Installation

Set the crêpe maker on a horizontal, non-flammable surface (e.g. tiles, firebrick, stainless steel, etc.) between 85 and 95 cm from the ground for a good working position.

This appliance works with the gas types indicated in the table in the "Specifications" paragraph. It must be installed and connected in accordance with the applicable installation rules (please refer to the Connection section below). Check the crêpe maker setting conditions, which are provided on the information plate affixed to the bottom plate.

Use one of the commercial butane or propane cylinders described in the table below. Take care to use a suitable safety pressure regulator that complies with the European standard.

Connection

The appliance is connected to the supply by a metal hose according to the standard EN 14800 (with no useful life limit and with crimped nuts), or by a reinforced rubber hose according to the standard NF D 36-112 (with a 10-year useful life and crimped nuts), in accordance with the applicable standards and regulations.

The hose must not be subjected to traction or torsion; it must be kept away from all of the appliance's hot walls; and its entire length must be visible. Check that the hose is in good condition and replace it if it appears cracked or damaged.

The hose length must be suited to the use and must never exceed 1.5 m. Check that all connections are leak-tight using soapy water and never use a flame to detect a gas leak.

Ignition

  1. The appliance is ready for operation. Check the gas inlet is open.
  2. For the first ignition after installation, depress the dial, turn it to position 8, and hold it down for 5 seconds to expel the air between the gas line and the burner. Then release the dial.
  3. Introduce a flame between the plate and the frame, above one of the burner branches (a long lighter or a long match can be used).
  4. Depress the dial and set to position 8 to light the burner fully. If the flame does not ignite, reset the dial to the zero/closed position. Wait a few seconds before repeating step 3.
  5. For the CGBIN5 crêpe maker, hold the dial down for a few seconds in order to engage the thermocouple safety.
  6. When the burner is fully lit, release the dial and let the burner heat up for 3 to 4 minutes; then set the dial to position 1.

The crepe maker is now set and ready to use.

Seasoning the cooking plates

Krampouz machined cast iron plates need to be seasoned before first use.

Caution: this operation (duration: 1 hour to 1 hour 30 minutes) is required for new plates. Use edible sunflower seed oil that contains no other ingredients.

Greasing and wiping the plate

When making crêpes, the pad is recommended for greasing and wiping residue on the plate.

Necessary material:

Here are the recommended accessories for making perfect pancakes :

  • A spreader
  • ATE1 pad for seasoning, greasing and wiping
  • A brush and water tray for cleaning the spreader
  • A wooden or stainless steel spatula
  • A container for the batter
  • A measuring ladle

Wash the accessories before first use: use clean water for wooden accessories; use soapy water for other accessories (avoid using chlorine on stainless steel). To ensure that the spreader (rozell) is safe for food contact, no glue is used in its construction. To fix the handle to the spreader, assemble both parts and immerse them in water for a few minutes. This will allow the wood to swell and join the parts together.

Recipes

Buckwheat Pancakes

To make 15 crêpes - Add 250 g of buckwheat flour to a bowl with 1 tablespoon of wheat flour, 1 teaspoon coarse salt, 1 egg and 12 cl of water. Beat into a compact ball. Add 12 cl of semi-skimmed milk, stir then beat for about 5 mins until you obtain a perfectly smooth batter. Gradually add 36 cl of milk.

Wheat flour Pancakes

To make 20 crêpes - Add 1 tablespoon of buckwheat flour to a bowl together with 100-125 g of sugar (to taste), 1 level teaspoon of coarse salt, 2 eggs, 25 g of melted butter or 1 tablespoon of oil, 1 sachet of vanilla sugar or other flavours, and 10 cl of water. Beat all the ingredients together, gradually adding 250 g of wheat flour and 12 cl of semi-skimmed milk until you have a smooth batter with no lumps remaining. Then stir in 38 cl of milk.

Cooking

  • It is recommended to use sunflower oil to grease the griddle.
  • Cooking temperature for crêpes is between 200°C/230°C approx.
    ■ Before spreading the first crêpe, or before each crêpe making session, lightly grease the griddle.
  • To make a crepe, poor a ladle of batter on the hot griddle. Spread the batter with the wood spreader Krampouz.
  • Whilst cooking, simply wipe the griddle to remove cooking residue.
  • If the appliance remains heated for a long time without being used, ensure you lightly grease the griddle before re-use.

Practical advice

  • If the batter runs on the griddle or sticks to the spreader: do not grease. Badly made batter can have the same effect. Remove excess oil
    ■ The batter only bubbles: it is too runny or badly-made or else the griddle is too hot.
    ■ If the griddle only sticks: lightly grease with a little cooking oil.
    ■ If the batter bubbles and sticks to the griddle:

√ You have not seasoned enough: continue the seasoning operation
√ The griddle is charred: scrape and redo the seasoning operation
√ The griddle is charred or the seasoning unsticks: scrape the griddle with an abrasive stone and start another seasoning.

■ If you add the fillings on the griddle on which you spread the batter:

√ Avoid certain fillings which can spoil the seasoning (e.g. lemon, tomato).
√ Wipe the griddle before spreading the next crêpe.

Do not polish the griddles as the seasoning operation will not maintain its good surface.

Maintenance and Cleaning

Before cleaning your appliance, unplug it and let the griddle cool down.

Read the general rules applicable to electrical equipment before any action on the appliance.

In the event of a failure, inspection and repairs must be performed by an approved technician.

Maintenance and cleaning instructions

Do not clean the appliance under flowing water.

Do not immerse the appliance.

Do not use chlorinated products to clean stainless steel.

The frame

Clean the frame with a soft sponge dipped in warm water and liquid detergent unchlorinated.

Never use abrasive products or metallic brushes.

The griddle

After use, simply wipe the griddle. Do not wash it.

CAREFUL: never suddenly cool plates.

Preparing crepes requires a contribution of fat on the griddle.

- Lubricating

- Fat in the batter according to recipes

These fats will gradually thicken the initial seasoning. Avoid seasoning that does become too thick because:

- It acts as an insulator and interferes with the cooking.

- It is flaking off or giving the impression that the metal disintegrates.

Therefore the strip regularly uses the abrasive stone APA1 Krampouz.

If the seasoning is too thick default regular stripping, it is possible stripping plate by blasting (contact our customer service).

After these operations must be redone a seasoning as for a new product.

Don't worry about scratching the metal. Above all, do not use a portable electrical appliance to try to strip the crepe maker.

Burner and Venturi

Periodically check the condition of the flame holes on the burners (page 3-4 fig. 1 et 5) and the venturi tube opening (page 3-4 fig.3, 7 et 9). If they are clogged, scrub the branches with a hard-bristle brush and clean the venturi before using the appliance again; thoroughly wipe the burner and the bottom of the appliance.
