SLOW COOKING

  • During slow cooking, meat and vegetables retain more juice than in the case of traditional cooking.
    • You will achieve the best cooking result if you fill the cooking vessel at least half full.
  • Small quantities can also be prepared, but in this case it may be necessary to adjust the cooking time.
  • Leave enough space under the lid when cooking soup or vegetables.
  • When cooking vegetables and meat, put the vegetables in the pot first, then the meat and other ingredients.
    • Remember that frequently lifting the lid will increase the cooking time.
    • Always add warm liquid before cooking frozen food.
  • Due to the nature of slow cooking, the meat will not brown like it would if it were cooked in a pan or oven. It is not necessary to sear the meat or poultry before slow cooking, but you can do so if you prefer the meat that way.
  • Frying ground beef, bacon and sausage before slow cooking may be desirable if you want to remove excess fat from the meat. The meat should be placed in the inner cooking pot so that it does not touch the glass lid.
  • Lean meat such as chicken or pork tenderloin cooks faster than fibrous and fatty meat such as beef shoulder or pork shoulder. Cooking bone-in meat will increase the cooking time compared to boneless meat.
  • Cut the meat into smaller pieces if you are cooking it together with pre-cooked foods such as beans, fruit or vegetables (mushrooms, diced onions, eggplant or finely chopped vegetables).
  • Some foods such as carrots, potatoes and beets require longer cooking than meat, so cut them into smaller pieces before adding them to the meat. Make sure you place them on the underside of the inner cooking pot and pour the liquid over them.
    • You can achieve the fullest flavor during slow cooking by adding uncrushed herbs and spices.
  • Beans must be completely tender before they can be combined with sweet or sour foods.
  • When cooking slowly, do not forget that liquids do not form in it in the same way as is usual in classic cooking. Reduce the amount of liquid in a recipe that is not intended for slow cooking. Exceptions to this rule are soups and rice.
  • Remember that liquids can always be added later.
  • Do not add fresh dairy products (milk, sour cream or yogurt) until just before serving.

Rice, noodles and pasta are not recommended to cook for a long time. Cook them separately and add them to the pot until the last 30 minutes.

INSTRUCTIONS FOR CLEANING AND MAINTENANCE

  • Clean the appliance after each use and before storage, let the appliance cool down completely and unplug it before cleaning.
  • We recommend cleaning the appliance immediately after it cools down, before food residues dry out.
  • The cooking pot and the lid can be washed in the dishwasher, but in order to preserve the enamel layer for as long as possible, we recommend hand washing with a soft cloth or sponge soaked in warm soapy water.
  • Do not use rough cleaning cloths or sponges, cleaning agents or abrasives, as they can damage the enamel surface.
  • Clean the base of the appliance with a soft damp cloth and do not immerse it in water.
  • After washing the cast iron pot and lid, dry them thoroughly with a clean cloth or paper towel. The edges of the cast iron pot and the lid are not treated with a ceramic non-stick layer to prevent this layer from chipping off. Because cast iron is a porous material, it is susceptible to corrosion if not properly treated or kept dry after use. When cast iron is exposed to oxygen and moisture, rust occurs. This can happen if the cast iron pot and lid are not thoroughly dried after washing or if they are stored in a humid environment. Acidic ingredients such as tomatoes or citrus fruits can also react with cast iron and cause rust.
  • Another prevention against possible rust on the edges of the cast iron pot and the lid is to oil the edges of the pot and the lid. Place the cast iron pot with the lid in the oven at 140°C for 10 minutes. When the pot is hot, remove it and apply a thin, even layer of canola oil to the top of the pot and the lid. Wipe off any excess oil. Put the cast iron pot with the lid back in the oven and bake for one hour at 200°C. Turn off the oven, do not open the oven door and let the pot cool completely, preferably overnight. Repeat as needed, but not every time you cook.
