UNOLD 58746 - IMPORTANT SAFEGUARDS - 4

Water in particular frozen water causes splashes of hot oil, when coming into contact. Lower wet or frozen food very slowly and carefully into the oil to avoid splashes of hot oil or foaming of hot oil.

If the oil foams strongly, take the food out of the oil wait for a few seconds and then put it again into the hot frying oil.

SPECIAL SAFEGUARDS FOR THE USE OF DEEP FRYERS

  1. The deep fryer becomes very hot during use. Oil or frying fat may catch fire when overheated. Therefore special care is required for any long-time use. Switch the appliance off by means of the ON/OFF switch and unplug the appliance when you have finished frying and the deep fryer is no longer used.
  2. Only use the appliance for frying of foodstuff according to these instructions. Only fry adequate foodstuff.
  3. Make sure that the foodstuff is dry to avoid hot oil splashes.
  4. Never add any water to the frying oil.

GENERAL FRYING RULES

  1. We recommend to use heat-resisting liquid oil. If the oil or fat becomes brownish after frying, it is not sufficiently heat-resisting. Please take another oil. Never mix different types of oil or fat since the boiling point of different oil types is varying.
  2. Do not mix used oil with fresh oil.
  3. Always observe the MIN/MAX marking when filling the recipient with oil.
  4. If you use solid frying fat, set the appliance to approx. 140 °C. Cut the fat into small cubes of about 2 cm. Fill in a sufficient amount of fat cubes to cover the heating element. Switch the appliance on. As soon as these cubes are melted add more fat cubes until the required level between MIN and MAX is reached. This type of fat will become solid after cooling down.

  5. Do not overheat the oil, as this will crust the surface of the food and it will not be well done inside.

  6. The foodstuff must swim in the oil. Therefore do not fry too much food in one cycle. If the quantity is too big, the oil cools down and the food will absorb too much oil.
  7. Do not pour used oil into the sink, but fill it into closed recipient and dispose if according to your local regulations.
  8. If you want to use the oil several times, let it cool down and pass it through a sieve with a filter paper inside. The oil can be stored in a closed recipient in a cool place. Unfiltered oil will spoil quickly.

BEFORE FIRST USE

  1. Take all parts such as lid, basket, handle etc. out of the packaging. Remove all packaging materials.
  2. Clean lid, inner pan, basket, handle and housing with warm soapy water and dry all parts carefully.
  3. Place the housing on a flat and solid dry surface.
  4. Insert the oil pan until it lies on the top edge of the housing.
  5. Insert the heating element and the accessories. Slide the control and heating element firmly into the recess at the rear

side of the housing. The element must engaged firmly.

  1. Tilt the handle of the frying basket outwards until it clicks into place.

  2. Put the plug into a receptacle as per rating label.

  3. REMARK: The appliance can only be switched on, if the control element has correctly been inserted.

OPERATION

  1. Make sure that the appliance is switched off.
  2. Fill in oil up to the required level (between MINI-MUM and MAXIMUM).
  3. Turn the temperature select switch to the required temperature and switch the appliance on. The red control lamp turns on.
  5. As soon as the required temperature is reached the green control lamp turns on. The appliance is equipped with a thermostat to regulate the temperature. The heating is turned on and off in intervals. Accordingly the green control lamp turns on and off. In order to obtain optimum frying results, you should only add the foodstuff to be fried when the required temperature is reached and the green control lamp is lighting.
  6. Place the foodstuff into the basket and lower it slowly into the oil. If you want your foodstuff crispy, you should fry without lid. As soon as the temperature falls and

the green control lamp turns off, lift the foodstuff out of the fat and wait until the required temperature is reached again. Then continue frying until the foodstuff is ready.

7. ATTENTION: Take care of oil splashes!

  1. Frozen food contains more water than dry food and causes more splashes!

  2. Do not leave the fried food too long in the drainage position over the deep fryer. Escaping steam may weaken the crust.

  3. Do not leave the appliance unattended after use, always unplug after use.

  4. Overheat protection/safety shut off

  5. The appliance is equipped with an overheat protection. If the appliance is switched on inadvertently or without oil in the oil pan and the heating element is not sufficiently covered with fat, the appliance is switched off automatically to avoid overheating.

  6. In this case first switch off and unplug the appliance. Let the deep fryer cool off. Remove the heating element and push the small RESTART button in the cable storage.

CLEANING AND MAINTENANCE

  1. Unplug before cleaning.
  2. Let the appliance cool off completely. Do not touch the heating element, as this is still hot for a long time after use.
  3. Take off the control element by pulling it carefully upwards.
  4. The heating and control element must not be plunged into water or any other liquid or come into contact with water.
  5. Take out the oil pan with both hands. If you want to use the oil again pass it through a very fine sieve. You may store the fat in the enamelled oil pan with closed lid in the refrigerator. For reuse, solid oil can be heated on the stove until it's just liquid before placing the heating element.
  6. Replace used frying oil regularly. Dispose the used oil according to your local regulations.

  7. Do not use any sharp or abrasive cleaning agents for cleaning of the enamelled oil pan, as this may scratch the surface. All parts except the heating and control element can be cleaned in warm soapy water or in the dishwasher. In case of encrustations, soak the respective parts in warm soapy water.

  8. Wipe the control element with a dry cloth.
  9. Dry all parts carefully.
  10. Clean the appliance regularly for a longer lifetime of the deep fryer.
  11. Reassemble the appliance as described in the chapter „First use“.

COOL ZONE PRINCIPLE

The deep fryer works according to the cool zone principle. This means, that the bottom is only heated up to approx. 85 °C, as the heating element lies in the oil. Traditional deep fryers dispose of a heating below the bottom, which heats the bottom up to approx. 210 °C.

Consequently all particles falling down are burnt in traditional deep fryers, soot is developed and the oil is polluted and has thus to be replaced earlier, the creation of acrylamide may be the result.

Due to the low bottom temperatures in a cool zone deep fryer the particles falling down to the bottom cannot be burnt. The oil can thus be used for a longer time.

Another advantage is, that the oil need less time to be heated. As the heating elements lies in the oil, the temperature sensor can react earlier to a change of the oil temperature e.g. after dipping

in the foodstuff. Traditional deep fryers start to heat, when the bottom has cooled down to a certain temperature due to the cooling down of the fat. A cool zone deep fryer starts to heat already, when the fat itself has cooled down. This method saves time and energy and reduces efficiently the amount of acrylamide during frying.

FRYING SCHEDULE

The following times are only approximate values, which may differ subject to the type, the quantity and the volume of the foodstuff to be fried.

In case of frozen food, set the temperature by 10 °C higher than in the schedule. Follow also the instructions of the manufacturer of the frozen food.

For health reasons we recommend to let frozen foodstuff unfreeze partially and then to fry it with max. 175 °C. In order to reduce the production of acrylamide, the oil should not be heated over 175 °C.
