How to clean the Vollrath XCOA1023 oven?

Stop and unplug the appliance, allow it to cool completely. Clean the exterior with a damp cloth soaked in soapy water. The oven door can be removed for easier cleaning. Do not use caustic or abrasive cleaners, or steel wool.

How to replace the oven lamp?

Unplug the appliance and let it cool. Unscrew the lamp cover, remove the old lamp and install a new one that withstands high temperatures (25 W for 220 V, 15 W for 120 V). Replace the cover and plug back in.

How to use the grill function?

Place the grids in the desired positions. Turn the cooking knob to the grill icon. Set the grill knob to the desired temperature. The timer is not required. The fans do not operate in grill mode.

How to use the steam function (model 40702)?

Activate the steam function at the beginning of the cooking cycle, after the oven has reached temperature and the food is placed. Press the steam button located on the front panel. Do not hold the pressure for more than 2 seconds per pulse.

What to do if the oven indicator light does not come on?

Check that the appliance is plugged in and the timer is running. If the indicator light remains off, it may be defective or the thermostat may be faulty. Contact Vollrath technical support.

What to do if the oven does not heat up?

The indicator light comes on but the appliance does not heat up? The heating element may be faulty. Replace the heating element or contact Vollrath for diagnosis.

How to remove the oven door?

Allow the appliance to cool. Open the door, place the hinge latch over the hinge arm on both sides, then tilt the door upward and lift it out.

What is the required electrical voltage?

Model 40703 operates at 120 V, models 40701 and 40702 at 220 V. Check the rating plate of your appliance for the exact voltage. Plug only into a corresponding grounded outlet.

Can I use an extension cord?

No, do not use an extension cord with this appliance. Plug it directly into a properly grounded wall outlet. Do not use a power strip either.

How to set the timer?

Turn the timer knob to the desired time, from 1 to 120 minutes. For continuous operation, set it to 'Constant On'. The timer does not sound; the indicator light shows it is activated.

Burn-in

Closethedoorandturnthebakecontrolto525°F(274°C).Setthe timerfor30minutes.Duringthisburn-inyoumaynoticeaslightodor, thisisnormal.

Clean

Before using this equipment must be cleaned and dried thoroughly. Clean all surfaces before use. Failure to cleans surfaces before using the unit could cause food contamination.

BBrownControl.(40701and40702Only).Usedtosetoradjust the temperature of the upper element. Thenumbersonthedial correspond with the oventemperature. The bake control must be set in the "BROWN" position and the timer in the "ON" position for the upper element to heat. The and does not operate when the brown function is operating.
CTimer.Timercanbesetfor1-120minutes,oritcansetto constant"ON"position. Thetimermustbeoperatinginorderfor "Bake"tofunction. Thetimerdoesnothaveabuzzer.
DPilotLights. Thislight indicates that the oven is heating and the timer is activated. Once the temperature has been reached the light will go out. Equipment will continue to maintain heat and temperature as the light cycles on and off. This light is not a power "ON" indicator. The timer pilot light will illuminate when the timer is operating.

OPERATION

1. Placethewireshelvesorpansinthedesiredpositionsinsidethe unit.Allowaspaceofatleast2"(5cm)betweenwireshelvesor pans.
2. Setthebakecontrolthedesiredtemperature.

1. Set the timer control to the desired time. The fan and oven light will operate continuously. The heating elements will cycle on and off to maintain a consistent temperature.
