Operating the pressure cooker
Inserting the sealing ring
Place the sealing ring into the lid without twisting and without gaps. The sealing ring must lie flat under the inward bent edge segments of the stainless steel lid.
Closing the pressure cooker (image A1)
◆ Place the lid with inserted sealing ring level onto the pot.
◆press the lid release button (2) downwards. The retaining clips lock the pot (6).
NOTE
Make sure that you do not jam your fingers.
Opening the pressure cooker (images A2, B1, B2)
Pull the lid release button (2) upwards to unlock the lid (A2).
Lift off the lid (1) of the pressure cooker.
NOTE
The lid can only be unlocked when the pressure cooker has been completely depressurised.
This is recognised by the position of the red cap of the safety valve:
Red cap is down (Fig. B1): pressure cooker is not under pressure and can be opened.
Red cap is up (Fig. B2): the pressure cooker is under pressure and CAN-NOT be opened.
Checking the valves (images C1, C2)
Before using each time, check that the safety valve can move freely by pressing against it from below (C1). It must be possible to move it up easily. After releasing, the valve must fall back into the lower position (C2).
Before each use, also check the function of the regulating valve. Move the rotary knob to each position and back for this purpose. Make sure that the hole in the nut is always clean and exposed. Clean the valve as described in the section Cleaning and care (page 34).
Cooking with the pressure cooker
Preparation
Put the ingredients into the pressure cooker. Pay attention to the minimum and maximum filling quantities.
Check that the sealing ring is correctly seated as described in section Inserting the sealing ring (p. 27).
Close the lid of the pressure cooker as described in the section Closing the pressure cooker (S. 27).
Pay attention to the filling quantity
You will find marks (16) on the inside of the pressure cooker which indicate the filling quantities in litres. The minimum and maximum filling levels are also specified.
Minimum filling quantity: ■
a minimum amount of liquid is required to generate steam irrespective of whether you cook with or without the steam insert. The minimum filling quantity is 1 litre.
■ Maximum filling quantity:
the pressure cooker may only be filled to a maximum of 2/3 of its entire filling capacity. In the case of the 6L pot, this would be roughly 4 litres. When using as conventional pot, it is not necessary to pay attention to the MAX mark.
Setting the regulating valve (image D1)
The cooking level can be set with the regulating valve. The regulating valve has 4 setting options:
- for cooking without pressure or reducing pressure during cooking:
I with low pressure (approx. 0.7 bar): for cooking vegetables (e.g., broccoli, cauliflower, peas and beans), fish, crustaceans and food that swells or produces foam (such as peas, beans or meat soups)
II with medium pressure (approx. 0.85 bar): for cooking heavy vegetables (e.g., kohlrabi, carrots and pumpkins) as well as chicken
III with high pressure (approx. 1.0 ■ bar): for cooking meat, soup, rice and potatoes
Using the steam insert
The steam insert can be used to steam delicate foods such as fish or vegetables. The food is then not immersed in the water and is gently cooked by the rising steam.
Fill the pot with at least 1 litre of water insert the wire stand supplied into the pot.
Put the steam insert with the food ◆ onto the wire stand.
Heating up
After filling, close and set the the cooking level (regulating valve to level I-III), proceed as follows:
Put the pressure cooker onto a suitable hob. The hob should not be larger than the pot base.
Set the regulating valve to the desired cooking level. Pay attention to our recommendations in the section Notes on cooking times (page 31).
Switch the hob to maximum power. ◆ At the beginning of the cooking process, steam will escape from the safety valve. This is normal since the pressure is not yet high enough to close the safety valve.
As soon as the pressure has been reached, the red cap of the safety valve raises – this is clearly recognisable as shown in image B2. At the same time, the opening mechanism is blocked to stop the pressure cooker from being opened.
When the desired pressure has been reached (level I-III of the regulator valve), steam escapes from the regulator valve. At this point, the values listed in the section Notes on cooking times apply (page 31).
Gradually decrease the heat from the cooker until no more steam escapes.
When no more steam escapes from the regulating valve, gradually increase the heat from the cooker. When steam appears again, leave the heat at that level.
Depressurising
After the cooking time has elapsed, the pressure in the pressure cooker must be released before you can open it.
NOTE
The pressure cooker can only be ▶ opened when the pressure has been completely released. You can recognise this when the red cap of the safety valve is at the bottom. (see image B1).
There are two ways of releasing the pressure:
Slow method:
Switch off the heat and allow the pot to cool down slowly. The red cap of the safety valve sinks as it cools down – clearly visible in the inspection window.
NOTE
Be aware that the cool-down time is part of the cooking time.
Fast method:
To achieve faster cooling and depressurising of the pressure cooker, hold the pot under cold running water in the sink. Gradually reduce the cooking setting on the regulating valve, until it is at 🎨 (image E1).

WARNING
Hot steam escapes during depressurising. Keep a sufficient distance.
Tips on energy-saving cooking
Cook vegetables and potatoes with the minimum amount of water. This enables you save up to 10 percent energy.
Match the pot size to the size of the hotplate surface. The pressure cooker should not be smaller than the hot-plate surface, otherwise 10 to 15 percent more energy will be consumed than necessary.
Switch to a lower heat setting as soon as cooking begins.
Make use of the residual heat of the hotplate for simmering and switch off the hotplate a few minutes before the end of the cooking time.
