IMPORTANT SAFEGUARDS

  1. Please read the following information and keep it for future reference.
  2. This appliance is not intended for use by persons (including children) with reduced physical, sensory or mental capabilities, or lack of experience and knowledge, unless they have been given supervision or instruction concerning use of the appliance by a person responsible for their safety.
  3. Children should be supervised in order to ensure that they do not play with the appliance.
  4. Keep the appliance out of reach of children.
  5. Connect the appliance only to an AC power supply with the voltage indicated on the rating plate.
  6. Do not operate this appliance with an external timer or remote control system.
  7. Never immerse the appliance or the lead cable in water or other liquids.
  8. Casing and lead cable may not be cleaned in the dishwasher.
  9. Always disconnect the lead cable from the wall socket pulling on the plug, never on the cable.

  10. Make sure that the lead cable does not trail to avoid the appliance being pulled down accidentally. Extra care must be taken when using extension cords or cables. Use only technically faultless extension cords or cables.

  11. Never touch the appliance or lead cable with wet hands.
  12. This appliance is intended for domestic and similar use such as:
    ■ staff kitchen areas in shops, offices and other working environments;
    ■ agricultural enterprises;
    ■ by clients in hotels, motels and other accommodation facilities;
    ■ bed and breakfast accommodations and holiday homes.

  13. For safety reasons, never place the appliance on hot surfaces, a metal tray or a wet surface.

  14. Do not place the appliance or lead cable near open flames during operation.

  15. Always use the deep fat fryer on an even, uncluttered and heat-resistant surface.

  16. Make sure that the lead cable does not hang over the edge of the worktop or table, since this can cause accidents, for example if small children pull on the cable.

  17. To avoid damage to the lead cable, never wrap it around the appliance.
  18. Make sure that the lead cable does not touch hot parts of the appliance.
  19. Use the deep fat fryer only indoors.
  20. The surfaces of the appliance become hot during operation. Please touch only the heat insulated handle and the control button.
  21. Never use the appliance near flammable objects like e.g. curtains.
  22. To prevent injuries, do not move the appliance as long as it is hot.
  23. Never immerse your hand in hot oil. Risk of burns!
  24. Do not cover the appliance with cloths or similar during operation.
  25. When transporting the appliance, always remember that boiling fat can cause severe burns. We recommend not to carry the appliance nor the reservoir when filled with hot liquids. Heat up the oil, meat broth, etc. in the place where you are going to use it.

  26. Make sure that the oil does not overheat. In case the oil catches fire by overheating, disconnect the plug from the wall socket and cover the pot with a lid or similar in order to put out the flames.

  27. Do not use the appliance with accessories of other manufacturers or brands, to prevent damage.
  28. Disconnect the appliance from the wall socket after use and prior to cleaning. Never leave the appliance unattended when it is connected to the wall socket.
  29. Clean the appliance after every use.
  30. All parts, especially the detachable oil reservoir, have to be completely dry before reassembling the appliance.
  31. Check the appliance, the wall socket and the lead cable regularly for wear or damage. In case the lead cable or other parts present damages, please send the appliance or the lead cable to our after sales service for inspection and repair. Unauthorised repairs can constitute serious risks for the user and void the warranty.

Water in particular frozen water causes splashes of hot oil, when coming into contact. Lower wet or frozen food very slowly and carefully into the oil to avoid splashes of hot oil or foaming of hot oil.

If the oil foams strongly, take the food out of the oil wait for a few seconds and then put it again into the hot frying oil.

SPECIAL SAFEGUARDS FOR THE USE OF DEEP FRYERS

  1. The deep fryer becomes very hot during use. Oil or frying fat may catch fire when overheated. Therefore special care is required for any long-time use. Switch the appliance off by means of the ON/OFF switch and unplug the appliance when you have finished frying and the deep fryer is no longer used.
  2. Only use the appliance for frying of foodstuff according to these instructions. Only fry adequate foodstuff.
  3. Make sure that the foodstuff is dry to avoid hot oil splashes.
  4. Never add any water to the frying oil.
  5. Never switch the appliance on if there is no oil in the oil recipient.
  6. Make sure, that the oil level is between MIN and MAX. Do not fill in more oil, as it may splash out. Risk of injuries!
  7. Hot steam may occur during frying. Always keep sufficient distance from your face and

hands and open the appliance only with care.

  1. Provide good ventilation during use.

  2. Do not cover the appliance during use to avoid overheating.

  3. The control and heating elements must not come into contact with water or any other liquid or be immersed. Only the heating resistance, which comes into contact with the frying oil, can be wiped with a damp cloth.

  4. Water or frozen water will cause dangerous splashes if getting into contact with hot oil. Lower wet or frozen foodstuff very slowly into the oil to avoid splashes and foaming of the oil.

  5. In case of strong foam formation lift the foodstuff and wait for moment before you put it into the oil again.

The manufacturer does not assume any warranty in case of incorrect assembly or of improper or incorrect use or after repair by unauthorized third parties.

GENERAL FRYING RULES

  1. We recommend to use heat-resisting liquid oil. If the oil or fat becomes brownish after frying, it is not sufficiently heat-resisting. Please take another oil. Never mix different types of oil or fat since the boiling point of different oil types is varying.
  2. Do not mix used oil with fresh oil.
  3. Always observe the MIN/MAX marking when filling the recipient with oil.
  4. If you use solid frying fat, set the appliance to approx. 140 °C. Cut the fat into small cubes of about 2 cm. Fill in a sufficient amount of fat cubes to cover the heating element. Switch the appliance on. As soon as these cubes are melted add more fat

cubes until the required level between MIN and MAX is reached. This type of fat will become solid after cooling down.

  1. Do not overheat the oil, as this will crust the surface of the food and it will not be well done inside.
  2. The foodstuff must swim in the oil. Therefore do not fry too much food in one cycle. If the quantity is too big, the oil cools down and the food will absorb too much oil.
  3. Do not pour used oil into the sink, but fill it into closed recipient and dispose if according to your local regulations.
  4. If you want to use the oil several times, let it cool down and pass it through a sieve with a

BEFORE USING THE APPLIANCE FOR THE FIRST TIME

  1. Unpack the lid, the frying basket, the handle and all other accessories and remove all packaging material.
  2. Clean the lid, the oil reservoir and the frying basket with warm soapy water and dry them thoroughly.
  3. Reinsert the lid.
  4. Place the appliance on an even, firm and heat resistant surface.
  5. Insert the oil reservoir until it is firmly placed on the casing rim.
  6. Insert the handle of the frying basket in the retainer device on the inside of the

frying basket pushing both buttons on the handle to the inside. Push the front part of the handle into the retainer device in the frying basket and release both buttons. To detach the handle, push the buttons to the inside again and remove the handle from the retainer device.

  1. Connect the plug to a wall socket that corresponds to the indication on the rating plate.

DEEP FAT FRYING

  1. Make sure that the appliance is disconnected.
  2. Fill the oil reservoir with oil up to the necessary quantity (between the MIN and MAX marks).
  3. Adjust the temperature selector button to the desired temperature. The heat-up process starts, the indicator light is switched on and lights up in red.
  4. When using deep-frying fat we recommend cutting it into cubes of approx. 2 cm. Melt the fat at low temperature (approx. 130°C). After this, you can heat the fat up to the necessary temperature.
  5. During the heat-up process, the indicator light lights up in red. As soon as the desired temperature is reached, the indicator light lights up in blue. The appliance has a thermostat to control the temperature. The heating is switched on and off in intervals. The indicator light lights up in red when heating up and in blue when the selected temperature is reached. For perfect frying results, the food should only be lowered into the oil after the ideal temperature has

been reached and the indicator light lights in blue.

  1. Put the food in the frying basket and slowly lower it into the oil.

  2. When the temperature falls below the desired temperature and the indicator light lights up in red, lift the frying basket and wait until the necessary temperature is reached again. Then lower the frying basket and finish frying the food.

CAUTION: Oil can splash out!

  1. Frozen food contains more water and causes splashes when being lowered into hot frying oil.
  2. Do not leave the fried food in the draining position for too long, as the ascending vapour softens the fried food.
  3. After use, always disconnect the plug from the wall socket.
  4. Dispose of the oil in an environmentally friendly manner.

FONDUE

  1. Fill the oil reservoir of the appliance up to the MAX mark with oil or meat broth.
  2. The appliance is not suitable for the preparation of chocolate or cheese fondue.
  3. To detach the lid of the deep fat fryer, pull the lid upwards and separate it from the appliance.
  4. Place the fondue ring on the oil reservoir, making sure that it fits perfectly and does not move.

  1. Adjust the temperature selector button to the desired temperature.
  2. Heat up the oil or the meat broth during approx. 20 minutes until the necessary temperature is reached.
  3. If you use meat broth: The meat broth should not be boiling but simmering. If necessary, turn down the temperature a bit.
  4. Skew the desired food with the forks and put it in the liquid.
  5. Cook the meat pieces for approx. 1.5 to 3 minutes if you use oil and 3 to 4 minutes if you use meat broth.
  6. When using meat broth, you can also cook firm-fleshed fish, shrimps, Wantans or vegetables.
  7. Dim-Sum or crustaceans covered with dough are particularly delicious when fried in oil.
  8. Serve sauces and dips as desired with the fondue, which are easily prepared using the ESGE-Zauberstab® hand blender.

Recommendations when cooking with oil

Do not cover the oil reservoir during the heat-up process when the splash protector is on the pot, as it might become overheated.

Use only heat resistant and tasteless oil. The oil may neither splash nor produce smoke.

Reuse the oil 2 to 3 times. Used oil can be easily recognised as it produces foam, smells rancid and is viscous.

Change all the oil and never mix used and fresh oil.

Never mix different kinds of oil.

Use only tender, lean meat. Cut the meat in regular, not too big pieces.

Frozen food must be defrosted.

Dry the food thoroughly to prevent the oil from splashing when immersing the food in the oil.

Store the oil in a closed container in a cool place until its next use.

Fondue Bourguignonne

for 4-6 portions

800 g lean beef meat (fillet)

Marinade:

100 ml vegetal oil, 1 tsp black pepper grains, 1 tsp mustard seeds, 1 pinch of chilli flakes, 1 laurel leaf. 2 onions, 700 ml heat resisting oil Heat the vegetal oil slightly and add the spices. Chop the onions.

Cut the meat into cubes of approx. 2 cm, Mix the meat with the spiced oil and the onions and marinate if for some hours in the refrigerator.

Before preparing the fondue, remove the meat from the marinade and dry it with a kitchen towel.

Fill the fondue oil into the stainless steel saucepan, place the saucepan on the heating plate and heat the oil on highest temperature setting until the optimum temperature is reached (approx. 20 minutes).

Pick up the meat with the forks and dip it into the hot oil.

Season the meat after cooking with salt and pepper and serve it with fondue sauces and dips, e.g. with a classical cocktail sauce.

Fondue Chinoise

for 4-6 portions

200 g each beef fillet, pork fillet, chicken fillet, chicken liver, veal kidneys, sole fillet, prawns (raw, prepared, eventually frozen), 125 g glass noodles, 125 g leaf spinach, 125 g celery, 125 g carrots, 700 ml chicken stock, 2 tbsp dry sherry or white wine, 2 eggs

Cut meat, giblets and fish into thin slices. Thaw prawns, if necessary. Soak the glass noodles approx. 10 minutes in warm water.

Wash the spinach leafs and stalks. Prepare carrots and celery and cut into slices.

Beat the eggs.

Arrange the ingredients in separated dishes.

Heat the chicken stock with Sherry on the highest temperature setting. Reduce the heat, as soon as the stock starts boiling. For the further preparation it should only simmer.

Pick up meat, giblets, fish and vegetables with the fork and cook them in the stock. If necessary, add some more stock after some time.

Serve the cooked food with fondue sauce, e.g. curry sauce or cocktail sauce or sweet-sour Chinese sauce.

At the end, cook the soaked noodles and the remaining vegetables in the stock. Add the beaten eggs and serve the soup in deep dishes.

CLEANING AND MAINTENANCE

  1. Turn the thermotstat to O and unplug before cleaning.
  2. Let the appliance cool off completely. Do not touch the heating element, as this is still hot for a long time after use.
  3. Do not immerse the appliance into water or any other liquid or come into contact with water.
  4. Remove the lid and take out the frying basket.
  5. Let the oil cool down. Take out the oil recipient with both hands. If you want to use the oil again pass it through a very fine sieve. You may store the fat in the enamelled oil recipient with closed lid in the refrigerator.
  6. Wipe the appliance with a damp cloth. Do not use any sharp or abrasive cleaning agents for cleaning of the enamelled oil recipient, as this may scratch the surface. Dry the appliance carefully.

  7. All removable parts can be cleaned in warm soapy water. Take out the filter before cleaning. In case of encrustations, soak the respective parts in warm soapy water.

  8. As soon as the efficiency of the filter is decreasing you should replace the activated carbon filter.
  9. Dry all parts carefully. Reinsert the filter into the lid and attach the lid.
  10. Clean the appliance regularly for a longer lifetime of the deep fryer.
  11. Reassemble the appliance as described in the chapter „First use“.
  12. Store the appliance in a protected place.

FRYING SCHEDULE

The following times are only approximate values, which may differ subject to the type, the quantity and the volume of the foodstuff to be fried.

In case of frozen food, set the temperature by 10 °C higher than in the schedule. Follow also the instructions of the manufacturer of the frozen food.

For health reasons we recommend to let frozen foodstuff unfreeze partially and then to fry it with max. 175 °C. In order to reduce the production of acrylamide, the oil should not be heated over 175 °C.

RECIPES

All recipes are provided for 4 persons

Potato balls

350 g cooked potatoes, 35 g flour, 1 small egg, 1 tblsp chopped parsley, 1 tblsp chives, 50 g grated cheese, 1 tblsp of pumpkin or sunflower seed, salt and pepper

Press the potatoes through a potato squeezer. Knead with flour, egg, parsley, chives, cheese, pumpkin or sunflower seeds, pepper and salt and form small balls.

Heat the oil to 170 °C and fry the balls for about 4-5 min. until they are crispy.

Crabmeat balls

250 g crabmeat, 3 water chestnuts (tin, or sweet chestnuts), 50 g bacon, pepper, 1 pinch of su-gar, 1 tsp starch, 1 eggwhite, 1 clove of garlic, 1 slice of toast bread, 75 g bread crumbs

Chop crabmeat, chestnuts, bacon, garlic, and bread with a knife or with a handblender. Add pepper, salt, 1 tsp of oil and eggwhite, leave for about 30 min. in the refrigerator. Then form small balls, turn them in bread crumbs.

Heat the oil to 160 °C. Fry the balls by turning them from time to time.

Carrot crispies

200 g chopped carrots, 2 small eggs, 2–3 tblsp flour, 1 bunch of chervil, chopped, salt, pepper, 1 pinch of nutmeg, 1 pinch of sugar

Prepare a solid dough of the ingredients and season it. Take off small balls by means of a spoon, and bake them in hot oil.

Bacon leek

1 stalks of leek, 50 g bacon in slices

Cut the leek in 5 cm pieces.

Roll one slice of bacon around each piece of leek, fix it with a toothpick, and bake it in hot oil.

Cutlet „Milano“

2 pork cutlets, salt, pepper, paprika powder, 3 tblsp Parmesan cheese 1 egg, 1 tblsp flour, some milk, nutmeg

Season the cutlets with salt, pepper and paprika. Prepare a batter from egg, flour, cheese, milk, salt, pepper, and nutmeg.

Heat the oil to 170 °C. Turn the cutlets in the batter and bake for about 6 min. in the oil.

Lemon pike-perch

2 pike-perch fillets of 100 g each, juice of 1 lemon, salt and pepper, 50 g flour, 1 beaten egg, 50 g bread crumbs, 1 tblsp grated lemon peel, 1 tblsp chopped lemon balm, 1 lemon

Wash the fish fillets under cold water and dry them. Sprinkle with lemon juice.

Season the fish with salt and pepper, turn in flour and egg.

Mix the bread crumbs with the lemon peels and the balm and bread the fillets in this mixtures.

Bake the fish fillets for about 10 min. in the oil, garnish with lemon slices.

Filled doughnuts

250 g flour, 4 g dry yeast, 50 g sugar, 75 ml milk, 50 g soft butter, 1 egg, 1 pinch of salt, 1 bag vanilla sugar, 1 tblsp rum, 100 g rosebud jam

Prepare a dough from flour, yeast, sugar, warm milk, butter, eggs, salt, vanilla sugar and let the dough rise.

Roll the dough 1 cm thick, and mark circles with a glass. Put 1 tsp of jam on each circle, cover it with the second dough plate and cut out the circles. Put the balls on a wood surface, cover it with a towel and let it rise for another 30 min.

Heat oil to 170 °C. Fry the doughnuts 3 min. from each side, take it out of the oil and sprinkle it with powder sugar.

Fruits in batter

200 g fresh fruits (e. g. pineapple, apricots, bananas, pears or apples), 75 g wheat flour, 25 g coconut flakes, 1 pinch of salt, 1 tblsp sugar, 75 ml milk, 1 egg

Prepare a smooth batter of flour, coconut flakes, salt, sugar, milk and egg. Leave the dough for about 30 min.

Peel the fruits and cut it into pieces.

Heat the oil to 170 °C. Immerse the fruit pieces into the batter and fry them until they become golden. Sprinkle with icing sugar and serve pure or with vanilla sauce or ice cream.

Doughnuts

^1/_4 milk, 100 g butter, 2 tblsp sugar, 2 bags of vanilla sugar, 1 pinch of salt, 150 g flour, 4 eggs

Cook milk with grease, sugar, vanilla sugar and salt on the stove. Add the flour and stir until the dough loosens from the bottom. Let the dough cool down. Then add one egg after the other. Fill the dough into a piping bag, and spray circles on a baking paper.

Heat oil to 170 °C. Let the doughnuts slide into the grease and bake it 2 min. from each side.

Cream cheese doughnuts

50 g soft butter, 75 g sugar, 1 bag vanilla sugar, 2 eggs, 1 pinch of cinnamon, 250 g cream cheese, 125 g flour

Prepare a dough from butter, sugar, vanilla sugar, eggs, cream cheese and flour.

Heat the oil to 170 °C. Make small balls by means of a spoon and give them into the hot oil.

Attention: Do not fry too many balls at the same time, as the grease will become foamy.

Bake the balls about 1.5 min. on each side and take them out of grease. Turn in sugar mixed with cinnamon.

REMEDY OF PROBLEMS

If you should have problems with your deep fryer, check first, if the appliances is correctly connected to the receptacle or if the overheat protection has switched off the appliance.

Then check if one of the following cases applies.

We guarantee our appliances for 24 months, or in case of commercial use for 12 months, from the date of purchase in case of defects that occur during normal use and are demonstrably due to a factory fault. Within the warranty period we will remedy defective materials or workmanship through repair or replacement, at our option.

Our warranty terms apply only to appliances sold in Germany and Austria. For other countries, please contact the responsible importer. In the event of a claim for remedy of defects, please send the appliance to our after sales service, properly packaged and postage paid, together with a copy of the automatically generated sales receipt, which must show the date of purchase, and a description of the defect. If the defect is covered by the warranty, the customer will be reimbursed for the shipping costs. The warranty does not cover damage from normal wear, improper handling and failure to comply with the maintenance and care instructions. The warranty is void if repairs or modifications are made to the appliance by third parties.

Any claims of the end consumer vis-à-vis the retailer are not limited by this warranty.

Our appliances are produced on a high quality level for a long lifetime. Regular maintenance and expert repairs by our after-sales service can extend the useful life of the appliance. If an appliance is defective and repair is not possible we ask you to follow the following instructions for disposal.

Do not dispose this appliance together with your standard household waste. Please bring this product to an approved collection point for recycling of electric and electronic products.

By separate collection and disposal of waste products you help to protect natural resources and ensure, that the product is disposed in an adequate way to protect health and environment.
