socket using the connector plug, not on the connector cable.

  • Never operate the unit with wet hands.
  • This unit must be used with the carriage and food holder unless the size and shape of the items to be sliced do not permit use of the food holder.
  • In stand-by mode, turn the control knob clockwise past the zero position up to the limit so that the stop plate covers the cutter.
  • Do not use the packing material as a toy. Danger of suffocation.
  • Do not touch the blade with your fingers. It is very sharp and cause severe injuries.
  • Make sure the unit is switched off and not connected to the mains supply.
  • Check to make sure the limit stop is closed (cutter blade is covered).
  • Do not use any aggressive or abrasive cleaning agents and do not use any solvents.
  • Do not scratch off stubborn soiling with hard objects.
  • Do not wash in the unit in water or immerse it into water.

Unpacking

To unpack the unit, proceed as below:

• Take the unit out of the carton.
- Remove all pieces of the packing.
- Remove any possibly extant labels on the unit (do not remove the rating plate).

Requirements for the installation location

For safe and flawless operation of the unit, the place of location must meet these prerequisites:

The unit must be set up on a firm, flat, level and non-slip base that has sufficient load bearing capacity.

Select the place of location so that children cannot reach the sharp blade in the unit.

Sources of hazards

The rotating blade can cut off body parts. Your fingers, especially the thumbs, are endangered. For this reason, never reach into the space between the stop plate and the holder for the material to be sliced as long as the stop plate is not ^16

completely closed, i.e., is placed below "0".

Cutting

  • Swivel the machine feet out as far as they go (1.1).
  • Push the slider on the underside of the carriage together and turn the carriage over (2.1).
  • Put the thumb protection into a horizontal position (2.2).
  • Place the cutting goods on the carriage.
  • Adjust the desired cutting width by turning the hand wheel (3.2).
  • Push the needed switch „Pulse“ or „Permanent“ (3.1).
  • Press the cutting goods gently against the stopper plate and lead the carriage evenly against the blade (3.3).
  • After finishing the cutting process, turn off the appliance (3.1).
  • Push the button on the side of the thumb protection and flip it (6.1).
  • Push the slider on the underside of the carriage together and flip it (6.2).

Important: Let the engine cool off after a permanent usage of approx. 5 minutes.

Tips

  • Soft cutting goods (for example cheese or ham) can be cut best when cooled.
  • Soft cutting goods are cut better when you move it forward slower.
  • When cutting cucumbers or carrots it helps to cut them to an identical size beforehand, and then lead them to the cutter using the scrap holder.

Food holder

When the items to be sliced are shorter and 10 cm so it is no longer possible to correctly hold onto them, the food holder must be used.

  • Place the food rests or the small items for slicing on the carriage.
  • Set the food holder on the rear of the carriage and put the food holder onto the items to be sliced (3.5).
  • Proceed as above as described in "Slicing".

Important: The food holder lets you slice small items such as mushrooms and tomatoes.

The unit must not be used without the food holder unless the size and shape of the items to be sliced do not permit its use.

Cleaning

Clean the exterior of the unit with a soft, moist damp cloth. If heavy soiled, a mild detergent can be used.

Blade removal

Please occasionally unscrew the blade and clean the interior of the unit. Especially, when "juicy" slicing items (tomatoes, fruit, roasts, etc.) were sliced. Handle the blade with great care!

  • Pull the carriage all the way towards you.
  • Remove the blade cover plate (4.1).
  • Loosen the blade by turning the blade screw clockwise (4.2).
  • Clean the insides of the blade with a damp cloth.
  • Lubricate the gliding ring and gear on the inside of the blade with Vaseline after cleaning (4.3 - 4.4).
  • Replace the blade and the blade cover plate in reverse sequence.

Preservation of value - blade

For a long-lasting sharpness and for a preservation of the value of your Graef blade we recommend that the blade be cleaned in regular intervals, especially after cutting cured meat or ham. They contain salts which when on the blade surface for a longer period of time could produce so-called "rust film" (on "stainless steel" as well). When cutting products which contain a lot of water, such as tomatoes or cucumbers, a lack or wrong (too "wet") cleaning may produce rust on the blade surface.

For this reason we recommend that you use a moist cloth and a bit of detergent, if and when necessary, to clean the blade directly after use. Never put the blade in a dishwasher, firstly due to decrease in sharpness and corrosion resistance (salts attack the blade), and secondly due to safety in handling the blade whilst loading and unloading the dishwasher.

Carriage

To clean the carriage better, it can be removed from the appliance.

  • Push the carriage bar on the front side (bottom) of the carriage (5.1).
  • Keep it pushed and pull off the carriage towards the back (towards body).
  • Clean the carriage with a moist cloth or under running water.

  • Clean the roller with a damp cloth (5.2).

  • Please apply a few drips of resin-free oil or Vaseline on the carriage rail once a month. Remove excess oil / Vaseline with a soft cloth (5.3).
  • Keep the carriage lock pushed and push the carriage towards the front on the carriage rail.

Disposal

At the end of its service life, this product cannot be disposed of in normal domestic waste but has to be disposed of at a collection point for recycling electronic household waste. The symbol on the product and in the operating instructions point out to this fact. Reuse the materials according to their marking. By reusing, recycling or other applying other forms of use of old units, you render an important contribution to the protection of our environment. Please ask your municipal administration for the disposal point.

3 year motor guarantee

For this product we assume an additional guarantee on the motor of 36 months beginning with the date of sale. Your legal warranty claim in conformity with Section 439 ff. of The German Civil Code E shall be unaffected by this regulation. The guarantee does not cover any damage which is caused by incorrect handling or use as well as defects which only slightly influence the function or the value of the unit. Moreover, transport damage provided we are not responsible shall be excluded from the claims under guarantee. Guarantee shall be ruled out for damage, the repair of which has not been carried out by us or one of our represenations. In case of justified complaints, we shall repair the defective product or replace it by a product without defects at our discretion.
