Foods suitable for slow cooking and their preparation
Most foods are suitable for slow cooking, but there are a few general principles to follow.
- Cut the root vegetables into small pieces, since the their cooking takes longer than the meat. It is advisable to fry the chopped root vegetables briefly (2–3 minutes) prior to slow cooking. Make sure the root vegetables are always in the bottom of the pot and all ingredients are submerged.
- Remove any excess fat from the meat before cooking, as the slow cooking method does not allow browning of the fat.
- If you are adapting a recipe for conventional cooking, you may need to reduce the amount of water used. The water does not evaporate from the slow cooker as it does during normal cooking.
- Never leave uncooked food inside the pot at room temperature.
- Do not use a slow cooker to heat food.
- Raw red beans must be soaked and cooked for at least ten minutes to remove toxins before being using them again.
- To make sure that the meat is cooked properly, use a meat temperature thermometer.
- The true ceramic material is fired at high temperatures, so the ceramic vessel may have slight surface defects, the glass lid may slightly wobble due to this imperfection. Low temperature cooking does not create steam, which reduces heat loss. After some time of use, a visible change in appearance may occur on the outside of the appliance due to normal wear and tear.
- Do not expose the ceramic vessel to sudden changes in temperature. Adding cold water to a very hot pot could cause it to break.
• DO NOT SWITCH ON SLOW COOKER IF IT'S EMPTY OR WITHOUT THE INSERTED CERAMIC VESSEL!
Tips for slow cooking
- For best results, a slow cooker should be at least half full.
- In slow cooking, the food remains wonderfully juicy. If you need to reduce the amount of water in the pot, remove the lid and turn on HIGH for about 30–45 minutes.
- The lid is without sealing. Do not remove the lid unnecessarily to avoid heat loss. You should extend the cooking time by 10 minutes for each time that you open the lid. If you cook soup, leave a boiling space of 5 cm below the top of the vessel.
- Many recipes require all-day cooking. If you don't have time to prepare your meal in the morning, prepare everything in the evening in advance and keep it covered in the refrigerator. In the morning put the prepared food in the slow cooker and add water or broth. Set the required cooking time and the temperature.
- Most meats and vegetables require cooking for 8–10 hours at low or 4–6 hours at high temperature. Some ingredients are not suitable for slow cooking. Pasta, seafood, milk or cream should be added only at the
end of cooking. Many things – the amount of water or fat, the initial temperature of the food, and the size of the individual parts of the food that are inserted can affect the optimum cooking time.
- Foods cut into small pieces cook faster. Gradually, using "trial and error" you will gain the necessary experience to fully utilize the slow cooker.
- The cooking of vegetables usually takes longer than the meat, put the vegetables first in the bottom of the pot.
• After you finish cooking, leave the lid on the pot and turn it off. - All foods should be submerged in broth or sauce.
- Pre-fried meat and onions will remain more juicy and it reduces the amount of fat in the food. This part is not necessary in case of lack of time, but it improves the taste.
- When cooking whole meat, poultry or ham, the shape and size of the meat is important. The meat should reach at maximum up to 2/3 of the pot and fully submerged in water or broth. If necessary, cut the meat suitably into 2 parts. The total weight of the meat should not exceed the maximum recommended amount.
CLEANING AND MAINTENANCE
Always turn off and unplug the slow cooker before cleaning or storing it. Make sure the slow cooker is completely cooled before cleaning.
- Do not wash the glass lid or the ceramic container in the dishwasher, as they may be damaged. Wash the non-stick basket in warm water with detergent, rinse and dry.
- Do not leave the vessel in water for long periods of time. The water inside the vessel can only remain for the time necessary to remove the dirt.
- You can wipe the outer parts of the slow cooker with a damp cloth and dry it. Do not use aggressive and abrasive cleaners or scourers to clean any part of the cooker, as this may damage the surface.
- Do not immerse the base in water or pour liquid into the body of the cooker.
