  1. Do not clean the mincer in a dish-washer.

  2. Never touch the appliance or lead cable with wet hands.

  3. This appliance is intended for domestic and similar use such as:

  4. staff kitchen areas in shops, offices and other working environments;
    agricultural enterprises;

  5. by clients in hotels, motels and other accommodation facilities;
  6. bed and breakfast accommodations and holiday homes.

  7. The mincer should only be set up on a firm level working top.

  8. Always disconnect the appliance from the mains before assembling, dismantling and cleaning the appliance or before exchanging mincing plates.
  9. Only operate the mincer after it has been carefully assembled.

  10. Make sure that the lead cable does not hang over the edge of the worktop or table, since this can cause accidents, for example if small children pull on the cable.

  11. Route the lead cable so that it is prevented from being pulled or tripped over.
  12. Never wrap the lead cable around the appliance.
  13. Always disconnect the lead cable from the wall socket pulling on the plug, never on the cable.
  14. Before connecting the appliance to the mains, make sure that the ON/OFF switch is in OFF position.
  15. Do not use the appliance with accessories of other manufacturers or brands, to prevent damage.
  16. Use the mincer only indoors.
  17. Never leave the mincer unattended. Keep the appliance out of reach of children. The mincer must not be used by children.
  18. When transporting the appliance carry it with both hands at the motor block - not at the feed pan or the mincer.
  19. Never push the food into the feeding tube with your fingers. Always use the feedstick for this purpose. Risk of injuries!
  20. In order to avoid food blocking the feeding worm, do not fill in with excessive pressure, but only slightly.

  21. If the food gets stuck in the feeding worm, press the reverse button II for a few seconds to remove the blocking.

  22. If the appliance gets repeatedly blocked, disconnect the appliance from the mains. Open the worm housing and remove the obstacles. Then reassemble the appliance and continue to process the respective food. When switching over from I to O or to II, wait a few seconds until the motor has stopped.
  23. The mincer must only be used to mince meat, fish, and vegetables. Do not mince hard parts such as bones, or nuts. Do not mince hard-fibre foods such as ginger etc.
  24. Disconnect the appliance from the wall socket after use and prior to cleaning. Never leave the appliance unattended when it is connected to the wall socket.
  25. Let the appliance cool off before cleaning it.
  26. Never open the casing of the mincer. There is danger of electric shock.
  27. Check the appliance, the wall socket and the lead cable regularly for wear or damage. In case the lead cable or other parts appear damaged, please send the appliance or the base to our after sales service for inspection and repair (for address, see warranty terms). Unauthorised repairs can constitute serious risks for the user and void the warranty.

The manufacturer will not be liable in the event of incorrect assembly, improper or incorrect use or if repairs are carried out by unauthorized third parties.

ASSEMBLY OF THE MINCER

The switch of the mincer must be in the OFF position before the appliance is connected to the mains!

  1. Remove all packaging materials and any transport safety devices.
  2. Clean all parts with a damp cloth, as described in the chapter "Cleaning and maintenance" on page 19.
  3. Check if the appliance is switch off.
  4. Place the motor block on a solid and flat surface. The switch has to be on the front side. Do not cover the ventilation openings in the bottom.
  5. Insert the feeding worm into the worm housing. The tooth wheel at the end of the feeding worm should be greased after each cleaning with a greasing agent admitted for contact with foodstuff.

  6. Place the knife on the axle of the worm. The flat side of the knife must faces the outside (mincing plate), the rounded side the inside (feeding worm). If not correctly installed, the meat cannot be minced properly.

  7. Place the required mincing plate onto the knife. The small arresting tab at the inner side of the worm housing must fit exactly into the little recess of the mincing plate.
  8. Firmly screw on the closing ring while holding the mincing plate in place. Do not overtighten.
  9. Place the mincer head in the opening of the motor block. The feeding tube faces the user. Press the locking button down and fix

the mincer head, until the feeding tube is vertical. Then release the locking button.

  1. Presse the feed pan firmly onto the feeding tube.
  2. Connect the appliance to the mains.
  3. The mincer is now ready for use.

Important advice!

The appliance disposes of an electronic control with time delay, so the motor will start only a few seconds after switching on.

MINCING MEAT

  1. Assemble the mincer and install the required mincer plate.
  2. Cut the meat into small pieces that will fit into the feed funnel. Remove very carefully all sinews.
  3. Plug the power cord into a mains socket and switch on the mincer.
  4. Start mincing with the coarse plate, continue with the medium and the fine plate. Never start with the fine plate first. Slowly feed the meat pieces into the feeding tube and push them down with the feedstick. Do not apply excessive force.

Use only the feedstick to press down the meat. Never use the fingers! Risk of injuries!

  1. If a piece of meat blocks the feeding worm, press the reverse button II for a few seconds to remove the blocking.
  2. Then continue to mince the meat.

  3. If the blocking occurs repeatedly, switch off the appliance, disconnect it from the mains. Unscrew the closing ring, remove the blocking by bones, sinews etc. in the worm. Then reassemble worm, knife, mincing plate and closing ring as described above. Put the plug into the receptacle and continue to mince.

  4. The mincer will easily mince household quantities of meat (raw, cooked, different kinds of meat). 5kg of raw meat are minced in approx. 15 minutes.
  5. Let the appliance cool down after a working period of approx. 15 minutes.
  6. We recommend to prepare a portion of meat, then mince it, then prepare and mince the next portion. This allows to motor to cool down in the meantime.
  7. Switch off the mincer after use and disconnect the power cord from the mains socket.

CLEANING AND MAINTENANCE

  1. Open the closing ring and switch the appliance on for some seconds. Any meat residues will fall out together with the knife and the mincing plate.

CAUTION: the blades of the knife are sharp.

  1. Switch off the mincer and disconnect the power supply cable from the mains. The motor must stop completely.
  2. Detach the mincer head from the motor block by pressing the locking button. Turn the mincer head towards the user while keeping the button pressed down and remove it from the motor block. Release the button.
  3. Remove the mincer plate and the knife, if not yet done, and pull out the worm. Remove any meat residues.

  4. Wash all removable parts in hot water with a mild detergent. Do not use any aggressive or abrasive detergents. Dry all parts carefully.

  5. The parts are not dishwashersafe.
  6. Wipe the motor block with a damp cloth. Do not clean the motor block under water, nor immerse it into water! Do not use alcohol, benzine, etc..
  7. The tooth wheel at the end of the feeding worm should be greased after each cleaning with a greasing agent admitted for contact with foodstuff.
  8. Grease the mincer plate and knife with salad oil to prevent air corrosion.

RECIPES

You can prepare minced meat from all sorts of meat and use this meat for preparing meat balls, stuffings, pies etc.

You may also mince fish (fishbones) for fish balls.

All fresh ingredients must be cooled before processing (approx. 4^ ).

Rabbit pie

250 g rabbit meat (without bones), 250 g belly of pork, 125 g veal meat, 120 g bacon fat, 2 cloves of garlic, 1 tsp black pepper correls, 12 juniper berries, 14 tsp nutmeg, 3-4 tbsp fresh herbs (parsley, thyme, sage), 1 egg, 2 tbsp calvados, 60 ml dry white wine

Mince meat and bacon, crush the spices in a mortar and add it to the meat, as well as herbs, egg, calvados and wine.

Fill the mass into a greased, heat resistant dish and place it into a deep baking tin filled with water. Bake in the preheated oven for about 1.5-2 hours at 160^ .

Remove from the oven, let the pie cool down, then weigh down with a tray and a filled tin.

Leave the pie for about 1-2 days in the refrigerator before serving it.

Liver dumplings (a speciality from Southern Germany)

250 g of pork liver, 1 clove of garlic, 3 slices of bread, 100 ml warm milk, 12 tsp salt, 1 egg, 1 tbsp of lard

Pass liver and garlic through the mincer. Cut the bread into small cubes and soak it in the milk. Mix liver, bread, spices, egg and lard.

Form meat balls and let them cook in a meat stock for about 20 minutes. Serve the dumplings either with the stock or with sauerkraut.

Sausage filler

  1. Prepare the sausage stuffing according to your recipe.
  2. If you want to add coarse bacon pieces to the sausage, cut them before by using the bacon rusher and add them to the sausage stuffing.
  3. For filling you may either mount the knife (7) and the coarse mincing plate (10) or optionally the distance piece (4).
  4. Insert the sausage filling funnel with the thin end from inside through the closing ring. Screw on the closing ring.

All fresh ingredients must be cooled to approx. 4^

When using rind, these must be cooked before processing.

Order the natural sausage casing from your butcher.

It is not necessary to use special pickle salt for sausage, in particular for sausages which are used fresh, but in this case the sausage will have a greyish colour.

For preparing dried hard sausage like salami, special nitrite pickle salt is required to conserve the sausage.

Grill sausages

800g lean pork meat, 200g lean pork belly without rind, 1 tbsp salt, 12 tbsp nutmeg, 1/3 tsp marjoram, 1 tsp lemon peels, 1 tbsp white wine

Pass the meat through the medium mincer plate.

Mix the meat with salt and spices and cool it.

Fill the mass into natural pork casings as described above.

The fresh sausages can be grilled or cooked.

Liver paté

2,5 kg cooked pork meat, 1 kg pork liver, 500 g cooked liver rinds, some meat stock, 75 g salt, 1 onion, 1 portion of liver sausage spices

Pass meat, liver, and rinds two times through the mincer. Chop the onion and brown it. Mix all ingredients and season the mass.

Fill the mass into the prepared casings, but only fill to a maximum of 2/3 to avoid the casing from bursting during cooking.

Cook for about 1 hr in slightly simmering meat stock. Pick the casing with a needle to allow the air to escape.

Preparation of kebbe

Kebbe are an oriental delicacy. The meat is not used for the filling but for the preparation of the outer shell, which is filled with rice, vegetables, meat etc. To prepare such shells, you need special attachments (see page 1, parts 3a and 3b).

Kebbe shells

450 g lean lamb, veal or beef meat, 150-200 g flour, 1 tsp pimento, 1 tsp nutmeg, 1 pinch of chili powder, 1 pinch of pepper

  • If the meat portion in increased and the flour portion is decreased, the consistency and taste of the shells will become better.

Pass the meat 3 times through the mincer (coarse, medium, fine) and mix the minced meat with the other ingredients. Then pass again 2-3 times through the mincer.

Remove mincing plate and knife.

Attach the kebber attachments (3a and 3b), fix the closing ring.

Pass the meat mass through the mincer. It will be pressed out in form of a tube. Cut these tubes into the required length. Place the tubes one near the other on a dish and put them into the freezer for some time. Filling will be easier, when the shells are slightly frozen.

Then fill the shells with a stuffing according to the recipe below or to your personal taste and roast the shells in olive oil.

Meat stuffing

100 g lamb meat, 1 12 tbsp olive oil, 1 12 tbsp chopped onions, 1 12 tsp pimento, 1 12 tsp salt, 1 12 tbsp flour

Pass the meat 1-2 times through the mincer. Roast the onions and mix all ingredients with the meat. Fill the meat into the shells and roast them in a pan.

Vegetable or rice stuffing

Season 250g of cooked broccoli or 250g cooked courgettes and 250g of cooked rice according to your taste, fill the kebbe shells and roast them.

Preparation of shortbread biscuits

  1. Prepare a shortbread dough according to the recipe below.
  2. Insert either the knife (7) and the coarse mincing plate (10) or the distance piece (4).
  3. Remove the pattern plate from the shortbread attachment.
  4. Fit the shortbread attachment into the worm housing and fix it with the closing ring. Take care that the attachments are kept in position.

Almond shortbread

375 g of butter or margarine, 250 g sugar, Vanilla sugar to taste, 1 pinch of salt, 1 egg, 500 g of flour, 125 g of grated almonds

Whip the butter with sugar, then add vanilla sugar, salt, egg and flour as well as the grated almonds.

  1. Now reassemble the pattern plate and choose your preferred pattern.
  2. Fill the dough into the feeding tube.
  3. Switch the appliance on and press the dough into the worm housing by means of the feed-stick.
  4. The dough comes out in the desired pattern and can be cut into pieces.
  5. Place the dough pieces on a baking plate as sticks, S-forms, or circles and bake the biscuits.

Install the shortbread attachment as described above and pass the dough through the mincer. Form shortbread and place it on a greased baking sheet. Bake for approx. 10 minutes at 180^ . Decorate with chocolate coating. Almonds can be replaced by hazelnuts, walnuts or coconut flakes.
