Read this instruction manual carefully before installing and using the Fiorenzato M.C. S.r.l. coffee grinder-doser or coffee grinder for grocery stores for the rst time. ThisinstructionmanualhasbeendrawnupinaccordancewiththeprovisionsofDirective 2006/42/EC and provides all useful information for the end user to install, adjust and use the coffee grinder-dosers and coffee grinders for grocery stores produced by Fiorenzato M.C. S.r.l. The contents of this manual must be read and understood in its entirety before installing and using your appliance and must be kept and maintained in a good condition for future reference. The images, data, texts and descriptions contained in this documentation are the propertyofFiorenzatoM.C.S.r.l.andreectthestateoftheartofthemachineatthe time of its release on the market. Fiorenzato M.C. S.r.l. is constantly seeking new solutions to improve its products and therefore reserves the right to make changes to the coffee grinder-doser and to its documentation over time without considering the products already sold as being inadequate and/or obsolete. Duringthewarrantyperiod,themanufacturerundertakestorepairorreplacefreeof chargetheparts and/or components that areshownto be defective at origindueto manufacturing defects. Thewarrantycoveringtheproductisvoidintheeventthat:
- Thewarnings/instructionscontainedinthismanualhavenotbeenobserved.
- The routine maintenance and machine cleaning operations have not been carried out by a user duly instructed on the correct execution procedures.

1.7 Applied directives
Makingcoffeeisanartandtolearnitssecrets,itisnecessarytofollowpreciserules. The formula for obtaining a perfect cup of espresso is, in fact, very complex and the part played by the equipment is extremely important. For optimal success and indisputable quality, three elements must be correctly combined:
- The appropriate use of available equipment.
- Thewiseskillandprofessionalismofthosepersonswhoprepareit.Toenjoyagood coffee, contrary to popular belief, it is not enough to simply choose a particular blend. Theoperator'sexperienceandskillinfollowingthecorrectproceduresforpreparingthe drinkandusingsuitablemachinerycontributesignicantlytocreatingasmallmaster- piece.Thisiswhyprofessionalsattachsomuchimportancetotheespressomachine andtothecoffeegrinder-doser.Knowingthesetoolswell,keepingtheminperfectwork- ing order and using them to their full potential is a skill that belongs to true masters of coffee.Thequalityofagoodespressostemsfromaseriesofoperations,wheregrinding playsanimportantrole.Thegrinder-doser,therefore,representsfortheoperatorone ofthebasictools,whosestructuremustrespondtocertaincharacteristicswhichare: sturdiness,resistanceandfunctionality,characteristicsfullysatisedbyallthegrind- er-dosersproducedbyFiorenzato M.C. S.r.l.
- CE marking and year of manufacture.

2.3 Identication of main parts of the appliances
All coffeegrinder-dosersandcoffee grinders consist of a machine body with all the devices necessary to grind the coffee and a supply hopper on the top to feed in the roastedcoffeebeanstobeground.Theidenticationofthemainpartsofthevarious appliancesisshowninthefollowingparagraphs.

This appliance has been designed exclusively for the grinding of roasted coffee beans. Any other use is to be considered improper and therefore dangerous. The manufacturer declines all responsibility for any damage due to improper or incorrect use. Themaximumsoundemissionofourcoffeegrinder-dosers,measuredina UNIENISO3741reverberationroominaccordancewiththeEN60704-1 standards,isinaccordancewiththeEN60704-1standards:1998andEN 607043:1996.Theequivalentlevelofsoundexposureforanoperator,linked exclusively to a limit operation of the appliance of 240 minutes over eight hours, is 78 dB(A),inaccordancewiththeEuropeanDirective86/188/EEC and subsequent revision 2003/1 0/EEC. Use of the device does not therefore require any precautions against risks arising from exposure to noise in the workplace(articles3-8ofDE2003/10/EEC). 3 SAFETY
3.1 General information
The purchaser must inform all user personnel about the possible risks deriving from improper use of the appliance, about the safety devices adopted by the manufactur- erand about thegeneral rules onaccident-prevention providedforby theEuropean Communitydirectivesandbythelegislationofthecountrywheretheapplianceisused. Usersmustbeawareofthepositionandoperationofallthecontrolsandfeaturesofthe machine listed in this manual. ATTENTION! Beforeinstalling,switchingonandusingaFiorenzatoM.C.S.r.l. coffeegrinder-doserforthersttime,itisnecessarytohavereadandunder- stoodallthecontentsofthisdocumentationandofthe“SAFETYINSTRUC- TIONS” booklet. ATTENTION: The unauthorised tampering with or replacement of one or more parts of the machine, the adoption of accessories that modify use of the sameandtheuseofnon-originalsparepartscancauserisksofinjuryand compromiseefcientfunctioningoftheappliance. FailuretocomplywiththeaboveexemptsFiorenzatoM.C.S.r.l.fromany liability for damage to persons and/or property.
3.2 Incorrect reasonably foreseeable use
Reasonably foreseeable misuse is considered: - Use of the machine for the grinding of products other than roasted coffee beans (e.g.pepper,salt,etc.). - Useoftheappliancewithpre-groundcoffee. - Incorrectuseoftheappliancebyuntrainedpersonneland/orbypersonnelwho have not read this instruction manual. - Theuseofnon-originaland/ornon-specicsparepartsforthecoffeegrinder-dos- er model in your possession. - Use of the machine in a potentially explosive environment. Furthermore, the user must never under any circumstances: - Attempt to remove any foreign bodies that have accidentally fallen into the coffee supplyhopperand/orintothegrindingareawithoutrstdisconnectingtheappli- ancefromthepowersupply. - Useoftheappliancewithdamporwethands. - The introduction of liquids of any kind into the coffee supply hopper and into the grinding area. - Introducepre-groundcoffeeintothehopper. In the event of abnormal machine behaviour, any type of necessary interven- tion is the responsibility of the maintenance operators.
3.3 Precautions for correct and safe use
To ensure the safety of the user and to optimally manage the appliance, it is important to satisfy a number of simple but important provisions, namely: - Avoidincorrect use of the power cord. Use only cables or section extensions suitableforthepowerinstalledinthemachine. - Protect the cable from high temperatures, oil and sharp edges. - Variationswithrespecttonormaloperation(increasedpowerabsorption,increase intemperature,excessivevibrations,abnormalnoises)cansignalthatoperation isincorrect.Topreventfaults,whichcandirectlyorindirectlycausedamageto persons or to the appliance, ensure the necessary maintenance or, if necessary, contact the dealer or a specialist repairer. - Heavy appliance! 3.4 Safety devices applied to the appliance
All the coffee grinder-dosers and coffee grinders produced by FiorenzatoM.C.S.r.l.areequippedwithadequatemechanicalandelectro- mechanical devices designed to protect the safety of the user and the integ- rity/functionality of the appliance during its use. Inparticular,theappliancesareequippedwiththefollowingsafetydevices:
- Motor thermal protector (present on all appliances) The device motor has a thermal protector that protects it from excessive heating due toovercurrentsandintervenesbyinterruptingthepowersupplytothemotor.Ifthe thermalprotectorintervenesduetomalfunctions(forexamplethegrindersstop),itis necessarytoturnofftheapplianceusingtheswitch,removetheconnectionplugfrom the mains and contact technically qualied personnel. Never intervene on the live appliance as there is the risk that the motor could suddenly restart. If the appliance hasoverheatedduetothemotorstopping,itisnecessarytowaitforittocoolbefore intervening.
During the design Fiorenzato M.C. S.r.l. adopted all the necessary precautions to en- sureuseofthecoffeegrinder-doserinconditionsofmaximumsafety.However,during installation, cleaning and maintenance of the appliance, there are a number of residual risksthatcannotbeeliminated,theeffectsofwhichcanbeaddressedbyadequately trainingtheuseraccordingtotheprovisionssetoutinthefollowingtable. 3.6 Warning labels applied to the machine
4 INSTALLATION ATTENTION! Beforeproceedingwithinstallationandcommissioningofthe appliance,readthefollowingcarefully.
In the event that the appliance is not immediately installed in the place of use and it is necessary to temporarily store it, it should be stored in a safe place that respects the followingcharacteristics:
- The place chosen for the temporary storage of the appliance is a closed environment, protectedfromthesunandfromweathering.
- Thetemperatureofthestorageplaceisbetween5C°and40°C,withrelativehumidity ofbetween30%and90%.
- If the appliance must remain in storage for a long time before being installed, it is ad- visable to keep it in its original packaging to ensure more adequate protection.
4.2 Choice of installation point
Consideringthefunctionofthecoffeegrinder-doser,itisadvisabletoPLACEitnearthe coffee machine; the coffee grinder for grocery stores, instead, can be positioned in any otherplacethatinanycasesatisesthefollowingconditions. Beforeproceedingwiththeinstallationoftheappliance,makesurethat:
- Theappliancemustnotbeinstallednearsinksand/ortapsthatcanwetitwithjets and/orsplashesofwater;
- Theplaceofuseissufcientlylitandwellventilated;
- A socket is provided near the installation point for the electrical connection of the ap- plianceincompliancewiththeregulationsinforceinthecountryofuse. ATTENTION!Thesocketmustbeequippedwithanefcientearthingsystem. ATTENTION!Theelectricalpowersupplysystemmustalsobeequippedwith asafetymagnetothermicswitchplacedupstreamofthesocketinaknown position that can be easily reached by the operator in order to protect the appliance from overloads and sudden changes in voltage and the user from the risk of electrocution.Fiorenzato | Coffee grinder-dosers + Coffee grinders for grocery stores_00 Ed. 06/2022 20 / 40
4.3 Unpacking and handling of the appliance
After opening the packaging, carefully check that the appliance is intact and that there are no damaged parts.
- Openthepackagingneartheinstallationpoint,ensuringthereissufcientspaceto handle the appliance safely.
- Removetheappliancefromthepackaging,grippingitrmlyandsafely.
- Placethecoffeegrinder-doserorcoffeegrinderontheworksurface. ATTENTION! Pay the utmost attention when handling the appliance. Its weight(from10to21kgdependingonthemodel)andtheparticularrounded shape of the machine body can generate the risk of slipping and loss of grip withpossiblefallingandbruising/crushingofthefeetduringliftingand/orof thehandsduringpositioningoftheapplianceontheworktop. ATTENTION! Thepartsofthepackagingmustnotbeleftwithinthereachof childrenastheyareasourceofpotentialdanger.Keepthepackaginguntil thewarrantyhasexpired.
4.4 Installation and connection to the electrical network
5 USE OF THE APPLIANCE
5.1 Preparation for use of the coffee grinder-doser and of the coffee grinder
Onceinstallationiscomplete,theapplianceisreadyforuseandcanbelledwithcoffee beans to be ground. With reference to Fig. 11, regardless of the type of appliance in your possession, to load the coffee beans it is necessary:
- Fitthehopper(Item1)onthegrindingchamber(Item2)andlockitintheworking positionbytighteningtherelativexingscrew(Item3).
- Makesurethattheshutter(Item4)iscompletelyclosed.
- At this point the appliance is loaded and ready to be started.
5.2.1 “O/I/START” switch on version "A" appliances
5.2.2 Switch with "TIMER" on appliances in "T" version
- Turnedtoposition"X"seconds:applianceswitchedon(electricallypowered)and immediate start of grinding for the selected time. The maximum time that can be set for grinding is 60 seconds per cycle. - Grinding is automatically stopped after the selected time has elapsed. Note:The"T"versiongrinder-dosersarenotequippedwithamicroswitchforauto- maticgrindingstop,therefore,ifthesettimehasnotyetexpiredwhenthedispens- erislled(Item2)orthecontainer/bagingrocerystorecoffeegrinders(Item3),it isnecessarytomanuallystop(turnoff)theappliancebyturningtheswitchtothe "0"position. Note:Thedispensinglever(Item4)onthe“T”versiongrinder-dosersdoesnotcount the dispensing shots and therefore the grinding is not restarted automatically. When the dispenser is empty, it is necessary to manually restart the grinding by turningtheswitchagaintothedesiredgrindingtime.
5.2.3 "O/I" switch on "M" version appliances
5.3 Grinding size adjustment
Regardless of the type of appliance in your possession (coffee grinder-doser orcoffeegrinder)andtherelativemodel/ version, to change the degree of grinding of the coffee it is necessary to use the ad- justmentring(Item1)locatedunderthe hopper(Item2). To vary the granulometry of the ground it is necessary to:
- Start grinding the coffee.
- Release the lever (Item 3) to lock the ringnutinthenewposition. Note:Forthecoffeegrinder-doserF4 A thereisnoRingNutLockLever(Item3) . Instead, there is a Ring Nut Lock Fer- rule(Item4)whichdoesnotneed tobe pressed. To vary the degree of grinding, therefore simply turn the adjustment ring nutdirectly(Item1).
Mod. F4 A The adjustment must be made with the motor running. It is advisable to grind small quantities of coffee for a visual as- sessment of the degree of grinding.
5.4 Dispensing adjustment (only on grinder-dosers)
To adjust the quantity of ground coffee provided with each dispensing, simply vary the height of the dosing star group inside the dispenser. Forthispurpose,proceedasfollows:
- Pull the adjustment knob downwards (Item 5) and turn it anti-clockwise to decrease the height of the dosing star unit (and consequently the quantity of coffeedispensedwitheachdose).
- Once the adjustment has been made, release the adjustment knob (Item 5) andthelockingpin(Item3).
- Closethe dispenserwiththelid previ- ously removed.
5.5 Dose extraction (only on coffee grinder-dosers)
To extract a dose of ground coffee from thedispenser,proceedasfollows:
- Once the extraction has been complet- ed, release the lever without accompa- nying it in the return stroke.
- To extract a double dose of ground cof- fee,pullthedispenserlevertwicewith- outremovingthelterholdercupfrom the fork.

5.7 Ground coffee collection (only on coffee grinder)
To collect the ground coffee coming out ofthecoffeegrinder,proceedasfollows:
- Pullthebaglockingleverupwards(Item 1)locatedabovethecoffeeoutletpipe.
- Positionthepaperbag(Item2)onthe coffee outlet pipe and lock it in position, releasing the lever. NOTE: Use collection bags for ground coffee that are large enough to hold all the coffee to be ground.
- Turn on the coffee grinder using the appropriateswitch(Item3)[see§5.2.2 and §5.2.3] and wait for the desired quantity of coffee to be ground.
- After grinding the desired quantity of coffee, stop grinding and turn off the appliance by turning the switch to the "O"position.
- Removethebag(Item2)afterreleas- ingitfromthelockinglever(Item3).
WARNING: Make sure that the coffee
outlet is free from any obstruction, other- wisetheappliancewillbecomeblocked. For complete discharge of the ground cof- fee, forcefully operate the outlet handle.
6.1 Ordinary maintenance
ATTENTION! Before performing any ordinary maintenance on the equip- ment,disconnectitfromthepowersupplybyturningtheswitch(Fig.15)to the"O"(OFF)positionanddisconnectthepowerplugfromitssocket(Fig. 16). 6.1.1 Cleaning the equipment
AFTER EACH USE: thoroughly clean the appliance. On all the coffee grinder-dosers and coffee grinders
- Close the shutter (Item 1) loosen the xing screw (Item2)andremovethehopper(Item3)fromtheap- pliance.
- Removethelid(Item4)fromthehopperandempty out all the coffee beans contained inside. It is advisa- ble to pour the coffee back into the bag of origin and to close it hermetically to preserve its aroma.
- Clean the internal and external surfaces of the hop- perusinghotwaterandaneutralPHnon-perfumed detergent and degreaser suitable for the food sector. Do not use abrasive sponges and/or aggressive de- tergents that could damage the surfaces of the hop- per.
- Dry the washed parts thoroughly using a soft, dry cloth. ATTENTION! Thehoppercannotbewashed inthedishwasher.
On all the coffee grinder-dosers and coffee grinders
- Withabrushwithsoftbristles(cleanandsanitised) and a vacuum cleaner, remove the beans and coffee powderresiduesfromthegrindingchamber(Item1). ATTENTION! Donot use water and/or de- tergents to clean the grinding chamber and the grinders.

- Positionthecoffeedriptray(Item6)atthebaseofthe coffeegrinder-doser. The appliance is ready to be used again after being electricallypoweredandlledwithcoffeebeans.

6.1.3 Thorough cleaning of the grinders
EVERY MONTH: perform thorough cleaning of the grinders On all the coffee grinder-dosers and coffee grinders Thorough cleaning of the grinders must be carried out onceamonth(orwhennecessary),usingspecicprod- ucts for cleaning coffee grinder-dosers and/or coffee grindersreadilyavailableonthemarket(e.g.thePULY GRINDdetergent).
- Thorough cleaning must be carried out at the end of use(seeparagraph6.1.1),withthemachinewithout coffeeandwithoutthesupplyhopper.
- Cleaning of the grinders is performed by pouring a dose of product into the (completely empty) grind- ing chamber and starting grinding. During grinding, the product (in grains or crystals) regenerates the grinders, completely removing any coffee deposits, encrustations, moulds and fatty deposits from their surfaces, absorbing the oil and destroying any rancid partwithoutleavingresidues.
If the appliance is not used for long periods (e.g. holidays, annual leave, etc.), it is advisabletocarryoutthefollowingcleaningoperationstokeepitinagoodconditionand to avoid possible problems upon subsequent restart. WHEN NECESSARY: cleaning and storage

6.1.5 Replacing the grinders
The frequency recommended by Fiorenzato M.C. S.r.l. for the replacement of the grinders varies according to the model of appliance in your possession and the type of grinders installed. For an indication of the replacement frequency, expressed in kilograms of ground coffee, refer to the technical data tables in paragraphs 2.5.3 and
