Frequently Asked Questions - IC20 STEBA

How to prepare the insulated bowl before use?
Place the insulated bowl horizontally in the freezer for at least 12 hours to allow the saline solution to freeze completely. Wrap it in a freezer bag to prevent it from sticking.
How much mixture can I put in the bowl?
Fill the bowl only up to half because the volume increases as it freezes. For a bowl of about 1 liter, put a maximum of 500 ml of mixture.
Why is my ice cream not hard enough?
Homemade ice cream is softer than commercial ice cream. Make sure the bowl is well frozen (12 h) and that the mixture is very cold (refrigerated for at least 5 h). You can also increase the fat content (cream, whole milk).
Can I use hot or warm ingredients?
No, the mixture must be very cold (preferably refrigerated for several hours). Hot ingredients prevent proper freezing and may damage the appliance.
How to clean the ice cream maker?
Unplug the appliance. Remove the motor from the lid (do not immerse it). Wash all other parts (bowl, paddle) in hot water with a mild detergent, then dry thoroughly. Do not use abrasive products.
Can I make several flavors in a row?
Yes, it is recommended to buy a second insulated bowl (ref. 99.40.00) to prepare another flavor while the first is still frozen.
How long does it take to make ice cream?
The churning time is 30 to 40 minutes depending on the recipe and room temperature. Do not exceed 40 minutes to avoid overloading the motor.
Can I add alcohol to the ice cream?
Yes, add small amounts of alcohol (rum, liqueur) at the end of the process, just before serving. Note: alcohol lowers the freezing point, so the ice cream will be softer.
What to do if the appliance does not work?
First check that the bowl is well frozen, the plug is connected, and the lid is properly engaged. If the problem persists, contact Steba after-sales service.
Where to find additional recipes?
The manual provides several recipes (vanilla, chocolate, raspberry sorbet, etc.). You can also consult cookbooks or specialized websites, adapting the quantities for a 1-liter bowl.

Hints

  • Prepare raw mixtures which need to be cooked already a day before and keep them refrigerated.
  • Add little amounts of alcohol at the end (Attention! Children)
  • Never insert fingers or other objects into the opening.
  • The higher the fat content of the ingredients, the creamier the ice.
  • Keep in mind while preparing: cold ice cream tastes less sweet than the warm raw mixture!
  • Fill the freeze container only by half because the volume of the mixture gets bigger while freezing.
  • Homemade ice cream is not that firm as machine-made.
It is recommended to freeze a second freeze container for another variety of ice cream. This container can be gained at Steba-Service or in a specialist shop. (Art.Nr. 99-40-00, EAN: 4011833400772)
