Tips for cooking
For best results, cook pieces of meat that are thick enough to be in contact with both plates.
Recommended pieces:
- Veal: sirloin, loin, ribs, steaks, etc.
- Lamb: steak, fillets, loin, chops, diced meat, etc.
-
Pork: loin, ribs, steak, fillets, diced meat, etc.
-
Tougher pieces such as veal shoulder, lamb chop or forequarter lamb chops can be used. To soften this type of meat and make it more tender, marinate it in wine or vinegar for a few hours or overnight to help break down the fibres.
- Do not salt meat before cooking. Adding salt to raw meat will cause it to lose its juices and turn it tough.
- If you are cooking meat marinated by yourself or bought pre-marinated, dry it with absorbent kitchen roll to remove the excess of marinade before placing it on the grill. Some marinades contain high levels of sugar that can burn the grill plates when cooked.
-
Do not overcook meat, even pork is better served medium well.
-
Do not prick the meat with a fork or cut it while cooking. This will cause all the juices to escape and the meat will become tougher and drier. Use tongs instead.
- When removing the fish, use a flat, heat-resistant plastic spatula to lift it.
- Lightly boiling the sausages before cooking can eliminate the need to prick them with a fork.
