SFM 850 A2 WARNING! RISK OF INJURY! ► Hot steam is released during the deep-frying process, espe- cially when the lid is opened. Keep a safe distance away from the steam. ► Ensure that all parts are completely dry before pouring oil or liquid fat into the deep fat fryer. Otherwise, hot oil or fat could splatter out. ► Carefully pat all foodstuffs dry before placing them in the deep fat fryer. Otherwise, hot oil or fat could splatter out. ► Be especially careful with frozen foodstuffs. Remove any ice that may have formed on them. The more ice there is on the foodstuff, the more the hot oil or fat will splatter. ► Some parts of the appliance become very hot during operation. Touching these may cause serious burns. ► The appliance should be set up in a stable position using the handles to avoid spillage of hot liquids. WARNING! RISK OF FIRE! ► Do not use an external timing switch or a separate remote control system to operate the appliance. ► Never melt solid fat (fat in blocks) in the deep fat fryer. Due to the high temperatures that are generated before the fat covers the heating element, the heating element can be damaged or there could be a fire! Melt the fat beforehand in a saucepan or similar.GB
31 ■ SFM 850 A2 WARNING! RISK OF FIRE! ► Do not use the appliance near hot surfaces. ► Never leave the appliance unattended while it is being used. Caution! Hot surface! Never use water to extinguish a fire in the deep fat fryer! ► Old or dirty fats and oils can spontaneously ignite if over- heated. Change the oils or fats regularly. In the case of a fire, remove the plug from the mains power socket and smother the burning fat or oil with a damp towel or fire blanket. CAUTION – APPLIANCE DAMAGE! ► When filling the frying container with fat, never fill it to above the MAX marking or to below the MIN marking. Whenever you intend to switch the appliance on, first ensure that there is sufficient oil or fat in the deep fat fryer. ► Never switch the appliance on if there is no oil or liquid fat in it. Otherwise the appliance may overheat. ► This deep fat fryer is suitable only for frying foodstuffs. SFM 850 A2 Before first use ■ Before you use the deep fat fryer for the first time, please clean all individual components thoroughly and carefully dry them (see chapter “Cleaning and care”). Low-acrylamide cooking Acrylamide is a possibly carcinogenic substance formed from a reaction with amino acids when frying foodstuffs with a high starch content. The formation of acrylamide increases dramatically at temperatures of more than 175°C. You should therefore avoid frying foodstuffs with a high starch content, for example chips, at temperatures above 170°C. The foodstuffs should only be fried to golden-yellow, instead of dark or brown. This is the only way to achieve low-acrylamide cooking. Deep frying We recommend cooking oil or liquid cooking fat for use in this deep fat fryer. You can also use solid cooking fats. Read the chapter “Solid cooking fats” for more information.GB
1) Place the appliance on a horizontal, level, stable and heat-resistant surface.
NOTE ► If you wish to place the deep fat fryer below the cooker extraction hood, ensure that the cooker is switched off.
2) Unwind all of the power cable from the cable retainer 4.
3) Press the lid release button 9. The appliance lid flips open.
4) Remove the frying basket q and attach the handle 0:
– press the handles 0 together so that the holding pins can be inserted into the eyelets on the frying basket q. The handles 0 must lie under the upper end of the connecting piece on the frying basket q: – Loosen your grip on the pressed-together rods on the handle 0 so that the holding pins project into the holes:■ 34
SFM 850 A2 – The handle 0 is now seated firmly on the frying basket q. NOTES ► Only use oils or fats which are specifically labelled as non-foaming and are suitable for deep frying. This information is to be found on the packaging or the label. ► Never mix different types of oil or fat! The deep fat fryer could froth over.
5) Fill the dry and empty frying container 2 with cooking oil, liquid or molten
fat (about 1.2 litres of oil or about 1 kg of solid fat). NOTE ► When filling the frying container 2 with oil or fat, never fill it to above the MAX marking or to below the MIN marking.
RISK OF ELECTRIC SHOCK
► The power cable must not come into contact with the hot parts of the deep fat fryer. Danger of electric shock!
6) Replace the frying basket q.
7) Close the lid so that it clicks into place.GB
35 ■ SFM 850 A2 Frying foods CAUTION – PROPERTY DAMAGE! ► Never operate the deep fat fryer without oil/fat!
1) Insert the plug into a mains power socket.
2) Set the on/off switch 8 to the position “I”. The Power control lamp 7 lights up.
3) Turn the temperature control 5 to the desired temperature. The cooking oil
or the fat is now heated up to the required temperature. When the required temperature has been reached, the Ready control lamp 6 lights up. NOTE ► We recommend allowing the appliance to heat up for 10 – 15 minute before you start frying. NOTE The correct frying temperature is to be found either on the packaging of the food to be deep-fried or in the "Table – frying times" in these operating instruc- tions. A rough guide as to which foods should be fried at which temperature is provided by the figures on the front of the deep fat fryer: Symbol Food Temperature Prawns 130°C Chicken 150°C Chips (fresh) 170°C Fish 190°C The values given are only for guidance. The temperature can vary depending on the properties of the foods and personal taste!■ 36
SFM 850 A2 WARNING – RISK OF INJURY! ► The lid and the deep fat fryer become extremely hot during the deep-frying process. Therefore, do not touch anything except the handles 3 during deep-frying! Risk of burns! We recommend the use of oven gloves.
4) Press the lid release button 9.
WARNING – RISK OF INJURY! ► Take care when filling the frying basket q! It is extremely hot!
5) Lift the frying basket q out of the deep fat fryer. Add the food to be fried.
The frying basket q may only be filled to the extent that the food is com- pletely covered with fat when the frying basket q is lowered into the deep fat fryer. Do not exceed the MAX marking on the frying basket q.
6) Carefully lower the frying basket q into the hot oil or fat.
7) Close the appliance lid.
NOTE ► The frying process can be monitored through the viewing window in the lid of the appliance. Solid cooking fats To prevent fat from spraying and the appliance from becoming too hot, please take the following precautions when using solid frying fat: ■ When using fresh fat, start by melting the blocks of fat slowly, under low heat, in a normal saucepan. Then carefully pour the molten fat into the deep fat fryer. Only when this has been done should you insert the plug into a mains power socket and switch the deep fat fryer on. ■ After use, store the deep fat fryer with the solidified fat at room temperature. ■ If the fat gets too cold, it could splatter out upon re-melting! To avoid this, pierce a few holes in the solidified fat with a wooden or plastic skewer. Ensure that you do not damage the frying container coating 2. ■ To melt the fat, plug the appliance into the mains power socket, set the on/off switch 8 to the “I” position and turn the temperature control 5 to 130˚C. The Power control lamp 7 lights up. ■ Wait until all of the fat has melted. The Ready control lamp 6 may come on and go out several times during this process. Do not set the desired frying temperature until all of the fat has melted.GB
37 ■ SFM 850 A2 After frying WARNING – RISK OF INJURY! ► Never touch the frying basket q directly after deep frying. It is extremely hot! Lift the frying basket q out of the deep fat fryer only by the handles 0!
1) When the fried food is ready, press the lid release button 9 so that the lid
2) Lift the frying basket q and hang it on the rim of the appliance so that
excess fat can drip off.
3) Turn the temperature control 5 to MIN.
4) To switch the appliance off, set the on/off switch 8 to the “O” position.
5) Pull the plug out of the power socket.
6) Once the fried food has dripped dry, lift the frying basket q carefully out
of the deep fat fryer.
7) Tip the fried food into a bowl or a sieve (lined with absorbent kitchen
paper!). If you do not use the deep fat fryer regularly, it is advisable to store the cooled oil in well-sealed bottles or other frying containers – preferably in the refrigerator or a similar cool storage location. Fill the bottles through a fine sieve in order to remove any food particles from the oil. Fondue You can use this deep fat fryer as a fondue pot. CAUTION – PROPERTY DAMAGE! ► Do not use the appliance to make chocolate or cheese fondues! Use only fat/oil or stock when preparing a fondue with this appliance.
1) Prepare the appliance as described in the section “Preparations”.

5) Set the temperature control 5 to the desired temperature level.
For a classic fondue with oil/fat: use the table in the section “Frying foods” as a guide depending on which type of food you want to fry. For fondue with stock: Set a temperature between 90 and 110°C (around 100°C); the stock should just simmer (not boil).
6) When the set temperature has been reached, open the lid.
7) Skewer some food onto the fondue skewers w and place the fondue
skewers w carefully into the frying contaisner 2. You can place one fondue skewer w in each indentation on the fondue ring e. Depending on the type and size, the skewered food will be ready in a few minutes.
8) Take out the fondue skewer w carefully and remove the food. You can then
skewer more food onto the fondue skewer w and lower it into the hot oil/ stock.
9) When you are finished with the fondue, turn the temperature control 5 to
Min, set the on/off switch 8 to the “O” position and pull the plug out of the mains power socket. Changing the cooking oil or fat Do not change the oil until it has completely cooled down. Solid fats must still be in a slightly liquid state so that they can be poured.
1) Press the lid release button 9 and remove the lid (see chapter “Cleaning
3) Hold the appliance by the side handles 3 and pour out the oil or fat via the
rear left corner, which has a pouring notch, into suitable containers such as bottles. Ideally, use a funnel to do this. NOTE The disposal of cooking oils and fats is regulated differently in every community or town. Disposal of such oils or fats in the normal household refuse is often prohibited. Make enquiries at your local community or town administration office about suitable disposal methods.
4) Thoroughly clean all parts of the deep fat fryer as described in the chapter
“Cleaning and care”.
5) Refill the deep fat fryer with fresh oil or fat as described in the chapter “Deep

SFM 850 A2 Tips Home-made chips ■ The potatoes you plan to fry should be in good condition and not germinating. ■ Use potato varieties that are suitable for frying, such as those that are “floury” or “waxy”. ■ After peeling, cut the potatoes according to the intended preparation (chips or wedges). ■ Soak the potatoes for about one hour prior to use. This will help remove part of the sugar content, which is one of the constituent products for the formation of acrylamide. ■ Carefully dry the potatoes. ■ Always fry home-made chips twice: – first for 8 - 12 minutes at 150°C then for 3 - 4 minutes at 170°C, depending on the desired degree of browning. ■ Deep-frozen chips are pre-cooked and thus only need to be fried once. Follow the instructions on the packaging. Deep-frozen foods Deep-frozen foodstuffs (-16°C to -18°C) cool the oil or fat to a considerable extent, because of this they do not sear fast enough and may therefore soak up too much oil or fat. To avoid this, proceed as follows: ■ Do not attempt to deep-fry large amounts all at once. Do not fill the frying basket q to more than the maximum fill level marked on the inside of the basket. ■ Heat the oil for at least 15 minutes before adding the frozen foods. ■ Adjust the temperature control 5 to the temperature specified in these oper- ating instructions or on the food’s packaging. ■ Preferably, allow the deep-frozen food to thaw at room temperature prior to deep-frying. Remove as much ice and water as possible before adding the food into the deep fat fryer. ■ Always add foods as slowly and carefully as possible into the deep fat fryer, as deep-frozen foods can cause the oil or fat to bubble violently and abruptly.GB
43 ■ SFM 850 A2 How to prevent unwanted aftertaste Some foodstuffs, especially fish, release fluids when being deep-fried. These fluids collect in the oil or fat and can impair the smell and taste of foods that are deep-fried in the same oil or fat afterwards. Proceed as follows to obtain neutral-tasting oil or fat: ■ Heat the fat or oil to 150°C and place two thin slices of bread or a couple of small sprigs of parsley into the frying basket q. ■ Lower the frying basket q into the fat and close the lid. ■ Wait until the oil or fat is no longer bubbling and remove the bread or parsley with a skimmer. The oil or fat now has a neutral taste once again. Healthy nutrition Nutrition experts recommend the use of vegetable oils and fats containing unsaturated fatty acids (e.g. linoleic acid). However, these oils and fats lose their beneficial properties faster than other oils and must therefore be replaced more frequently. Orient yourself on the following guidelines: ■ Replace the oil or fat regularly. If you use the deep fat fryer mainly to prepare chips and strain the oil or fat after every use, it can be used 10 to 12 times. ■ However, do not use the oil or fat for longer than six months. Always follow the instructions provided on the packaging. ■ As a general rule, oils and fats cannot be used so often if you mainly deep-fry protein-rich foods such as meat or fish. ■ Do not mix fresh oil with used oil. ■ Change the oil or fat if it foams on being heated, if it develops a strong taste or odour, if it becomes dark and/or if it develops a syrupy consistency.■ 44
