How to start a vacuum packaging cycle?
After turning on the machine and selecting a program, place the bag in the chamber, close the lid: the cycle starts automatically. Do not use the lid retainer during the cycle.
How to select and customize a program?
Press the Program key until the desired number (1-9) is displayed. To modify, press the Reprogram key, then adjust parameters (vacuum value, sealing time, liquid sensor, etc.) using the +/- keys. Confirm with the function selection key, then save.
What to do if the control panel does not light up?
Check that the machine is plugged into a grounded outlet. If the problem persists, the main fuse or the circuit board fuse may have blown. Contact Vollrath technical support.
How to maintain the vacuum pump?
Run the pump conditioning program daily to remove moisture. Check the oil level weekly through the sight glass. Every six months, contact technical support to replace the oil.

Yes, but let the food cool beforehand and use a program with the Liquid Sensor function activated. Position the bag on the provided inclined plates to keep the liquid below the sealing bar.

Unplug the machine. Remove the sealing bar, unscrew the old wires, clean the bar. Cut a new Teflon tape to the length of the bar, apply it. Cut new wires (bar length + 15 cm), fix them while tensioning. Reassemble the bar.
Why does the lid not open automatically after the cycle?
This may be due to a damaged gas spring, a misadjusted microswitch, or a faulty pump. Check the lid and contact technical support if necessary.
What does the 'OIL' display on the panel mean?

To reduce risk of injury or damage to the machine

  • Use only grounded electrical outlets matching the nameplate-rated voltage.
  • Use machine in a flat, level position.
  • Do not use an extension cord with this machine or plug it into a power strip or multi-outlet power cord.
  • Unplug machine before cleaning or moving and when not in use.
  • Do not spray controls or exterior with liquids or cleaners.
  • Do not clean the machine with steel wool.
  • Keep machine and power cord away from open flames, electric burners, and excessive heat.
  • Do not operate unattended.
  • Do not operate if machine is damaged or malfunctioning.

FUNCTION AND PURPOSE

This machine is intended to vacuum seal food in commercial kitchens. It is not intended for household, industrial, or laboratory use.

UNPACKING THE MACHINE

  1. Remove all packing material and tape, as well as any protective plastic; dispose of in an environmentally-responsible way when no longer needed.
  2. Clean any glue residue left over from the plastic or tape.

CLEARANCE AND ENVIRONMENT

NOTICE: Never place the machine near a heat source; this can damage the lid.

  • 6" (15 cm) clearance is required on all sides and 15½" (39.4 cm) above the machine for the lid to fully open.
  • Ambient temperature must be between 41-86 °F (5-30 °C).

INSTALLATION

NOTICE: Tilting could allow oil to flow out of the pump and cause damage to the machine.

NOTICE: Running the machine without oil or insufficient oil will cause damage and void the warranty.

NOTICE: Using voltage other than the nameplate-rated voltage or modifying the power cord or electrical components will damage the machine and void the warranty.

  1. Place the machine on a flat, stable surface.
  2. Ensure control panel is accessible for operation.
  3. Install the included 4" (10.2 cm) legs; ETL Sanitation requires their use.
  4. Check the Oil Gauge Window at the back of the machine to verify level is between the minimum and maximum lines.
  5. Plug the machine into a properly-grounded electrical supply matching the nameplate rating.
  6. Run Pump Conditioning program — see OPERATION.

OPERATION

NOTICE:

• Do not pack products that can be damaged.
- To reduce condensation and corrosion risk for the pump, cool products prior to packing.
- When packing food, always select a program that includes Liquid Sensor Control.
• See PACKING LIQUIDS AND MOIST FOODS for these items.
• Machine should be used a maximum of five hours daily.
- Allow a minimum of 15 seconds between packing cycles.
• Do not exceed 60 seconds of vacuum time.
• After an hour of use, let machine cool to ambient temperature.
- Lid Retainer secures lid only when machine is not in use.

Turn Machine On

  1. Rotate the lid retainer so it is not covering the lid.
  2. Press the On/Off Button; software revision codes will display.
  3. If machine has not been used recently, run the Pump Conditioning Program per the Cleaning section.

Select a Program

NOTICE: For food packing, use a program with Liquid Sensor Control. Refer to PACKING LIQUIDS AND MOIST FOODS.

  1. Press proq until the desired program number displays. See the table on the following page for descriptions.

Program Function

Vacuum Level—is the vacuum percentage detected in the chamber before moving on to the next step of the program. Values are 0–99%.

Vacuum Plus—extends vacuum cycle for a set number of seconds after the program's vacuum level is reached. Some items need extra time to evacuate all gases from the chamber. Vacuum level must be set to 99% for Vacuum Plus to be enabled.

Vacuum Time—determines the length of the vacuum cycle; maximum time recommended is 60 seconds. Set the vacuum level to 0 to enable this function.

Liquid Control—senses evaporation in evacuated air due to boiling in the bag. If evaporation is detected, the program stops the vacuum pump and moves to the next step; this protects the pump from taking in moisture, which can lead to corrosion and premature failure.

Liquid Control Plus—allows extra time beyond Liquid Control to finish evacuating the chamber. Use caution to ensure moisture is not being sucked into the vacuum pump. To use this function, Liquid Control must be enabled.

Seal Time—is when seal bars will be actively heating to seal the product bag; recommended time is 2.0-2.5 seconds for most commercially available bags.

Soft Air—is gently released into the chamber after sealing to protect delicate products prevent and bag damage.

WARNING

Burn Hazard

Sealing Bar may become hot after repeated use. Do not touch Sealing Bar when placing vacuum bags in the chamber.

  1. Place food in a vacuum bag that fits entirely in the chamber.

  2. Place the bag in the chamber and smooth the open end over the sealing bar. Multiple vacuum bags can be placed over the sealing bars as long as they do not overlap.

  1. For small items, use at least one insert plate under the bag. This fills empty chamber space and reduces cycle time.

Program Factory Defaults

Run the Program

  1. Close the Lid; cycle starts automatically. Lid Retainer should not be used.
  2. When the lid opens, sealing is complete; remove the bag.
  3. Wait 15 seconds before sealing another.

Stopping a Cycle

The machine can be stopped before a packing cycle is complete.

  • Press to stop the vacuum and continue to the next function.
  • Press ☑ to stop and cancel the program.

Editing a Program

  1. Select program 1-9 to customize by pressing 📂 until the number you would like to edit displays. Zero cannot be edited.
  2. Press to edit. When the number flashes, select a function:

PACKING LIQUIDS AND MOIST FOODS

NOTICE: Special precautions and processes must be followed when vacuum packing liquids or moist foods.

NOTICE: Hot foods create condensation which can cause corrosion and damage the pump.

  1. Cool food before packing; hot food reaches boiling point quickly and can cause an inadequate seal.
  2. Use included Incline Plates to position the bag so liquid is below the Sealing Bar. The plate slides under the Seal Bars, around the Bar Lift Base.

  1. Use a program that includes the Liquid Sensor Control function. This will prevent the product from boiling.

Run the Pump Conditioning Program

This program removes moisture that may have accumulated in the pump. During the program, the pump and oil reach operating temperature, which evaporates any moisture in the pump.

  2. The program starts and moving dots will display for approximately 15 minutes. If the program is interrupted, it must be run again to ensure completion.

Keep water and other liquids from entering the inside of the equipment. Do not spray water or cleaning products. Liquid could contact the electrical components and cause a short circuit or an electrical shock.

Burn Hazard.

Allow machine to cool completely before moving or cleaning.

NOTICE: Do not use cleaners with ammonia, alcohol, acetone, or dry cleaning products. These chemicals damage Plexiglas®, acrylic, and other plastics, as well as the finish.

NOTICE: Do not use paper towels, abrasive cleaners, razor blades, brushes, steel wool or scouring pads, WD-40 ^® , petroleum, or industrial/commercial cleaning products. These will damage the finish.

  1. Unplug the machine and allow it to cool completely.
  2. Wipe the vacuum chamber, lid, sealing bar, silicone holder, and exterior with a soft, lint-free cloth and warm water, or warm water and a small amount of mild dish detergent.
  3. Wipe away all soap/cleaners. Residue could cause corrosion.

NOTICE: All maintenance must be performed by a qualified service technician.

NOTICE: Do not tilt the machine; tilting could cause oil to come out of the pump and damage the machine.

Inspect your machine regularly to look for worn or broken parts and proper functionality. Use the below schedule as a guideline for the minimum level of maintenance that must be performed.

Replace Sealing Wires and Teflon® Tape

Check Sealing Bar for damage. Replace Teflon tape and/or sealing wires if seal quality is compromised or if Teflon tape or seal wires are worn.

Supplies and Tools:

• Phillips screwdriver
• Tensioning tool or pliers
- Lint-free cleaning cloth
- Replacement Teflon tape
- Replacement sealing wire
- Scissors

  1. Pull up on the Sealing Bar to remove it from the machine.

  1. Remove the screws on the bottom of the Seal Bar.

  1. Remove Teflon tape from sealing bar and clean the bar with a lint-free cloth.

  1. Cut a piece of replacement Teflon tape the length of the Sealing Bar, then apply the tape to the bar.

  2. Cut new sealing wire(s) to the length of the Sealing Bar plus about 6" (15 cm) and attach one wire to one side of the Seal Bar by tightening the screw.

  1. Pull the wire across the Sealing Bar straight and tight, then attach it by tightening the screw.

  2. Repeat steps 7 & 8 for the second wire, then trim wires.

  3. Cut a piece of Teflon tape the same length of the sealing bar, plus about 2" (5 cm).

  4. Apply the tape smoothly over the sealing wires on the Sealing Bar; trim tape.

  5. Place Sealing Bar back in the machine by snapping it into the holder; verify the bar is properly secured.

Replacing the Seal Pad

If the any part of the Seal Pad is rough, replace it.

Supplies and Tools:

  1. Remove the worn pad from the holder.

  1. Cut a new piece of Seal Pad that is the same size and shape as the old one; this helps avoid sealing issues.

  2. Place the new pad in the holder so it is completely in the groove, as evenly as possible.

Replacing the Lid Gasket

The lid gasket ensures the vacuum chamber is completely sealed during the packing cycle. This is essential to achieve maximum vacuum. The lid gasket wears due to the extreme pressure differences and must be replaced regularly.

  1. Remove the worn gasket.

  1. Cut a new piece of gasket slightly longer than the old one.

  2. Position the new gasket so the lip faces down and out, then press the gasket into the slot evenly.

  3. Cut gasket straight across so ends come together tightly to prevent leaks. If the gasket is too long or too short, the lid might not close properly or leaks could occur.
