UNDERSIDE OF SLICER

- Stab the food to be sliced onto the spikes of the Food Pusher. FIGURE E
ALWAYS use the Food Pusher!
NEVER use your fingers, hands or other objects to push the food on the Slicer! The Food Pusher is designed so that it will not touch the Blades as you slide it up and down the face of the Slicer.
NOTE: A small flat edge may need to be sliced on the top of the food so there is a stable area for the Food Pusher to hold on to. - To adjust the thickness of the slices, pull out and turn the Depth Adjustment Knob and turn it clockwise. This will lower the Depth Plate, making thicker slices. Turning the Depth Adjustment Knob counter-clockwise will raise the Depth Plate, making thinner slices FIGURE F
- Hold onto the handle on the Rear Stand and using the Food Pusher with the food attached. Slide the Food Pusher downward to slice. FIGURE F & G
- Maintain constant pressure so that the spikes of the Food Pusher continue to hold the vegetable/fruit.
- As an alternative, fold the Rear Stand up and place the Slicer on top of a bowl. Be certain that the bowl edges align with the notches on the Slicer, both front and back, so that the Slicer remains stable while slicing. FIGURE H
- For julienne slicing, pull out and turn the Julienne Blade Knob to expose either the 1/4 (0.64 cm) or the 3/8 (0.375 cm) Julienne Blades. FIGURE I

CLEANING INSTRUCTIONS
Clean the Mandoline Slicer immediately after use to prevent food from drying on the parts. Wash the Mandoline Slicer Base and the Food Pusher by hand in hot soapy water, rinse with clean water, then dry immediately.
The Blades and the Food Pusher can be washed in the top rack of a dishwasher. Carefully position these pieces where they won't cut or damage other utensils.
- When finished slicing, remove any remaining food debris from the Food Pusher and all Blades with a brush.
CAUTION! KEEP FINGERS CLEAR of the Blade at all times. NEVER remove debris from the Blade with your hands

- Pull out and turn the Depth Adjustment Knob counter-clockwise to raise the Depth Plate completely up.
- Pull out and turn the Julienne Blade Knob to lower the Julienne Blades to the position under the Slicer Base.
- Remove the Slicing Blade pulling up and out on the Blade from the thumb slot. Grasp only the plastic portion of the Blade.
CAUTION: Once the Blades are removed, DO NOT immerse them in water! Blades should be washed either in a top rack of the dishwasher or by holding onto the plastic portion of the Blade. With a soapy towel, wipe AWAY from the Blade edges. To rinse Blade, hold by the Handle and wipe with a clean, damp towel, or hold under running water. Dry thoroughly. - Store the Blades in the accompanying Blade Box. Return the Slicer and all parts to the original box. Store in a cool, dry area. BE SURE TO STORE OUT OF REACH OF CHILDREN!
TYPES OF SLICES
Julienne Blades
There are 2 Julienne Blade Sets, 1/4'' (0.64 cm) (14 Blades) or 3/8'' (0.375 cm) (10 Blades). The more teeth on the Blade result in thinner sticks/slices. Fewer teeth on the Blade result in thicker sticks/slices.
For julienne slicing, pull out and turn the Julienne Blade Knob to expose either the Julienne Blades. FIGURE J & K
- Use the Julienne Blades in conjunction with the Flat Slicer Blade.
- Cut the food in sections corresponding to the desired length of the julienne strips (approximately 3^ - 6^ (7.6 - 15.2 cm) long). Food Pusher Spikes.
To dice: Make a pass over the julienne & flat blade combination. Next, rotate the food 90 degrees and make a second pass over the blade to complete the cut.
Flat Slicer Blade FIGURE L
This is the Slicer's main Blade and features a straight edge for basic slicing. The straight edge is ideal for slicing a variety of foods from carrots and cabbage to lemons and potatoes.
Wavy/Waffle Slicer Blade FIGURE M
The Wavy/Waffle Slicer Blade creates crinkle and waffle cuts. A wavy cut requires only one pass over the Blade.
For a waffle cut, adjust the height of the Depth Adjustment Plate so that the slices are only slightly thicker than the serrated edge of the Wavy/Waffle Slicer Blade.
- Use the Food Pusher to make a pass over the Wavy/Waffle Slicer Blade.
- Next, rotate the food 90^ and make a second pass over the Blade to complete the cut.
Grater Blade FIGURE N
The Grater Blade is great for grating hard cheeses, chocolate & ginger.
Fine & Coarse Shredder Blades
FIGURE O & P
The Fine & Coarse Shredder Blades are used for shredding cheeses, fruits and vegetables.

FOOD SAFETY
There are basic rules to follow when handling food. They are COOK, SEPARATE, CLEAN, and CHILL.
COOK
It's crucial to cook food to a safe internal temperature to destroy bacteria that is present. The safety of hamburgers and other foods made with ground meat has been receiving a lot of attention lately, and with good reason. When meat is ground, the bacteria present on the surface is mixed throughout the ground mixture. If this ground meat is not cooked to at least 160^ to 165^ ( 71^ to 74^ ), bacteria will not be destroyed and there's a good chance you will get sick.
Solid pieces of meat like steaks and chops don't have dangerous bacteria like E. coli on the inside, so they can be served more rare. Still, any beef cut should be cooked to an internal temperature of at least 145^ (63°C) (medium rare). The safe temperature for poultry is 165^ (75°C) and solid cuts of pork should be cooked to 145^ (63°C).
SEPARATE
Foods that will be eaten uncooked and foods that will be cooked before eating MUST ALWAYS be separated. Cross-contamination occurs when raw meats or eggs come in contact with foods that will be eaten uncooked. This is a major source of food poisoning. Always double-wrap raw meats and place them on the lowest shelf in the refrigerator so there is no way juices can drip onto fresh produce. Then use the raw meats within 1-2 days of purchase, or freeze for longer storage. Defrost frozen meats in the refrigerator, not on the counter.
When grilling or cooking raw meats or fish, make sure to place the cooked meat on a clean platter. Don't use the same platter you used to carry the food out to the grill. Wash the utensils used in grilling after the food is turned for the last time on the grill, as well as spatulas and spoons used for stir-frying or turning meat as it cooks.
Make sure to wash your hands after handling raw meats or raw eggs. Washing hands with soap and water, or using a pre-moistened antibacterial towelette is absolutely necessary after you have touched raw meat or raw eggs. Not washing hands and surfaces while cooking is a major cause of cross-contamination.
CLEAN
Wash your hands and work surfaces frequently when you are cooking. Washing with soap and warm water for at least 15 seconds, then dry with a paper towel.
CHILL
Chilling food is very important. The danger zone where bacteria multiply is between 40^ and 140^ ( 4^ and 6^ ). Your refrigerator should be set to 40^ ( 4^ ) or below; your freezer should be 0^ (-17°C) or below. Simple rule: serve hot foods hot, cold foods cold. Use chafing dishes or hot plates to keep food hot while serving. Use ice water baths to keep cold foods cold. Never let any food sit at room temperature for more than 2 hours - 1 hour if the ambient temperature is 90^ ( 32^ ) or above. When packing for a picnic, make sure the foods are already chilled when they go into the insulated hamper. The hamper won't chill food - it just keeps food cold when properly packed with ice. Hot cooked foods should be placed in shallow containers and immediately refrigerated so they cool rapidly. Make sure to cover foods after they are cool.
NOTE: Special considerations must be made when using venison or other wild game, since it can become heavily contaminated during field dressing. Venison is often held at temperatures that could potentially allow bacteria to grow, such as when it is being transported. Refer to the USDA Meat and Poultry Department for further questions or information on meat and food safety.
