Removable Fettuccine/ Spaghetti Cutter Attachment

Before first use: Pass a small quantity of pasta dough through Smooth Rollers and both cutting rollers. This will give you a feel for how your Pasta Machine operates, and will clean any debris from Rollers. Pasta Machine and Roller Attachment may have some excess oil on it from the factory. This is to protect the machine during shipping. This oil must be removed before using the machine!



Pasta Machine Assembly
- Position Pasta Machine Base on a table or countertop, near edge of work surface.
- Slide C-Clamp into C-Clamp Port in side of Pasta Machine Base. The threaded screw portion of C-Clamp will be underneath the table or countertop.
- Tighten thumbscrew on C-Clamp to secure Pasta Machine to table or countertop.
- Align Clips of Cutter Attachment with Clips on Pasta Machine. Slide Cutter Attachment onto Pasta Machine until fully seated.
- Align notches on Handle with notches in Drive Slot of choice. Slide Handle into Drive Slot of Roller or Cutter Attachment to be used.
NOTE: Ensure that when Handle turns, it passes below edge of work surface and turns freely. It should not hit work surface. If the Handle comes in contact with work surface, loosen C-Clamp and reposition Pasta Machine to allow more space.





How to Roll and Cut Dough
Prepare dough recipe.
- Follow "Pasta Machine Assembly" instructions. Align notches on Handle with notches in Roller Drive Slot. Slide Handle into Roller Drive Slot.

Locate Setting Knob on left side of Pasta Machine. Setting Knob is numbered 1-7. Number 1 setting is narrowest setting for Sheet Rollers; number 7 is widest setting for Sheet Rollers. To adjust Setting Knob, pull out on Knob and turn it to desired setting. As you turn Setting Knob you will be able to see Sheet Rollers moving closer together or further apart.

Lightly flour work surface.
- Adjust Setting Knob to 7. Turn Handle clockwise while feeding a piece of dough into Rollers. Once dough has gone through Rollers, lightly flour it, fold it in half and run it through Rollers again. Repeat this process several times: lightly flour, fold in half, run through Rollers.
- As dough exits Rollers, it will get longer with each pass. Lay strip of dough out flat on your work space.
- Now adjust Setting Knob to 6. Run dough through Rollers. Repeat this process several times, each time adjusting Setting Knob to next setting until dough reaches desired thickness. If sheet gets too long to manage, simply cut it with a knife.
- After reaching desired thickness, leave sheet to rest for about 10 minutes so that it will dry slightly and be hard enough for cutting, without sticking to cutting rollers.



How to Roll and Cut Dough (cont.)
- Follow "Pasta Machine Assembly" instructions. Align notches on Handle with notches in Roller Drive Slot of choice. Slide Handle into Cutter Drive Slot.
- Cut a piece of rolled out dough, long enough to be easily handled.
- Lightly flour your work space and pasta sheet. See "Dough Making Tips" for more instructions on making dough and pasta.
- While slowly turning Handle clockwise, carefully start dough into Cutter Attachment.
- As cut noodles exit machine from underneath, continue to carefully guide dough into Pasta Machine while slowly turning Handle.
- Lay freshly cut noodles out on a lightly floured surface or on a drying rack to dry before cooking.



Dough Making Tips
- When finished kneading dough, it should feel soft and moist but not sticky. It should not stick to your fingers.
- Cover dough with a damp paper towel or wrap in plastic wrap to keep dough from drying out. Let dough rest for 15 to 30 minutes to fully absorb liquid.
- If dough recipe calls for water or other liquid, add it in small amounts and mix thoroughly before adding remaining liquid to prevent wet dough.
Care and Cleaning
- Using a clean dry cloth, wipe all surfaces clean. Do not use water! Never wash Pasta Machine or Cutter Attachment with water, place it in water, or wash in dishwasher. Wipe clean with a dry cloth.
- To clean inner surfaces of Pasta Machine and Cutter Attachment, pass a piece of dough through Rollers several times, making sure dough touches all surfaces, especially sides where machine oil can accumulate. Discard this dough.
- Use a dry pastry brush to remove any flour or bits of dough from hard to reach places.
NOTE: Before first use, make sure to clean the inner and outer surfaces of the Pasta Machine. Lightly sprinkle flour on Rollers. Using a dry brush, work flour into edges of Pasta Machine and into Cutter Attachment. Brush all flour away and wipe machine clean again with a clean, dry cloth.
- Small amounts of flour can be added if dough feels too moist. Make sure to thoroughly mix before adding more.
- Always sprinkle Rollers with flour to keep dough from sticking. This will also help the dough to separate when cutting fettuccine or spaghetti.
- The perfect dough for rolling pasta should feel soft and moist, but not stick to your fingers.
Recipe
Basic Egg Pasta
Ingredients:
3 large eggs
2 cups (250 grams) all-purpose flour
Directions:
- Place eggs and flour in bowl of Stand Mixer. Using Dough Hook Attachment and speed 1, mix until a shaggy dough is formed.
- Increase speed to speed 2. Knead until dough is smooth and elastic, about 5 minutes.
- Remove dough to a floured cutting board. Cover with plastic wrap and let rest 15 minutes.
- Set up Pasta Machine, following "Pasta Machine Assembly" instructions on page 4.
- Cut the dough into 3 equal pieces, flour lightly, and cover with plastic wrap. Working with one piece of dough at a time, while keeping other pieces covered, shape it into a rectangle about 5 × 3 inches (12.7 × 7.6 ~cm) . Turn the Setting Knob of the Pasta Machine to Setting 7. Pass the pasta rectangle through the rollers with one of the short sides first. Fold the dough in thirds and pass the same piece of dough through the rollers, short side first, a second time. Turn Setting Knob to Setting 6. Follow same process with the remaining dough pieces. Flour the dough pieces very lightly as you work—just enough to keep them from sticking to the rollers.
Makes: 1 pound (454 grams)
- Continue rolling the pieces of dough in the same order (so they have a chance to rest a little between rollings), decreasing the thickness by one setting each time, until all the pieces of dough have been passed through the thinnest setting desired. Do not pull the dough sheets through the Roller as they get longer, but rather support them lightly from underneath as they emerge from the rollers; pulling dough sheets will stretch them out of shape. Keep the pieces of dough that are not being rolled covered with plastic wrap or a slightly damp towel.
- When all the pasta has been rolled into sheets, completely cover them with lightly floured towels and let them rest about 30 minutes before cutting.
- Insert the Removable Fettuccine/Spaghetti Cutter Attachment. Pass each pasta sheet through the Fettuccine/Spaghetti Attachment. Flour lightly to keep pasta from sticking.
- Cook fresh pasta in boiling water 3 to 4 minutes.
Limited Warranty
This warranty applies to products purchased and used in the U.S. and Canada. This is the only express warranty for this product and is in lieu of any other warranty or condition.
This product is warranted to be free from defects in material and workmanship for a period of five (5) years from the date of original purchase in Canada and one (1) year from the date of original purchase in the U.S. During this period, your exclusive remedy is replacement of this product or any component found to be defective, at our option; however, you are responsible for all costs associated with our returning a product or component under this warranty to you. If the product or component is unavailable, we will replace with a similar one of equal or greater value.
This warranty does not cover glass, filters, wear from normal use, use not in conformity with the printed directions, or damage to the product resulting from accident, alteration, abuse, or misuse. This warranty extends only to the original consumer purchaser or gift recipient. Keep the original sales receipt, as proof of purchase is required to make a warranty claim. This warranty is void if the product is used for other than single-family household use.

Every implied warranty, including any statutory warranty or condition of merchantability or fitness for a particular purpose, is disclaimed except to the extent prohibited by law, in which case such warranty or condition is limited to the duration of this written warranty. This warranty gives you specific legal rights. You may have other legal rights that vary depending on where you live. Some states or provinces do not allow limitations on implied warranties or special, incidental, or consequential damages, so the foregoing limitations may not apply to you.
