Before operating the equipment, read and familiarize yourself with the following operating and safety instructions. SAVE THESE INSTRUCTIONS FOR FUTURE REFERENCE. SAFETY PRECAUTIONS To ensure safe operation, read the following statements and understand their meaning. This manual contains safety precautions which are explained below. Please read carefully. Warning is used to indicate the presence of a hazard that will or can cause severe personal injury or death. Caution is used to indicate the presence of a hazard that will or can cause minor or major personal injury if the caution is ignored. NOTICE: Notice is used to note information that is important but not hazard-related. To reduce risk of injury or damage to the equipment:
- This equipment must be installed by a qualified person.
- Use only grounded electrical outlets that match the rated voltage on the nameplate. NOTICE: Do NOT modify the cord or plug on the drop-in. Modifying any component may damage the drop-in or cause injury, and will void the warranty. See the specification sheet on Vollrath.com for electrical specifications.
- Do not use an extension cord with this equipment. Do not plug this equipment into a power strip or multi-outlet power cord.
- This equipment should only be used in a flat, level position.
- Do not spray the controls or the outside of equipment with liquids or cleaning agents.
- Keep the equipment and power cord away from open flames, electric burners or excessive heat.
- Do not operate equipment if it is damaged or malfunctioning.
- Unplug and allow the equipment to cool before cleaning.
- Do not clean this equipment with steel wool.
FUNCTION AND PURPOSE
This equipment is intended to hold plated, pre-cooked, hot food for short periods of time. It is not intended to heat food or for direct contact with food. It is not intended for household, industrial or laboratory use. WARNING CAUTION Item No. Shelf Material Mounting Type Length In (cm)
The serial number for your Heated Shelf Drop-in can be found on the rating plate located on the underside of the heated shelf. To aid in future communication about your product, please record the serial number in the space below.
FEATURES AND CONTROLS
OPERATION NOTICE: Food must be plated. Do not place food directly onto the heated shelf. NOTICE: The heated shelf can reach temperatures up to 200°F (93.3°C). Do not place materials on the shelf that can become damaged at that temperature. NOTICE: Do not slide plates, pans, cookware, etc. across the hardcoat finish. This could create damage to the finish that is not covered under warranty. Tip: To extend the duration at which food is held at optimal holding temperatures, use a Vollrath heat strip in conjunction with the heated shelf.
1. Press the heat zone(s) power buttons to turn on the heated-shelf.
The button(s) will illuminate. The heat zone setting(s) will default to the settings from the previous use.
2. Press the heat control button(s) to select a heat setting.
Note: The heat setting will apply to both zones.
3. The control panel will display the selected heat setting and the
heating indicator light will illuminate
4. The light will cycle on and off as the shelf periodically heats to
maintain the heat setting.
5. Plate pre-cooked food, heated to proper serving temperature. Place
the plated food onto the pre-heated shelf. NOTICE: Monitor food temperature closely for food safety. The United States Public Health Service recommends that hot food be held at a minimum of 140 ºF (60 ºC) to help prevent bacteria growth.
6. Monitor food and adjust the heat settings as needed.
7. When finished using the shelf, remove the food and turn off the

3Heated Shelf Drop-in Operator’s Manual 3 CLEANING To maintain the appearance and increase the service life, clean your equipment daily. NOTICE: Do not use caustic cleaning chemicals, steel wool or commercial lime removal products to clean the equipment. Thoroughly rinse equipment with water after cleaning.

3. Use gloves, mitts or pot holders to protect hands when removing
containers of hot food.
4. Allow the equipment to cool completely before cleaning.
