Cooking with a sous vide is based upon a principle completely different from the traditional way of food preparation. The food is cooked at low temperatures in a vacuum bag in a water bath. This enables an exceptionally flavorful preparation with cooking results at the highest level.

On our website, you will find recipes and useful tips for an easy introduction to sous-vide cooking.

This item has integrated safety devices. You should nevertheless read the safety instructions carefully and only use the item as described in this manual, in order to avoid incidental injuries or damages.

1. Safety Instructions

Intended Use

KeMar KSV160 - Intended Use - 1

The sous-vide cooker is suitable for the preparation of meals in a water bath.

It is not suitable for roasting food.

It is exclusively designed for the private household and it is not intended for commercial purposes.

The manufacturer does not accept any liability in the case of improper use caused by failure to observe this instruction manual.

In order to avoid hazards, only customer service is authorized to carry out repairs at the item.

The important precautions described within this section must be followed carefully to prevent the possibility of fire, electrical shock, personal injuries and/or property

damage:

  1. Read all instructions.
  2. Do not touch HOT surfaces. Use handles or knobs.
  3. To protect against fire, electrical shock, and personal injury, do not immerse cord, plugs, or appliance in water or other liquid.
  4. Close supervision is necessary when the appliance is used by or near children.
  5. Unplug unit from outlet when not in use and before cleaning.

Allow to cool before attaching or removing parts, and before cleaning the appliance.

  1. Do not operate any appliance with a damaged cord or plug after the appliance malfunctions or has been damaged in any manner. Return appliance to an authorized service facility for examination, repair or adjustment.
  2. To protect against risk of electrical shock, do not force any foreign objects, such as pins and wires, into any openings.
  3. The use of accessory attachments not recommended by the appliance manufacturer may result in fire, electric shock or personal injury.
  4. Do not use outdoors.
  5. Do not let cord hang over edge of table or counter, or touch hot surfaces

  6. Do not place the appliance on or near a hot gas or electric burner, or in a heated oven.

  7. Extreme caution must be used when moving an appliance containing hot oil or other liquids.
  8. Do not clean the appliance with cleansers, steel wool pads, or other abrasive material.
  9. Always attach plug to appliance first, then plug cord into the wall outlet. To disconnect, turn the switch to its "OFF" position then remove the plug from wall outlet.
  10. Do not use appliance for other than intended use. This product is designed for household use only.
  11. Use only the appropriate Volt AC electrical current.
  12. Always keep the power supply plug clean.
  13. Plug the appliance into a single electrical outlet only.
  14. Make sure that the power supply plug is firmly inserted all the way into the electrical outlet.
  15. Do not attempt to plug in or unplug with wet hands.
  16. Do not touch the steam vent.
  17. Do not handle the power supply cord in a rough manner
  18. Grasp only the plug when unplugging the power supply cord.
  19. Do not shake the appliance by the handle.
  20. Do not touch the metal part on the inside of the lid or inner lid during or immediately after operation.
  21. Do no operate the appliance near flames or wet areas.
  22. Do not operate the appliance on an unstable surface or on any surface that is not resistant to head.
  23. Do not touch the Lid Release button while carrying the appliance.
  24. Do not use any Inner Pot other than provided.
  25. Do not place the appliance near walls or furniture (within 12^ / 30cm ).
  26. Do not place the appliance in the locations where hot cooking oil may splash onto the appliance or where the appliance is exposed to direct sunlight.
  27. Do not place a cloth or towels over the appliance during operation.
  28. Remove all foreign substances before using appliances.

2. Special Cord Set Instructions

A A short power-supply cord is provided to reduce risks of becoming entangled in or tripping over a longer cord.
B Extension cords are available and may be uses if care is exercised in their use.
C If extension cord is used:

(1) The marked electrical rating of the extension cord should be at least as great as the electrical rating of the appliance.
(2) The longer cord should be arranged so that it will not drape over the countertop or table top where it can be pulled on by children or tripped over.

Only use grounded outlets.

Do not remove the grounding connection.

Do not use any adapters.

Do not use any extension cables.

Failure to observe these instructions may result in lethal injuries, fire or electric shock.

3. Before first use

Remove the unit from packaging. HAZARD FOR CHILDREN - risk of death due to choking/ swallowing of packaging. Keep packaging away from children. Dispose of it immediately.

Disconnect the power plug from the socket.

Clean the container with hot water and a bit of detergent prior to first use. Wipe the pot dry with a cloth.

Do not immerse electrical components under water!

Wipe the lid only with a damp cloth and then let it dry.

Only use bags suitable for vacuumizing.

Make sure that no spices or similar are in the area of the weld seam, because otherwise, airtight welding is not possible and water can enter the bag.

Operating Panel

Operation via the menu is very simple. Select temperature and time in the menu and then start the cooking process. If no function has been selected within 20 seconds, the process is canceled.

1 Menu switch

Press the menu (MENU) switch, in order to move to the sous-vide or to the slow cooking menu.

2 Cooking menu display

A control lamp displays the respective menu. Choose between the SOUS VIDE menu with temperatures between 40^ and 90^ or the slow cooking menu (Slow Cook) with low, high or automatic keep-warm feature (auto keep warm).

3 Temperature and time display

After having chosen the method of preparation, you can correct temperature (TEMP) or time (TIME) with the arrow keys ( ) .

4 Start/Stop switch

In order to start the preparation process, press the start button (START). In order to finish it, keep the cancel button (CANCEL) pressed down.

5 LED display panel

Displays the cooking time or the elapsed time of the keep-warm function.

6 On/Off switch

For switching the device on or off. Always turn the device off before unplugging the power cable.

5. Quick Reference Guide

In just a few steps to the perfect sous-vide preparation

  1. Season your dishes in order to enhance the flavor.
  2. Vacuumize your dishes. Suitable vacuumizers are available in specialist stores or from online retailers.
  3. When the desired temperature is reached, put the bags carefully into the water.
  4. When the cooking process is finished, sauté your dishes in order to enhance flavor and look. Searing caramelizes the fats and protein for a more intense taste.

Preparing the dishes

Follow the instructions to prepare the dishes.

Always make sure that dishes to be prepared are always fresh and of high quality.

Always make sure that meat, fish, seafood and poultry, for example, have been stored at temperatures below 5^ before use.

Before use, vacuum bags have to be clean and unused in order to avoid impurities.

Always prepare food only on clean working surfaces.

Wash your hands thoroughly before preparation.

Prepare the dishes in the correct size (thickness) and at the right temperature.

Sous Vide cooking

Follow the instructions for time and temperature settings in the section preparation instructions.

Make sure that the bags are closed properly and tightly, because otherwise the cooking process is inhibited.

Make sure that the bag is still closed tightly after the cooking process has ended.

Slow cooking

Low setting - suitable for cooking processes and slow cooking.

High setting – for faster cooking. An hour at High mode has the same effect as two and a half hours at Low mode.

Keep-warm function - When the cooking process has ended, the keep-warm function switches on automatically in order to keep the meals warm until they are served.

Please keep in mind: The cooking times are only based on estimates. In order to find your individual taste, feel free to experiment with the times. The cooking time always depends also on size and strength of the dishes.

Preparation with the sous-vide method

Make sure that the device is positioned on a plane surface. Connect the device to an electrical outlet and press the switch. The device beeps and the display panel lights up. The basic setting is automatically set to 50^ .

Fill the inner pot with water until the needed level is reached. Replace the lid onto the pot. Always make sure that the maximum filling height is not exceeded.

Via the cooking menu, select the sous-vide setting. Press the menu button until sous vide lights up.

In order to set the temperature, press the arrow keys up or down until the desired temperature is displayed.

In order to choose the time, press the arrow keys up or down until the desired time is set. Each time you press the button, time moves forward by 10 minutes. Keep the button pressed down in order to set time leaps faster.

When you have made the desired settings, press the start button in order to initiate the cooking process. The warm-up process is activated.

The device needs some time to reach the set temperature. Put the food into the inner pot only then. A red light on the display panel indicates that the set temperature has been reached. The device beeps three times and the red light stops blinking.

The device is now ready to prepare your food.

Remove the lid by the appropriate handles. It is best to use a pair of kitchen gloves in order to avoid scalding. Put the bags with your dishes carefully into the water. The water level should not exceed the maximum mark.

When the bags have been put properly into the pot, replace the lid onto the device and press the start button.

After the set preparation time has elapsed, an acoustic signal is issued three times.

The device switches off automatically.

Preparation with the slow-cooking function

Make sure that the device is positioned on a plane surface. Connect the device to an electrical outlet and press the switch.

The device beeps and the display panel lights up. The device automatically goes to the sous-vide menu.

Remove the lid and place your dishes into the water of the inner pot.

Set the slow-cooking function via the menu until the display panel lights up and indicates temperature LOW.

Change the setting from Low to High via the arrow keys.

In order to set the time, press the time button and choose the cooking time by pressing the arrow keys up or down. Each touch of the button changes the time by 30 minutes.

If you keep the button pressed, the time setting moves forward faster.

As soon as you have set the desired time and temperature via the menu, press the start button to initiate the cooking process.

The time measurement starts with a countdown.

After the set time has elapsed, an acoustic signal is issued three times. Then the keepwarm function automatically switches on and a green light appears in the display.

The timer starts and indicates how long the dishes have been kept warm.

Please make sure that you do not lift the lid during cooking as this might extend the preparation time. Only lift the lid if it is absolutely necessary.

6. Cleaning and maintenance

Switch the device off and disconnect it from the power supply.

Before you clean the device, make sure it has cooled down sufficiently after use.

Only pour the water after it has cooled down sufficiently in order to avoid scalding.

Never submerge the device into water, as it may be damaged.

The lid and the inner pot are dishwasher-proof.

Before reusing the parts, dry them sufficiently, please.

5) Claims under the guarantee are excluded in cases of damage due to:
