APPLICATION

The Bourgini Fryer & Fondue 1.0L is an electrically heated pan with a dual function:

  1. Deep-frying chips, snacks, fish, etc.
For this function, the Fryer & Fondue is fitted with a filter lid with viewing window, a deep-fry basket and a washable metal fat filter.
  2. Fondue for 6 people with the fondue ring and 6 fondue forks included.

To fondue, remove the lid for easy access to the fondue pan from all sides.

The adjustable thermostat has a range from 140^ C – 180^ C for deep-frying, Chinese fondue (hotpot) and traditional oil fondue.

The inner pan has an anti-stick coating for easy cleaning. The on/off light indicates whether the plug is in the socket. The anti-slip feet keep the pan stable on the counter or worktop.

Besides deep-frying and fonduing, the Fryer & Fondue is also suitable for keeping soups and sauces warm.

ASSEMBLY (see picture F.1, p.2)

The Fryer & Fondue consists of the following:

  1. Deep-fry basket
  2. Removable lid
  3. Viewing window
  4. Metal fat filter
  5. Min/max oil level indicator
  6. Button to open the lid
  7. On/off indicator light
  8. Adjustable thermostat

DEEP-FRY AND FONDUE SAFELY!

  • Always unplug the appliance when it is not in use or when you are servicing the appliance.
  • Beware of spatters. Avoid spatters. See further down in this document.
  • Beware of hot parts. The accessible surfaces can get hot when the Fryer & Fondue is in use.
  • Make sure your hands are dry before touching the appliance.
  • Do not move the appliance when the power is on, when the housing is still hot or when the ingredients are still hot.
  • Make sure the cord is placed in such a way that no one accidentally pulls it or trips over it. Prevent the Fryer & Fondue from falling over with hot contents!

FILLING

  • The Fryer & Fondue pot has a minimum and maximum fill line. Fill the pan to a level that is between these lines and maintain this level while deep-frying and fonduing.
  • Note: overfilling can cause spattering. Insufficient filling may cause overheating.
  • Change the oil regularly.
  • Other ingredients such as cheese, chocolate or broth should be discarded after each use and freshly added for the next use.

GENERAL USAGE

  • Leave the lid on the pan when frying.
  • Take the lid off the pan when fonduing by opening the lid fully and lifting it straight upwards.
  • Fill the Fryer & Fondue. Make sure that the level of the oil or fat is between the minimum and maximum markings on the pan.
  • Insert the plug into the socket at this point, and not before.
  • The appliance is switched on by turning the

thermostat to the desired temperature. The temperature can be set between 70°C and 180°C. Please refer to the food packaging for the desired temperature and cooking time.

  • The appliance is equipped with a thermostat to keep the ingredients at the required temperature.
  • Allow the appliance to preheat to the desired temperature for approximately 10 minutes. First heat up the cold pan to around 120°C, then turn the thermostat to the required temperature after 5 minutes.
  • After use, switch off the appliance, unplug it and wait for it to cool down.
  • When the appliance is not being used, store it in a dry place.

SPECIFIC INSTRUCTIONS FOR DEEP-FRYING

  • Use liquid or solid deep-frying fat or deep-frying oil. When using solid fat, first turn the thermostat to the lowest level to let it melt. Only turn up the thermostat once the fat has melted.
  • Fill the basket with food, then place the basket in the appliance. Be extra careful and watch out for spatters when doing so. Then close the lid.
  • Do not put too much food in the basket. Add extra oil or fat if necessary.
  • Ensure that no water (e.g. ice from frozen foods) enters the oil. This will cause powerful oil spatters!

As soon as the food is done:

  • Shake the basket using the handle to remove excess oil or fat.
  • Leave the basket to rest for a while on the hook of the removable pan to remove excess oil or fat.
  • Empty the basket on a plate or dish using the handle.
  • Use a vegetable oil, such as ground nut oil, corn oil or soya oil for the most tasty results.
  • For the healthiest results, thaw the food before use and frequently replace the oil or liquid fat.
  • Deep-fry pre-cooked chips only once.
  • Always replace the oil or liquid fat after deep-frying raw food such as chicken legs.
  • After using the deep fryer, sift the food remains from the oil or fat. It will keep the oil or fat fresh much longer.
  • Always pre-fry fresh chips. Deep-fry the chips approx. 5-10 minutes at 170^ . Shake the chips loose and leave them to cool in a dish

for a short while. Then deep-fry the chips again approx. 2-4 minutes at 175^ C.

SPECIFIC INSTRUCTIONS FOR FONDUING

CHINESE FONDUE (HOTPOT)

  • A Chinese fondue, also known as a hotpot or Asian fondue, is essentially the heating up/cooking of food in hot soup (water-based soup).
  • Just like with cheese fondue, you can use boiled potato cubes, pieces of cooked meat/poultry (no raw meat!), sturdy vegetables such as carrots, cauliflower and broccoli florets, bell peppers, bean sprouts and mushrooms. Be sure to blanch the raw vegetables in advance (place in boiling water for a few minutes, and subsequently cool in cold water). Very thinly sliced beef steaks do not need to be pre-cooked. Tofu and omelette rolls are also popular.
  • The fondue is water-based soup. This can be fresh soup or soup from a can/package. Follow the instructions on the package. Use

BOURGÍNI.

approximately 1.5 litres of soup. The soup can be prepared in the Fryer & Fondue (fresh soup) and/or warmed up. Leave the soup for at least fifteen minutes to achieve optimum flavour.

  • Set the thermostat to 140°C, then bring the soup to a boil. Set the thermostat just high enough to keep the soup at a boil.
  • After the fondue is finished, the soup is also served and eaten.

TRADITIONAL OIL FONDUE

  • Use olive oil, or vegetable oil such as sunflower oil or peanut oil. Fill the pan to the minimum fill line with oil. Season the oil to taste with pepper and salt and/or spices.
  • Meat is very suitable for traditional fondue. Almost all meat is suitable for cooking in the fondue oil, such as beef, pork, chicken, turkey, veal, and lamb. Sausages are also suitable for the fondue pan.
  • Use approx. 200g of meat per person.
  • Cut the meat into cubes of no more than about 3cm, as it will otherwise take too long to cook.
  • Marinate and/or season the meat in advance.
  • Set the thermostat to the "oil fondue" setting and turn it back down if the oil is foaming or bubbling too much.
  • Ensure that no water (e.g. ice from frozen foods) enters the oil. This will cause powerful oil spatters!
  • Test each type of meat to determine how long it should be immersed to be fully cooked. Do not eat undercooked meat!

CLEANING AND MAINTENANCE

  • Unplug the appliance and wait for it to cool down before cleaning and/or servicing.
  • Do not use any acerbic or abrasive cleaning liquids.
  • Do not use any sharp objects.
  • The basket, the support ring and the forks can be cleaned in a dishwasher. The pan, cord and plug must never be submerged in water. Using a damp towel, wipe the pan clean. Dry the pan thoroughly after cleaning.
  • The pan can be cleaned by filling the pan with water and a detergent up to the minimum level and switching the pan to the lowest temperature for ten minutes. Do not let the water boil! Subsequently leave the pan to cool, unplug it and rinse well with cold water.
  • Regularly check the appliance for any damage.
  • Cleaning the metal fat filter (see picture F.2, p.2)

  • Open the filter compartment on top of the lid by pulling up the tab.

  • Take the metal filter out and clean it in hot soapy water. Then rinse it well and put it back.
