USER MANUAL 282090 Hendi
- Improper operation or use may cause serious damage to the appliance or injuries.
- The appliance can be used only as intended.
- The manufacturer and the seller shall not be lia- ble for any damage caused by improper operation or use of the appliance.
- Never open the appliance enclosure on your own.
- Do not insert any objects into the appliance en- closure.
- If the appliance falls down or is damaged in an- other way, always have the appliance checked and, if necessary, repaired by a specialised repair shop before continued use.
- Never repair the appliance on your own. This may result in a threat to human life.
- Keep monitoring the appliance during operation.
- Children are unaware of hazards created oper- ating equipment. Never allow children to handle equipment.
- Use only the accessories supplied with the ap- pliance.
- The appliance must not be used by persons (in- cluding children) of impaired physical, sensory or mental abilities, or those who lack appropriate knowledge and experience.
- Never store or leave the stuffer at a temperature lower than 32°F (0ºC). Intended use
- The appliance is intended for professional use.
- The appliance is designed only for making sau- sages. Any other use may lead to damage to the appliance or personal injury.
- Operating the appliance for any other purpose shall be deemed a misuse of the device. The user shall be solely liable for improper use of the de- vice. Description of the production process Our stuffer /filler will help you make delicious sau- sages. The device, equipped with horizontal and vertical racks, has a new gearing system. It has a two-speed gear reduction drive which releases the plunger for quick and easy filling. The machine is ideal for sausage makers or restaurants aiming at making delicious sausage stuffings. - The stuffer/filler has two-speed stuffing/filling system which is quick and easy to use.
- The cylinder and plunger can be easily removed for filling and cleaning.
- Stainless steel version and red version come with 4 different S/S funnels and 3 different PP funnels separately.
- The device is equipped with a hardened steel bearing and gearing system which makes it pres- sure resistant.
- All parts in direct contact with food meet the food hygiene requirements.
Parts of description
Preparation for first use
- Check to make sure the appliance is undamaged. In case of any damage, contact your supplier im- mediately and do NOT use the appliance.
- Remove all the packing material and protection film (if applicable).
- Place the appliance on a level and steady surface, unless mentioned otherwise Operation NOTE: For hygienic purposes please thoroughly clean the device before using it. (see ---> clean- ing) Operate the device following the steps below:
- Fit the crank handle on the on fast speed gear system (Figure 1) and rotate it clockwise to lift the plunger.
- Remove the cylinder for cleaning (Figure 2). Re- move the plunger for cleaning (See--->Plunger Assembly/Disassembly).
- Clean the appliance (See ---> Cleaning)
- Having completed the cleaning, install the plung- er and cylinder in its initial position separately. Make sure it is properly locked in place.
- Fit the funnels on the sausage outlet and screw it tight with a locking nut (Figure 3).
- Apply a food grease lubricant(not included) to the inner surface of the Canister before filling the meat mixture(Figure 4).
- Filling the properly installed cylinder with meat and put sausage casing on the funnels.
- Last step: Switch the crank handle to low speed and turn it clockwise to lower the plunger. The meat will start to come out of the nozzle and into the casing. Form a sausage.
- After the stuffing is finished, remove as much residue as possible with hot water. You can also clean the appliance with a brush/cloth and suit- able detergent approved for use with meat pro- cessing equipment. Note: This will dissolve and remove any grease, oils and protein that bacteria may feed on. Rinse again with warm clean water to remove the detergent solution, oils, grease and proteins. The product may be dried using compressed air. Before reas- sembling make sure that all parts are dry. Plunger Assembly/Disassembly
- Slide the Plunger seal onto the Plunger (figure 5).
- Assemble the Pressure Release Valve Kit onto the Plunger. From the top of the Plunger, place the Washer onto the Valve Hole, then insert the Screw through the Washer and into the Valve hole. From the underside of the Plunger, place the Spring onto the end of the Screw and twist to secure.
- Screw the Plunger Bolt onto the Plunger Shaft (figure 6) and place the assembled Plunger onto the end of the Plunger Shaft (figure 7). Figure 1 Fast gear shaft Slow gear shaft7

- Clean the outside of the appliance with a damp cloth (water with mild detergent).
- Clean all parts that have direct contact with food, e.g. cylinder, funnels, plunger, and etc. Use a brush/cloth and suitable detergent approved for use with meat processing equipment.
- Never use aggressive cleaning agents or abra- sives. Do not use any sharp or pointed objects. Do not use petrol or solvents! Clean with a damp cloth and detergent if necessary. NOTE: BE SURE TO CLEAN THE PARTS IMMEDI-

- Please strictly follow the user’s manual. It will considerably extend the service life of the device.
- It is recommended to add food grease lubricant to the rack and gear system every six months. In some cases it depends on how much the ma- chine is used.
- It is recommended to replace gaskets every six months, depending on the use.
- Before reassembling make sure that all parts are dry. Troubleshooting When making sausages, the following problems may occur:
- The gasket may become stiff if the ambient tem- perature drops below 15°C. In that case DO NOT use the appliance. Remove the gasket from the plunger, soak it in hot wa- ter to soften and then fit on the plunger adding a food grade lubricant. Resume using the device. Before using the device check if
- the minced meat comes out from the nozzle and into the casing after pressing hard on the plunger. If not, DO NOT press the plunger harder. Check whether or not the outlet or the nozzle is blocked by the meat, if so, remove the meat. If blockage occurs, check if the degree of mincing is adequate for the selected nozzle. STORAGE: THIS DEVICE MUST BE STORED IN A CLEAN AND DRY PLACE. DO NOT EXPOSE THE DEVICE TO RAIN OR HUMIDITY.
