Never open the housing of the appliance. This can result in electric shock.

The manufacturer will not be liable in the event of incorrect assembly, improper or incorrect use or if repairs are carried out by unauthorized third parties.

PREPARING THE APPLIANCE FOR OPERATION

  1. Remove all packaging materials and any transport safety devices. Keep packaging materials away from children - danger of suffocation!
  2. Check to make sure that all accessories are present.
  3. Attach the handle to the glass lid using the screws provided. To do so, place the washer on the screw. Now position the handle and the black colored ring on the lid and tighten the handle by turning the screw on the bottom of the lid.
  4. Clean all parts with a damp cloth, as described in the chapter "Cleaning and care".
  5. Now connect the power cord.
  6. Check to make sure that all parts are assembled correctly and the appliance is stable.
  7. Connect the appliance via the power cord to the power supply (230 V\~, 50 Hz).
  1. Place the heating base on a suitable level surface.
  2. Fill the pot with at least 1.5 liters of broth. Make sure not to overfill the pot, so that it does not boil over. Do not put more than 2 liters of broth in the pot.

Please do not use grease or oil for the fondue. The appliance is suitable only for “Asian-style” fondue with broth.

  1. Place the pot on the base.

  2. Lay the grill plate on the heating base. Even if you do not wish to use the grill function, the grill plate must be in place to protect the heating base from splattering liquids.

  3. Now connect the power cord to the appliance.

  4. Connect the appliance via the power cord to the power supply (AC, 230 V\~, 50 Hz).

  5. The indicator lamp lights up red and remains on as long as the appliance is plugged into the power supply.

  6. Set the selection switch to the desired function: "Fondue" for use of the fondue function

■ Setting I for keeping the broth warm
■ Setting II for heating the broth
■ Setting 0 for switching off the fondue function

  1. Heat the broth for about 20 minutes. If you have prepared the broth on the stove and it is still hot, this time is reduced accordingly.

  2. In the meantime, you can prepare the ingredients. We recommend 200 to 250 grams of meat or fish per person. To make it easier to slice the meat thinly, place the meat in the freezer for 2 to 3 hours beforehand.

  3. While the broth is heating, you can leave the lid on the appliance if you are not using the grill function. When cooking ingredients with the fondue, however, the lid must be removed from the appliance.

  4. The liquid should not boil, but only simmer. Therefore, it may be necessary to set the switch to setting 1 as needed.

  5. Now you can immerse the ingredients in the liquid, using the fondue forks.

  6. Cook the meat about 3 to 4 minutes. You can also cook firm fish, shrimps, wan-tans or vegetables (Chinese cabbage, broccoli, carrots, etc.) in the broth. Firm vegetables such as carrots may have to be blanched first so they cook faster in the broth.

  7. Instead of using the forks, you can put the ingredients in the broth and fish them out with the fondue baskets after they are finished cooking.

  8. It is possible that liquid may splatter. Therefore, you should protect the table to prevent damage to the surface from splashing or dripping liquids.
  9. When you no longer need the fondue function, set the fondue switch to "O" and unplug the appliance from the power supply.
  10. Then unplug the female appliance plug from the appliance and allow it to cool.

  2. Open the cover of the appliance.
  3. Lightly oil the grill plate with high heat cooking oil, such as sunflower oil.
  4. Place the pot on the heating base
  5. Lay the grill plate on the heating base.
  6. Now connect the power cord to the appliance.
  7. Connect the appliance via the power cord to the power supply (AC, 230 V\~, 50 Hz).
  8. The indicator lamp lights up red and remains on as long as the appliance is plugged into the power supply.

  9. Set the selection s witch to the desired function:

"Grill" for use of the grill function

■ Setting I for heating the grill plate
■ Setting 0 for switching off the grill function

  1. Allow the grill plate to preheat for about 5 minutes for optimum grilling results.

  2. When the required temperature has been reached, you can start grilling.

  3. Please use only wooden or plastic utensils for stirring and turning food on the grill plate. Do not use metal spoons, knives or forks. They can scratch the grill plate.

  4. For optimum grilling results, turn the food regularly.

  5. Important: When using the grill function, never cover the appliance with the lid!

  6. Frozen foods should be completely thawed before grilling.

  7. Do not completely cover the grill plate with aluminium foil or other objects that could cause the appliance to overheat. However, you can prepare food wrapped in aluminium foil, such as potatoes, on the grill plate.
  8. It is possible that grease may drip while food is being grilled. Therefore, you should protect the table to prevent damage to the surface from splashing or dripping grease.
  9. When you no longer need the grill function, set the grill switch to "O" and unplug the appliance from the power supply.
  10. Then unplug the power cord from the appliance and allow it to cool.

RECIPES FOR THE FONDUE

Asian chicken broth

For 4-6 servings

1 boiling chicken, approx. 2.5 kg, 1 portion soup vegetables and herbs, 50 g ginger, 5 to 6 stalks of lemon grass, 1 onion, bay leaves, white pepper-corns, salt, approx. 150 ml rice wine, cilantro

Wash the chicken in cold water and cover with about 5 liters of water in a large pot. Bring to a boil, skimming off the foam occasionally. Wash the soup vegetables and cut into pieces, peel ginger and dice. Also wash the lemon grass and cut into pieces. Peel the onion and cut into half rings. Set aside some of the cilantro, lemon grass and bay leaves, and put the rest together with the spices, onion and rice wine in the pot and again bring to a boil briefly. Remove the pot from the heat and allow to cool overnight.

The next day, remove the chicken from the broth, strain the broth and pour into the fondue pot. Add the remaining lemon grass, cilantro and 1 to 2 bay leaves and bring to a boil. If the broth becomes too thick when cooking food in the fondue, you can add a little hot water.

Fondue chinoise

For 4-6 servings

200 g each fillet of beef, pork and chicken, chicken livers, calf kidney, fillet of sole, king prawns (raw, shelled, also frozen), 125 g Chinese noodles, 125 g leaf spinach, 125 g celery stalks, 125 g carrots, ca. 2 l chicken broth, 4 tbsp dry sherry or white wine, 2 eggs

Cut meat, trimmed giblets and fish in thin slices. Thaw out prawns, if frozen. Soften Chinese noodles in warm water for about 10 minutes. Wash spinach and remove any hard stems. Peel carrots and celery and slice. Whisk eggs. Arrange ingredients in separate bowls. Heat chicken broth with sherry at the highest fondue setting. As soon as the broth is hot, switch to the lowest setting so the broth only simmers. Cook meat, fish, giblets and vegetables in the broth.

Add broth occasionally as needed.

Serve with fondue sauces, e.g. curry

sauce or cocktail sauce or a sweet-sour Chinese sauce. Afterwards, put the softened Chinese noodles, the remaining vegetables and the whisked eggs in the broth.

Japanese prawn fondue

For 4-6 servings

800 g prawns (remove digestive tract, peel and cook), 1/8 l lime juice, 150 ml soy sauce, 5 Shiitake mushrooms, 250 g tofu, 125 g leaf spinach, 150 g carrots, 150 g button mushrooms, 1 bunch spring onions, approx. 1 l fish broth (available in jars).

Sprinkle prawns with lemon juice and marinate 1 hour. Soak Shiitake mushrooms in hot water for 30 minutes; dice tofu. Wash spinach and remove any hard stems. Peel carrots and slice, then blanch briefly in boiling water. Wash spring onions and cut into pieces, about 4 cm.

Clean button mushrooms by rubbing with a paper towel.

Drain Shiitake mushrooms and arrange on a platter with the prepared vegetables. Heat fish broth with about 1 l of water in the fondue pot on setting II, then switch to setting I so the broth only simmers. Add vegetables and cook.

Serve with dips and sauces of your choosing.

Fish fondue

For 4-6 servings

Approx. 1,000 g firm fish fillets, for example salmon, 4 prawns (remove digestive tract and peel), 5 tbsp lemon juice, approx. 1.5 – 2 l fish broth, white wine to taste (optional).

Wash fish in cold water, pat dry with paper towels and cut into cubes. Sprinkle fish cubes and prawns with the lemon juice. Pour the broth into the fondue pot, and add white wine to taste. Heat on setting II, then switch to setting I so the broth only simmers.

Cook fish cubes and prawns in the broth. Serve with rice. Lemon dip fits well fish fondue.

Vegetarian fondue

For 4-6 servings

Broth: 5 spring onions, 400 g carrots, 400 g radishes (black), 1 star anise, 1 tsp black pepper-corns, 5-10 g ginger (fresh), salt, soy sauce

Fondue ingredients: 2 leeks, 500 g button mushrooms or other mushrooms, 500 g leaf spinach, 500 g broccoli

For the broth, wash vegetables and chop. In a pot, bring 1.5 l of water to boil, add vegetables, star anise and pepper; simmer about 2 hours. Drain broth and season with soy sauce and salt.

Trim and wash leeks, slice in small rings, rub button mushrooms with a paper towel and cut in half. Wash spinach. Blanch broccoli briefly in boiling water. Pour the broth into the fondue pot and heat on the heating base on setting II, then switch to setting I so the broth only simmers. Add broth as needed. Cook vegetables in the broth. Serve with dips and sauces of your choosing.

Wine fondue

For 4-6 servings

500 g meat, e.g. turkey or duck breast, veal, 500 g mushrooms, 1 l semi-dry white wine, 1 l poultry broth

Cut meat into strips. Clean mushrooms by rubbing with a paper towel and cut into pieces. Pour the wine with the broth into the fondue pot and heat on the heating base on setting II, then switch to setting I so the liquid only simmers. Cook meat and mushrooms in the broth.

Fits well with French bread and a yogurt/herb dip or a creamy cranberry dip.

RECIPES FOR FONDUE SIDE DISHES

Prawn balls

Appr. 25 balls

30 prawns, peeled and with heads and digestive tract removed, 1 tbsp peeled sesame seeds, 1 spring onion, 1 tbsp sesame oil, 1 tsp corn starch, salt, pepper, grated peel of one lemon

Chop prawns finely, roast sesame in a dry pan until golden brown. Wash the spring onion and chop finely. Combine all ingredients and season with the spices. Form into balls. Refrigerate. Cook in broth, about 3 minutes.

Wan-tans

25 Wan-tans

25 frozen wan-tan cases, 200 g fillet of pork, 400 g frozen leaf spinach,

100 g button mushrooms, 20 g spring onions, 1 red chili pepper, 1 tbsp sesame oil, 1 tbsp soy sauce, grated peel of one lemon or lime, 1 egg, 1 to 2 tbsp corn starch, salt, pepper, cayenne pepper

Thaw out the wan-tan cases. Cut meat into fine cubes and grind in a meat grinder, e.g. the UNOLD® meat grinder 78131. Chop spinach finely. Remove stems from mushrooms and chop the heads finely. Wash chili pepper, cut in half, remove seeds and chop finely; also chop the spring onion finely. Heat oil in a pan; lightly braise spinach, mushrooms, chili pepper and onion. Add soy sauce and allow to thicken

somewhat. Cool. Combine the ground meat with the cooled vegetables, lemon peel, egg and corn starch and season well. Place the wan-tan cases on the countertop. Brush edges with water. Use a teaspoon to place the filling on the cases. Fold to form a triangle and bend in the shape of a crescent. Cook about 5 minutes in the fondue broth.

RECIPES FOR THE GRILL

Spicy hot chicken

200 g chicken meat, 3 tbsp soy sauce, 2 pinches chili paste, 12 tsp fresh, finely grated ginger, oil

Place chicken fillet in freezer until it begins to freeze, then cut in very thin slices (against the grain of the meat); mix soy sauce with chili and ginger. Marinate meat in this mixture, cover and refrigerate for 2 to 3 hours. Lightly oil the grill plate. Grill about 10 minutes, turning occasionally. Tip: Substitute pork loin for chicken.

Prawn skewers

4 prawns, 4 shallots, cumin oil, small wooden skewers, oiled

Stick a skewer through one prawn and shallot each, brush with cumin oil (or garlic oil) and grill for about 8-10 minutes.

3 tbsp sesame oil, 1 onion, 1 leek, 1 clove garlic, 1 slice fresh pineapple, 2 tbsp honey, 2 tbsp soy sauce, 4 tbsp vinegar, 30 ml rice wine, 14 l tomato ketchup, salt, pepper, cayenne pepper to taste

Chop onion finely. Cut the leek and pineapple into cubes, chop the garlic finely and heat the sesame oil in a pan. Fry the onion and the leek in the oil until clear. Add the garlic and pineapple. Stir in all remaining ingredients and season with the spices.

Mango sauce

1 mango, 1 apple, 1 tsp mustard, juice of one lemon, 1 tsp grated horse-radish, 1 to 2 tbsp honey

Cut mango and apple into fine cubes. Add lemon juice, horseradish, mustard and honey and puree with the ESGE® hand mixer.

Hot sauce

350 g each white and red onions, 1 tbsp soy oil, 3 tbsp rice vinegar, 1 tbsp each sugar, salt and cayenne pepper

Peel onions and chop finely. Fry in sesame oil, stirring, until the onions are slightly brown. Add the sugar and caramelize. Pour in about 150 ml water and simmer about 15 to 20 minutes at medium heat. When the onions are soft, season the sauce with rice vinegar, salt and cayenne pepper.

Lemon dip

Appr. 500 g cream yogurt, juice and grated peel of one organic lemon, 3 tbsp olive oil, 2 to 3 cloves garlic, 2 chili peppers, 1 tsp paprika powder, 2 to 3 tbsp sugar, salt, pepper, lemon balm for garnishing if desired

Mix yogurt with lemon juice and lemon peel, stir in olive oil. Peel garlic and press or chop very fine. Stir this into yogurt mixture. Wash the chili peppers, cut in half and removed seeds, then chop finely. Add yogurt and season with paprika, sugar, salt and pepper. Decorate with finely chopped lemon balm, if desired.

Peanut sauce

9 tbsp sweetened peanut butter, 6 tbsp soy sauce, 4 tbsp sesame oil, 14 I vegetable broth, 1 to 2 red chili peppers

Bring broth to boil with the sesame oil and the soy sauce. Stir in the peanut butter one tablespoon at a time. Cook at low heat. Wash the chili peppers, cut in half and removed seeds, then chop finely. Add to the sauce in the pot. Season to taste.

Yogurt/herb dip

1 cup yogurt, 1 bunch herbs (e.g. thyme, parsley, dill, basil, mint), 1 clove garlic, salt, pepper

Peel garlic and chop finely. Wash herbs, dry and chop finely. Stir garlic and herbs into the yogurt; season with salt and pepper.

INGREDIENTS IN ASIAN CUISINE

Soy sauce: made from fermented soybeans. Light soy sauce has a mild flavor, dark soy sauce is more salty and usually colored with caramel. A very sweet Indonesian variant is Ketjap manis.

Agar-agar: a natural gelling agent made of sea-weed (gelatin can be substituted).

Bamboo sprouts: young sprouts of the bamboo plant.

Bean paste: yellow paste is mildly salty; white, red or black pastes are more salty. Sweet red bean paste is also available for desserts.

Chili sauce: hot sauce made of chili peppers, vinegar, salt and plums.

Five-spice powder: hot spice consisting of black pepper, star anise, fennel seeds, cloves and cinnamon.

Glutamate: a powdered flavor enhancer made of vegetable protein.

Ginger: fresh ginger root, spicy hot; peel and chop finely.

Noodles: wheat or egg noodles used in Asian cuisine are pre-cooked. Instant noodles are available in sizes from very thin to very wide. Before frying noodles, they should be cooked (about 2 minutes).

Chinese noodles: usually fine, clear noodles made of mungo bean, tapioca or soybean starch. Never cook these noodles; instead, pour boiling water over them and wait until they are soft (about 10 minutes), then drain and cut with scissors.

Rice noodles: made from rice flour and water; prepare the same as Chinese noodles.

Basmati rice: a high-quality variety, very aromatic when cooked.

Long grain rice: remains grainy after cooking; firm to the bite.

Siam rice (sticky rice): the grains stick to each other after cooking. Ideal when eating with chopsticks.

Wild rice: not actually rice, but the seeds of a North American grass. It is black and is suitable for mixing with the varieties of rice described above. Wild rice has a distinct nutty flavor.

Morels: black mushrooms, usually dried; soak in liquid overnight.

To ngu mushrooms: dark brown, usually dried; soak in warm water for about 10 minutes before using.

Straw mushrooms: light colored mushrooms, sold in cans.

Tofu/soybean curd: a soft cheese-like product, made from curdled and fermented soy milk.

Wine: In Asia, wine is usually made from rice or millet. A dry sherry can be used as a substitute for rice wine.
