UNPACKINGTHEEQUIPMENT
- Remove all packing material and tape, as well as any protective plastic from the equipment.
- Whennolongerneeded, disposeofallpackagingandmaterialsinan environmentallyresponsiblemanner.
- Cleananyglueresidueleftoverfromtheplasticortape.
INSTALLATION

This equipment must installed by a qualified installer in accordance with all federal, state and local codes. Failure to install this equipment properly can result in injury or death.
LocationandClearanceRequirements
•Theovenshouldbeinstalledunderahoodinaccordancewiththe latesteditionoftheStandardforVentilationControlandFire ProtectionofCommercialCookingOperations,NFPA96.
- This appliancemustbeinstalledadjacenttonon-combustible surfacesonly.
• Minimum clearance on all sides: of 8 (20.3cm).
• Minimum distance from another appliance: 8 "(20.3cm).
•Theovenmustbeinstalledonaflatlevelsurface.
•Thesuppliedlegsmustbeinstalled.
InstalltheIncludedLegsandFeet
- Forthe15BirdRotisserieOven, install the included legs and rubber feet. These must be installed to meet agency certifications.

- Forthe8BirdRotisserieOven, installtherubberfeet.
- Makesuretheovenislevel. Operating the oveninanon-level position may damage the equipment.
BeforeFirstUse
- Cleantheequipment.See "Cleaning" on page 3.
- Setthetemperatureto450°F(218°C).
- Allow the eventoheat for 30 minutes. Smokemay appeardueto the heating elements burning-in. This is normal.
- After the 30-minute burn-in period the equipment is ready for use.
FEATURESANDCONTROLS

ATemperatureControlDial.Usedtosetoradjustthe temperature.
BHeatIndicatorLight. This light indicates that the unit is heating. On the set temperature has been reached the light will go out. This is not a power indicator light. The light will cycle on and off asthe equipment that remains in a temperature.
CTimerIndicatorLight.Illuminateswhenthetimerisactivated.
DTimer. Timercanbesetfor10-120minutes. Thetimeris connectedtothermostat. Ovenwillnotheatunlesssthetimeris set.
ERotisserieSwitch. Startsandstopstherotatingofthebaskets.
FPowerSwitch.SwitchesthepowerON/OFF.Ovenlightturnson andoffwiththepower.
GLegs.Supporttheequipment.
HDoorHandle.Usedtoopenandclosetheoven
IDripTray. A tray that collects grease and oil. This tray can be removed for cleaning.
JBasket.Holdsthefoodproductandrotatesduringtherotisserie cookingprocess.
KPivotPin.Supportsthebasketandallowsthebaskettopivot duringtherotisseriecookingprocess.
LGreaseDeflector. Locatedinside, atthetopoftheoven. (Not visibleinphoto.)

2.SwitchthepowertotheONposition.Theovenlightilluminates.

Set the temperature control to the desired cooking temperature. The recommended cooking temperature is 338^ F ( 170^ C). However, this may need to be adjusted based on the size and number of the chickens, your preferences and other variables.

Setthetimertothedesiredcookingtime, typically 1 12 -2hours. Ovenwillnotheatunlessthetimerisset. The actual cooking time may needtobeadjustedtoensurethechickensarefullycookedas verified by a food thermometer.

TurntherotisserieswitchtotheONpositionontinitiatetherotatingof thebasketsandtheconvectionfan.

Keep the area at the front of the unit clear for unobstructed access during operation.

Whenthetimerhasexpired, the heating function will stop, but the baskets will continuetorotate.

Switchtherotisseries switch to the OFF position before opening the ovendoor.

Verifychickensarefullycooked. Useafoodthermometer to check the internal temperature of each chicken.
CLEANING
Tomaintaintheappearanceandincreasetheservicelife,cleanyour equipmentdaily.

- Allowittocool completely before cleaning.
- Removethebaskets, driptray and greasedeflector. Washbyhandor inthedishwasher. Makesurecomponents arethoroughly dry before reinstalling.
- Cleantheequipmentwithmildsoapandwater.Removeallgrease, oilandfatresidues.

MAINTENANCE
CleantheGreaseDeflector
Cleanthedeflectoreverythreemonthstoppreventgreasebuild-up.
- Turnoffandunplugtheoven.
- Removethefourscrewssecuringthedeflectortothetopofthe oven.

- Cleanbyhandwithmildde-greasingsoapandwater.
- Drythedeflectorbeforere-installingintotheoven.
NOTICE: The grease deflectormustbere-installed prioritouse.
ReplacetheOvenLight
NOTICE: Thereplacementovenlightmustberatedforthehigh temperaturewithintheovenandmustmatchthe nameplatevoltage, i.e., 220-240Volt, 25Watt, 570°F (300°C).
- Allow theoventocool completely beforeservicing.
- Disconnect the oven from the electrical powersupply.
- Unscrewtheovenlightglasscoverandthenremovetheovenlight.
