Installation
Worktop
Choose a clean work surface on which to place the appliance. A minimum distance of 5 cm should be kept between this and non-heat-resistant surfaces. For optimum user comfort, the appliance must be placed between 85 and 95 cm off the ground.
If this appliance must be placed in close proximity to a wall, partition, kitchen furniture, decorative borders, etc., they should be of non-flammable material. If not, they should be covered by appropriate heat insulating, non-combustible material, with particular attention paid to fire prevention regulations.
Electrical connection
This appliance must be connected to a single-phase 220-240 volt network, a two-pin socket + an earth contact of 16 amps. It is shipped with a power cable type HO7RNF with 3 conductors (phase + neutral + earth) of 1.5mm^2 section.
Use
The film on the stainless steel protects it from scratches. It is vital to remove it before first use.
Before first use, clean the plate with soapy water and a sponge.
To start the appliance, switch it on and set the thermostat to the desired temperature based on the type of foods that you will be keeping warm.
To maintain a more consistent temperature, we recommend that you cover any containers with a lid or dome.
Use
This appliance keeps food warm. It may come into contact with dry foodstuffs only.
There are several possible uses (non-exhaustive list):
- Keeping sauces and sauce dishes warm in Gastronorm pans fitted with a lid.
- Keeping foods in a cardboard container warm, ideally under a dome to preserve all the flavours and tenderness of the food.
- Keeping foods (such as quiches and tarts) warm directly on the plate lined with a sheet of parchment paper for easy cleaning.
- Low-temperature cooking.
- Recipe idea for melting 200 g of chocolate:
Fill a large saucepan with water (do not overfill to prevent spillage when inserting the second saucepan). Bring the water to a boil, then place the saucepan on the warming plate. Insert a smaller saucepan or bowl into the large saucepan of water. Add the chocolate in pieces and heat to between 50 °C and 55 °C, then remove from the plate and stir the chocolate until it has cooled to 27 °C. Do not stir vigorously as excessive stirring will introduce air into the chocolate and cause unwanted bubbles or an uneven texture. Return the container to the large saucepan and heat the chocolate to 31 °C. Stir occasionally until liquid.
- Cooking in a bain-marie.
- Recipe idea for hollandaise sauce:
Ingredients: 2 tablespoons cold water – 250 g unsalted butter: room temperature or chilled in small cubes – 4 egg yolks – 1 tablespoon lemon juice – salt – pepper
In a bowl, whisk the egg yolks and water until light in texture. Place the container into a bain-marie (water simmering between 60 °C and 70 °C) on the warming plate. Whisk the egg yolks again until the texture thickens slightly (stirring in a figure of eight). Take out of the bain-marie, then gradually incorporate the warm butter, whisking vigorously (stirring in a circular motion). Add the lemon juice, salt and pepper.
Advice
- In order to avoid making deep scratches on the plate, do not cut your food directly on it.
- Do not leave kitchen utensils on the plate, such as cutlery, wooden spoons, plastic utensils,
etc.
