UNOLD 78526 - ASSEMBLY - 1

T-mixing hook: cake batter, mashed potatoes, spaetzle dough

UNOLD 78526 - ASSEMBLY - 2

Kneading hook: yeast dough, bread dough, noodle dough

UNOLD 78526 - ASSEMBLY - 3

Wire whisk: beating of eggs, cream, waffle batter, biscuit dough and all various mousses. Do not use the wire whisk for heavy doughs, because it could bend or break.

  1. Attach the desired mixing utensil. Make sure that the mixing utensil is attached so that the notch on the mixing utensil matches the driver pin on the axle of the swivel

arm. Turn the mixing utensil clockwise until it is tightly seated.

  1. Make sure that the mixing utensil locks into place, since otherwise the ingredients cannot be mixed properly.

  5. The individual Levels from 1-6 are suitable for the following steps. Always begin with a low speed and then slowly switch to a higher speed. In doing so, you avoid spraying and raising dust from the ingredients.

Level 1:

Mixing of ingredients without having to crush coarse ingredients (e.g. pieces of fruit in cream) or for marbling (stirring fruit puree in curd cheese).

Level 2:

Addition of flour, ground nuts, etc. into dough so that dust is not raised from the dry ingredients. Mixing of ingredients without spraying.

Level 3:

Whipping cream - cream has greater volume when it is whipped slowly.

Whipping egg whites, stirring batter, kneading dough.

Kneading heavy dough. Attention: Begin mixing this dough at a lower level.

  8. The appliance must be completely dry before you use it again.
  9. When completely dry, store the mixer in a dry, safe place so that it is protected from dust, shocks, heat and moisture.

TIPS

Make sure that ingredients such as butter or eggs are at room temperature before mixing them.

When beating egg whites, make sure there is no egg yolk in the bowl; otherwise, the egg whites will not become stiff.

If you need eggs for a recipe, beat them in a separate container and then put them in the mi-

xing bowl. This makes it easier to remove any egg shell which may have fallen into the bowl. Always start mixing or kneading at a slow speed and then increase the speed as needed. If the mixer is too sluggish, remove half of the dough or batter and mix it in two batches.

MAXIMUM FILL QUANTITIES

Wire whisk: 7 egg whites, ingredients for one cake bottom with max. diameter of 30 cm.

T-mixing hook: Cake mixture with max. 500 g flour, max. weight of the batter 1.2 kg

Kneading hook: Yeast dough, such as bread dough: max. 700 g flour, max. total weight of dough 1.2 kg. Light yeast dough, such as raisin bread: max. 500 g flour, max. total dough quantity of 1.0 kg, noodle dough with max. 500 g flour and approx. five eggs.

Do not exceed the specified maximum quantity, because it would overload the machine.

With heavy yeast doughs (such as bread dough), mix the dry ingredients, switch on the appliance and slowly add the liquid to the ingredients.

If you have accidentally filled the appliance with too much dough, divided the dough, remove half and knead the two dough portions separately.

RECIPES

For the T-mixing hook

Marble Cake

250 g margarine, 250 g sugar, 2 envelopes vanilla sugar, 4 eggs, 250 ml milk, 400 g flour, 1 envelope baking powder, 50 g corn starch, 40 g cocoa powder, 40 g sugar, 2-3 tbsp milk, powdered sugar or frosting.

Beat the margarine with the sugar and vanilla sugar until foamy. In the process, please note: first mix at Level 1 for approx. one minute, then at Level 3 for approx. two to three minutes, then

Level 4 until the dough is loosely mixed. Add the eggs one at a time. Combine the flour with the baking powder and cornstarch and alternately add the flour mixture and milk to the batter. Put about 2/3 of the batter in a greased ring or loaf pan.

Combine the cocoa powder with the sugar and a little milk in a separate container and then add this mixture to the remaining batter in the mixing bowl. Mix the batter again and then spoon

the dark batter on top of the light batter in the baking pan.

Use a fork to make a spiral pattern through the two batters, then bake at 175^ C for about 45 minutes. Remove the pan from the oven and turn the cake onto a cooling rack. As soon as the cake has cooled, dust with powdered sugar or coat with frosting, as desired.

For the kneading hook

Pizza Dough

200 g flour, 10 g fresh yeast, 1/2 tsp sugar, 1/2 cup lukewarm milk, 3 tbsp oil, 1/2 tsp salt Stir the yeast with the sugar, milk and 1-2 tbsp flour in a cup and let stand about 15 minutes in a warm place.

Put the rest of the flour in the mixing bowl and add the yeast mixture, oil and salt. Knead all ingredients thoroughly. In the process, please note: Run at Level 1 for approx. one minute, then slowly increase to Level 4 until the dough releases from the bowl and has a silky shine.

Let the dough rest again for about 30 minutes.

Then roll out into two round crusts, place on a baking sheet and top as desired.

For the wire whisk

Meringue Kisses

4 egg whites, 200 g powdered sugar

Beat egg whites at level 4 to 5. whites until stiff, then trickle in sugar gradually.

Use a spoon or piping bag to make small mounds on a baking sheet lined with baking paper. Bake at 100^ C until the meringue mixture is firm and dry. If the kisses brown too quickly, open the oven door slightly.

You can add finely ground nuts or cocoa powder to the meringue mixture before baking.

Swabian Light Waffles

125 g butter or margarine, 30 g sugar, 100 g flour, 4 eggs, 1 envelope vanilla sugar, 5 tbsp cream.

Beat egg whites with the wire whisk until stiff (add 1 tbsp of the sugar just before they become stiff). Beat butter or margarine until foamy, then mix in egg yolks, sugar and vanilla sugar. Fold in sifted flour and cream, alternately. Then fold in the beaten egg whites.
