Meat mincer
Using the perforated discs
- Perforated disc, fine (2.7 mm) for: cooked chicken / pork / beef, cooked liver, cooked fish for soups; raw pork and beef for meat loaf; raw liver, meat and bacon for liverwurst; pork for Mettwurst

Pasta products
Basic dough recipe
Dumplings
-230 g of wheat flour (type 405) or very finely ground wheat flour -1 egg
Tip: For the best results, prepare the dough with the help of a kitchen machine Bosch MUM5 with a blender-mixer (maximum quantity: 1 basic recipe).
Briefly (about 10 seconds) process all ingredients at level M with the help of the blender-mixer. Then knead the dough.
- Grinding discs, fine (2.7 mm): boiled chicken, pork, beef, boiled liver, boiled fish for soups; pork and beef for minced meat cutlets; liver, meat and lard for liver sausage; pork for raw smoked sausage.
- Grinding discs, medium (4 mm): pork and beef for pâté and cervelat.
- Grinding discs, coarse (8 mm): smoked pork for brawn; rinds (e.g., lungs, sausages) for filling with rinds. If the consistency of the processed product is too fine, repeat the grinding process and use different grinding discs (coarse, medium, fine). Solid ingredients (e.g., onions, garlic) can be added directly during mixing. In this way, ingredients are mixed well.
Sausage stuffer
Soak the natural sausage casing in warm water for about 10 minutes before processing. Do not fill the sausage casing too tightly, as the sausages may burst during cooking.
