INSTALLATION

This equipment must be installed by a qualified installer in accordance with all federal, state and local codes. Failure to install this equipment properly can result in injury or death.

Donotinstallorusewithout4"legs.Useofthisequipment withoutlegscancausetheappliancetooverheatandcause afire.

CAUTION
Anyloosedirtormetalparticlesthataareallowedtoenterthegas linesonthisappliancewilldamagethevalveandaffectits operation. Wheninstallingthisappliance,allpipeandfittingsmust befreefromanyinternalcontaminates.Itisrecommendedthat a sedimenttrapbeinstalledin-linebeforetheregulator.
ApplicableCodesandStandards
UnitedStates
Vollrathrecommendsthatallcommercialcookingequipmentbeprovided withaventilationsystemincompliancewithNFPA96.
- Cookingequipmentthatusesorproducesgrease(e.g.fryer,griddle), mustbeprovidedwithhoodsthataredesignedtocapturegreaseand providefireprotection.
- Equipment must be installed in accordance with the requirements and approval of the AHJ "Authority Having Jurisdiction."
NOTICE: Postinstructionstobefollowedintheeventtheusersmells gas. Consultyourlocalgassupplierfortheseinstructionsand postinaprominentlocation.
NOTICE: The installation of this equipment must conform with local codes, or in the absence of local codes, with the National Fuel Gas Code, International Fuel Gas Code, ANSIZ223.1/NFPA54, or the Natural Gas and Propanel Installation Code, CSAB149.1, as applicable.
InstallandLeveltheLegs
Ensure that the equipment is level in all directions. Begin by tightening each leg securely. Then, as needed at each corner, rotate the adjustable foot.
GasPiping
- Gaspiping must be sized to ensure sufficient pressure and flow to meet the full-rated gas input of the equipment.
- Connectiontoanexistingsystemrequiresthattheexistingsystemhave excesscapacityequaltoorgreaterthanthefull-ratedgasinputofthe equipment.
- Jointcompound(pipedope)shouldbeusedsparinglyandonlyonthe malethreadsofthepipejoints.Suchcompoundsmustberesistantto theactionofliquidpropane(LP)gases.
PressureRegulator
NOTICE: All commercial cooking equipment must have a pressure regulator on the incomingserviceline for safe and efficient operation.
NOTICE: Prior to connecting the regulator, check the incoming line pressure. Theregulator can only withstand a maximum pressure of 12 PSI (14" WC). If the line pressure is beyond this limit, a step-down regulator before the regulator provided will be required.
NOTICE: The appliance and its individual shutoff valvemust be disconnected from the gassupply pipingsystem during any pressure testing of that system test pressures in excess of 1/2 psi (3.5kPa).
NOTICE: The appliance must be isolated from the gassupply piping system by closing its individual manual shutoff valved during any pressure testing of the gassupply piping system at test pressure equal to less than 1/2 psi (3.5 kPa)
- Thearrowforgedintothebottomoftheregulatorbodyshowsgasflow direction, and shouldpointdownstreamtotheequipment.
- Theregulatorprovidedwiththisequipmentisconfiguredforusewith naturalgas.FollowingtheinstructionsintheLPConversionKit,itcanbe reconfiguredforusewithLPgas.
- The equipment comes fitted with a ^3/4 "N.P.T male adapter for connection to the pressureregulator.
- Check the pressure of the incoming gas line. There regulator can withstand a maximum pressure of 14" WC (½ PSI). If the line pressure is beyond this limit, a step-down regulator will be required.

ManualShut-OffValve
Amanualshutoffvalveshouldbeinstalledinanaccessiblelocationwithin 6ft.(1.8m)oftheequipment.

TesttheEquipment
CheckforGasLeaks
NOTICE: Matches, candleflame, oranyotherpotentialsourceof ignitionshallnotbeusedforthispurpose.
- Rotatethegascontrolknobforthemainburner(s) totheOFF position.
- Connecttheequipmenttothegassupply.
- Applysoapywatertoeachconnection.
- TurnONthemainsupplyvalve.
- Lookforbubblesattheconnections.
- Adjust the connections as needed.
LightthePilotBurners
NOTICE: Tolighthepilotburner, you will need a flamesource with an extension which is at least 8" (20.3cm) long. Hold the flamesourcethrough the opening in the front panel near thered button for the pilot light you are lighting.
- TurnOFFthemaingasvalvetogriddle.
- TurnOFFalloftheburnercontrolvalves.
- Wait5 minutestoallowanygastodissipate.
- TurnONthemaingasvalve.
- Foreachmainburnerandpilotburner, confirm that thermocouple (currently at room temperature) is preventing the flow of gas. If the thermocouple is defective, replace it before proceeding to Step 6.
- Lightthepilotburnerwhilepressingtheredbuttonontheflame failureprotectiondevice.Holdthebuttonforatleast10secondsto allowthepilotflametoengagethethermocouple.
TesttheMainBurners
Afterlightingallofthepilotburners,ensurethateachmainburner functionscorrectly.

BEFOREFIRSTUSE
BurnIntheEquipment
- Rotatethegascontrolknob(s)tothemaximumsetting.
- Allow griddle to heat and burn-infor approximately 30-minutes.
NOTICE: You may notices smoking during this initial burn-in; this is normal.
SeasontheGriddleSurface
- While the griddle is warm, rub cooking oil, shortening, beef suet, or the like on the griddle surface with a clean cloth.
- Heatthegriddletomediumhighandallowittooperatefor approximately30minutes.
- Rotatethegascontrolknob(s)tolowandallowthesurfacetocool.
- Remove any excess soil and wipe clean.
5.Repeattheprocess;oil,heatfor30minutes,cool,andwipeclean.
OPERATION

Donottouchanyelectricalswitches;donottrytolightthe burner;donotuseatelephonewithincloseproximity.

Hotliquidsandsteamcanburnskin.Neverpouranyliquid otherthanoiltobeusedforcookingontohotsurfaces.

Ensure that the cookings surface has cooled down before touching by hand.
- Verify that the triptayisin place.
- Lightyoilandwipethesurfacecleantoremoveanycontaminants that may have accumulated or have seeped from the surface and/or perimeters in celastuse and to ensure a cleavage on - stick cooking surface.
- Ignitethemainburner(s) by rotating the gas control knob(s). Adjust to the desired heat level.
- Preheatthegriddlefor15minutes.
5.Cookthefood. - Emptythedriptrayperiodicallytoensurethatitdoesnotoverflow.
- Donotallowoilorgreasetobuilduponthegriddle. Doingsocan leadtocarbonbuild-up, which can adversely affect the performance of the griddle.
- Allow the griddlet to cool at the end of each cooking cycle.
CLEANING

Hotsurfacesandfoodcanburnskin.Allowthehotsurface to coolbeforehandling.Donotdroporspillwaterontothe cookingsurfaceasitcansprayorsplatter.
Tomaintaintheappearanceandincreasetheservicelife,cleanyour equipmentdaily.
NOTICE: Donotcleantheequipmentwithsteelwool.
NOTICE: Donotusecleaningchemicalsorsoapsasthesecanbe absorbedbythesurfaceand/orseepintotheperimeterof thegriddleandaffecttheflavorofthefood.Ifnecessary, useonlycleanwater,oil,and/orafoodgradedegreaser forthecleaningprocess.
NOTICE: Topreventcorrosion, donotallowthegriddlesurfaceto remainunseasonedorwithoutathincoating of cooking oil.
Daily
- While the griddle is still warm, use grill brush or grill brick to remove burnt food and grease.
- Remove, empty and clean the drip tray.

Cleanthe exterior of the equipment.

Turnoffthegriddleandallowittocool.
- Applyathincoatingofcookingoiltopreventcorrosion.
Weekly
- Perform the daily cleaning process. Donot apply oil to the griddle.
- Allow the griddlet to cool completely.
- Thoroughlycleanthegriddleplatewithafood-gradedegreaser.
4.Seasonthegriddle.SeeSeasontheGriddleSurfaceunderthe BEFOREFIRSTUSEsection.
