To get the best out of your new appliance, please read this user guide carefully before using it for the first time. Take particular note of the safety precautions. We also recommend that you keep the instructions for future reference, so that you can remind yourself of the functions of your appliance.

GENERAL
• Incorrect use of this appliance may cause personal injury and damage.
- Use for its intended purpose only. The manufacturer is not responsible for any injury or damage resulting from incorrect use or handling (see also Guarantee Terms).
- Do not use outdoors
- For domestic use only. Not for outdoor or commercial use. For connection to 220-240V, 50/60Hz only.
- Never submerge the appliance, cord or plug in water, and no water must be allowed to enter the motor section.
- Never touch the appliance, cord or plug with wet or damp hands.
- Do not expose to direct sunlight, high temperatures, humidity, dust or corrosive substances.
- Keep the appliance under constant supervision while in use. Keep an eye on children.
- Use only accessories supplied with the appliance or those recommended by the manufacturer.

USE
- Ensure that the attachment is firmly locked in position before putting the unit into operation
- Avoid contact with moving parts. Keep hands, hair, clothing, spatulas and other utensils away from accessories during operation to reduce the risk of personal injury and / or damage to the appliance.
- Never leave the appliance switched on unattended.
- Never touch the accessories with your hands, spatulas or spoons when the appliance is connected.
- Do not use for very warm foods.
- Do not run continuously for more than 6 minutes at a time.
- Max operation duration under high speed per time cannot exceed 6 minutes, and only wait until the unit is cooled to room temperature before performing next operation cycles.
- Cleaning and maintenance can be done by children over 8 years old but under adult supervision
CABLE AND PLUG
- Do not let the cord hang over the counter.
- Be careful not to pull or trip over the power cord. Keep the cord away from heat sources, hot objects or open flames.
- Disconnect the cord from the mains before cleaning and when not in use. To disconnect the cable from the mains, do not pull the cable but grasp the plug.
• Make sure the cable is fully extended.
- The cable must not be twisted or wrapped around the appliance.
- Check regularly that the cable or plug are not damaged and that the product has not been dropped: in this case, do not use it.
- If the product, cable or plug is damaged, have it checked by an authorized center. Do not attempt the repair by yourself. Contact your dealer for repair if under warranty.
- Unauthorized repairs or modifications will void the warranty.
BEFORE FIRST USE
Before first use, or after prolonged non-use, wash all parts that come into contact with food.

- Place the bowl in its housing and rotate it until it locks into place.
- To raise the bracket, press the release button (2). The bracket will now move upward.
- Mount the desired accessory by inserting the upper part into the accessory attachment shaft and lock it.
- Introduce the ingredients into the bowl.
Do not overfill the bowl: the maximum quantity of ingredients is 1.2 kg. - Lower the bracket using the release button (2).

Insert the power plug into a properly installed 220-240V \~ 50 / 60Hz power outlet.

Turn on the appliance using the speed adjustment knob on a speed between 1 and 6 (corresponding to the mixture).

For pulse operation (kneading in short intervals), turn the switch to the "PULSE" position. The switch must be held in this position for the desired interval duration. When the switch is released, it automatically returns to the "0" position.
Speed adjustment and use of the hook for no more than 1.2 kg of mix

NOTE:
Run Time: With heavy mixes, do not run the machine more than 6 minutes, then let it cool for another fifteen minutes.

After kneading / mixing, as soon as the dough forms a ball, turn the speed knob (3) back to the "0" position. Then remove the power plug.

Press the release button (3) and the boom will rise.
- The dough can now be released with the help of a spatula and removed from the bowl.
- The bowl can now be removed.
- Clean the parts as described in "Cleaning and Maintenance".
RECIPES
Sponge cake mix (basic recipe), speed 1-4
Ingredients
200 g of soft butter or margarine, 200 g of sugar, 1 sachet of vanilla sugar, 1 pinch of salt, 4 eggs, 400 g of wheat flour, 1 sachet of baking powder, approx. 1/8 liter of milk.
Preparation
Add the flour and other ingredients to the container, mix with the whisk for 30 seconds at speed 1, then for about 3 minutes at speed 2. Grease a baking tray or cover with baking paper. Add the mixture and bake. Before the cake is taken out of the oven, check that it is ready by piercing the center of the cake with a toothpick. If the mixture does not stick, the cake is baked. Place the cake on a wire rack and allow to cool.
Traditional oven
Shelf height: 2 (halfway)
Temperature: electric oven: top and bottom heat of 175-200 °C, gas oven level 2-3
Cooking time: 50-60 minutes
Depending on your taste, this recipe can be modified, for example with 100 g of raisins or 100 g of nuts or 100 g of grated chocolate. The possibilities are endless.
Flaxseed buns, speed 1-2
Ingredients
500-550 g of wheat flour, 50 g of flax seeds, 3/8 liters of water, 1 cube of yeast (40 g), 100 g of low-fat curd, well drained, 1 teaspoon of salt. For the coating: 2 tablespoons of water.
Preparation
Soak the flax seeds in 1/8 liter of warm water. Introduce the remaining lukewarm water (1/4 liter) into the container, crumble the yeast, add the curd and mix with the dough hook at speed 2. The yeast must be
completely dissolved. Put the flour with the soaked flax seeds and salt in the container. Knead thoroughly on speed 1, then switch to speed 3 and continue kneading for 3-5 minutes. Cover the mixture and leave to rise in a warm place for 45-60 minutes. Knead well again, remove from the bowl and form sixteen loaves. Cover the pan with wet parchment paper. Place the loaves in the pan and leave to rise for 15 minutes. Sprinkle with warm water and put in the oven.
Traditional oven
Shelf height: 2 (halfway)
Heating: electric oven: top and bottom heat 200-220 °C (preheated for 5 minutes), gas oven level 2-3
Cooking time: 30-40 minutes
Chocolate cream, speed 5-6
Ingredients
200 ml of sweet cream, 150 g of semi-bitter chocolate, 3 eggs, 50-60 g of sugar, 1 pinch of salt, 1 sachet of vanilla sugar, 1 tablespoon of cognac or rum, chocolate flakes.
Preparation
Whip the cream in the container with the whisk until solid. Remove it from the bowl and put it in a place to cool. Melt the chocolate according to the instructions on the package or in the microwave at 600W for 3 minutes. In the meantime, whisk the eggs, sugar, vanilla sugar, cognac or rum and salt with the whisk on speed 2 until frothy. Add the melted chocolate and mix evenly on speed 5-6. Leave a little cream for decoration. Add the remaining cream to the creamy mixture and mix briefly using the PULSE function. Decorate the chocolate cream and serve well cooled.
Pizza dough, speed 1-4
Ingredients
400 g of flour 00, 250 ml of warm water, 1/2 teaspoon of sugar, 1 active dry yeast (about 2-1 / 2 teaspoons), 1-1 / 2 teaspoons of olive oil and 1 teaspoon of salt
Preparation
Put the flour in the container. Mix the remaining ingredients in a bowl or jug. Run the mixer at speed 1-2 and gradually add the liquid. As the ingredients blend in and the dough ball becomes more formed, increase the speed to 3-4. Knead for a couple of minutes at this speed, until the dough is smooth. Remove from the bowl and divide into 2-4 pieces. Roll the pizza bases (circles or rectangles) on a floured surface, then lay them on a baking sheet or pizza pan. Spread the pizza bases with the tomato sauce and add the toppings - mushrooms, ham, olives, dried tomatoes, spinach, artichokes, etc. Garnish with mozzarella and a drizzle of olive oil.
Traditional oven
Bake in a preheated oven at 200 °C or a gas oven on level 6 for 15-20 minutes, until the toppings are bubbly and golden.
Basic white bread, speed 3-6
Ingredients
600 g of strong white bread flour, 1 sachet of active dry yeast (about 2½ teaspoons), 345 ml of warm water, 1 tablespoon of sunflower oil or butter, 1 teaspoon of sugar, 2 teaspoons of salt.
Preparation
Use the instructions to knead the pizza dough, then place the dough in a bowl, cover and leave in a warm place until doubled in size (30-40 minutes). Remove the paste and press to remove the air. Lightly knead on a floured pastry board, form a loaf or put it in a baking tray, cover and leave to rise in a warm place for another 30 minutes.
Traditional oven
Bake in an oven preheated to 200 ^ gas oven on level 6 for 25-30 minutes, until golden brown.
Ingredients
3 eggs, 75 g of granulated sugar, 300 ml of cream, 2 tablespoons of instant coffee powder, 300 ml of liquid cream, 2½ tablespoons of brandy.
Preparation
Add the sugar and eggs to the bowl and work on speed 6 until a homogeneous consistency is obtained. In a saucepan, bring the cream and coffee to the boil and mix in the egg and sugar mixture. Place in a heat resistant bowl over a pan filled with water and cook gently, stirring well, until thick enough to coat the back of a spoon. Strain into a bowl and allow to cool. Whip the double cream on speed 6 until soft peaks form, then incorporate it into the cold egg and sugar mixture, with the brandy. Pour into a container, cover and freeze for 2½-3 hours, until partially frozen. Remove, mix well and then freeze again, until the desired consistency is obtained.
Meringues, speed 5-6
Ingredients
4 egg whites, 100 g of granulated sugar, 100 g of powdered sugar
Preparation
Place the egg whites in the bowl and work on speed 6 until they are firm enough. Add half of the sugar and blend again until you get a homogeneous mixture that will form the classic "bird's beak" on the whips. Remove the container and lightly incorporate the remaining sugar with a metal spoon. Transfer everything to a pastry bag with a 15 mm smooth nozzle. Line a baking sheet with parchment paper and dress the meringues which must have a diameter of about 5-6 cm. Sprinkle with the remaining sugar and place on the lowest shelf of a cold oven (120 °C) or on a gas level 12 for 1 hour and a half. Cool on a grill. Complete with berries, chocolate and sweetened cream.
CLEANING AND MAINTENANCE
When cleaning, pay attention to the following points:
- Remove the plug from the socket and wait for the product to cool. Do not immerse the engine in water.
- Clean the motor section with a damp cloth. Add detergent if it is very dirty.
- Clean the accessories under running water. The accessories are not suitable for cleaning in the dishwasher. If exposed to heat or caustic cleaners, they may deform or discolour.
- The lid and parts that have come into contact with food can be cleaned with dish soap and water.
- Do not use steel wool, solvents or abrasives to clean plastic parts.
- Make sure the appliance is clean and dry before storing it.
- Do not use the appliance if:

√ the device has been tampered with, mistreated or damaged
√ the appliance does not work due to the power supply circuit

MAXIMA NEW (cod. 118420410) is in compliance with Directive 2014/35/EU of the European Parliament and of the Council, of 26 february 2014, on the harmonisation of the laws of the Member States relating to the making available on the market of electrical equipment designed for use within certain voltage limits.
The producer Melchioni Spa declares that the product Stand mixer Mod. MAXIMA NEW (cod. 118420410) is in compliance with Directive 2009/125/EC of the European Parliament and of the Council, of 21 october 2009, establishing a framework for the setting of ecodesign requirements for energy-related products.
The producer Melchioni Spa declares that the product Stand mixer Mod. MAXIMA NEW (cod. 118420410) is in compliance with Directive 2011/65/EU of the European Parliament and of the Council, of 8 june 2011 and subsequent Commission Delegated Directive 2015/863, on the restriction of the use of certain hazardous substances in electrical and electronic equipment.

According to Directive 2012/19/EU of the European Parliament and of the Council, of 4 July 2012, on waste electrical and electronic equipment (WEEE), the presence of the crossed-out bin symbol indicates that this appliance is not to be considered as urban waste: its disposal must therefore be carried out by separate collection. Disposal in a non-separate manner may constitute a potential harm to the environment and health. This product can be returned to the distributor when purchasing a new device. PRODUCT WARRANTY
Melchioni Spa, based in Milan (Italy), via Colletta 37, recognizes a conventional guarantee on the product for a period of two years from the date of the first purchase by the consumer. This guarantee does not affect the validity of the legislation in force concerning consumer goods (Legislative Decree 6 September 2005 n. 206 art. 128 and following), of which the consumer remains the owner. This guarantee applies to the entire territory of the European Union.
The components or parts that are found to be defective for ascertained manufacturing causes will be repaired or replaced free of charge through the dealer, during the above warranty period. Melchioni Spa reserves the right to make a complete replacement of the device, if repairability is impossible or excessively expensive, with another device of similar characteristics (Legislative Decree 6 September 2005 no. 206 art. 130) during the warranty period. In this case, the validity of the warranty remains that of the original purchase: the service provided under warranty does not extend the warranty period.
In any case, this appliance will not be considered defective in terms of materials or manufacture should it be adapted, changed or adjusted, in order to comply with national or local safety and / or technical standards, in force in a country other than that for which it is was originally designed and manufactured. This appliance has been designed and built for domestic use only: any other use will invalidate the benefits of the guarantee.
The warranty does not cover:
- parts subject to wear or tear, nor those parts that require periodic replacement and / or maintenance
• professional use of the product - malfunctions or any defects due to incorrect installation, configuration, software / BIOS / firmware update not performed by authorized Melchioni Spa
- repairs or interventions carried out by persons not authorized by Melchioni Spa
- manipulation of assembly components or, where applicable, of the software
• defects caused by fall or transport, lightning, voltage fluctuations, liquid infiltration, opening of the appliance, bad weather, fire, public disturbances, inadequate ventilation or incorrect power supply - any accessories, for example: boxes, bags, batteries, etc. used with this product
- home interventions for convenience checks or presumed defects
The recognition of the guarantee by Melchioni Spa is subject to the presentation of a tax document that proves the actual date of purchase. The same must not show any tampering or deletions, in the presence of
which Melchioni Spa reserves the right to refuse the provision of treatment under warranty.
The warranty will not be recognized if the serial number or model of the appliance is non-existent, abraded or modified.
This warranty does not include any right to compensation for direct or indirect damage, of any nature, to people or things, caused by any inefficiency of the appliance. Any extensions, promises or services in this regard, insured by the retailer, will be borne by the latter.
