- Acrylamide is a chemical compound. It occurs during the browning process (deep-drying, baking, cooking, roast- ing, and grilling) at high temperatures in food containing carbohydrates (starch and sugar), like potato and grain products.
- Acrylamide is suspected of harming genetic material and causing cancer. However, the actual risk for humans is not yet known.
- We recommend not to exceed a temperature of 170 °C during drying.
- Also, the frying time should be kept as short as possible and the fried goods should be fried maximally to a golden yellow colour.
- Thicker French fries or potato pieces are less loaded than smaller ones, as acrylamide forms mainly in the surface layers.
- If you produce French fries from fresh potatoes, water the peeled and chopped potato pieces for one hour to dissolve a part of the sugar from the surface layers (initial substance for acrylamide). Start-Up Before Using for the First Time
