Vollrathrecommendsthatallcommercialcookingequipmentbeprovided withaventilationsystemincompliancewithNFPA96:
Cooking equipment that uses or produces grease (e.g. fryer, griddle), must be provided with hoodsthat are designed to capture grease and provide fire protection.
- Equipment must be installed in accordance with the requirements and approval of the AHJ. "Authority Having Jurisdiction."
NOTICE: Postinstructionstobefollowedintheeventheusersmells gas. Consultyourlocalgassupplierfortheseinstructionsand posttheminaprominentlocation.
NOTICE: The installation of this equipment must conform with local codes, or the absence of local codes, with the National Fuel Gas Code, International Fuel Gas Code, ANSI Z223.1/ NFPA54, or the Natural Gas and Propanel Installation Code, CSAB149.1, as applicable.
InstallandLeveltheLegs
Ensure the equipment is level in all directions. Begin by tightening each leg securely. Then, as needed dateach corner, rotatethe adjustablefoot.
GasPiping
Gaspipingmustbesizedtoensuresufficientpressureandflowtomeetthefull-ratedgasinputoftheequipment.
- Connectiontoanexistingsystemrequiressthattheexistingsystem havecapacityequaltoorgreaterthanthefull-ratedgasinputofthe equipment.
Jointcompound(pipedope)shouldbeusedsparinglyandonlyonthe malethreadsofthepipejoints.Suchcompoundsmustberesistantto theactionofliquidpropane(LP)gases.
PressureRegulator
NOTICE: All commercial cooking equipment must have pressure regulators on the incoming serviceline for safe and efficient operation.
NOTICE: Priortoconnectingtheregulator, checktheincomingle pressure. Theregulatorcanonlywithstandamaximum pressure of 1/2 PSI (14"WC). If the line pressure is beyond this limit, astep-downregulatorbeforetheregulatorprovided willberequired.
NOTICE:Theapplianceanditsindividualshutoffvalvemustbe disconnectedfromthegassupplypipingsystemduringany pressuretestingofthatsystemmattestpressuresinexcessof 1/2psi(3.5kPa).
NOTICE:Theappliancemustbeisolatedfromthegassupply piping systembyclosingsitsindividualmanualshutoffvalveduring anypressuretestingofthegassupplypipingsystematest pressureseualtolessthan1/2psi(3.5kPa).
Thearrowforgedtothebottomoftheregulatorbodyshowstegas flowdirection,andshouldpointdownstreamtothequipment.
- Theregulatorprovidedwiththisequipmentsisconfiguredforuseewith naturalgas.FollowingtheinstructionsintheLPConversionKit, itcan bereconfiguredforusewithLPgas.
- The equipment comes fitted with a 3/4" N.P.T. male adapter for connection to the pressureregulator.
- Check the pressure of the incoming gasline. Theregulator can withstand a maximum pressure of 14^ WC (1 / 2 PSI). If the line pressure is beyond this limit, astep-downregulator willberequired.

Amanualshut-offvalveshouldbeinstalledinanaccessiblelocation within6ft.(1.8m)ofthequipment.
TesttheEquipment
CheckforGasLeaks
NOTICE:Matches,candleflame,oranyotherpotentialsource of ignitionsshallnotbeusedforthispurpose.
1.Rotatethegascontrolknobsforthemainburner(s)totheOFF position.
2. Removethegascontrolknob(s).
3.Usea5/16'nutdrivertoremovethe4screwssecuringthefront panel.Removethefrontpaneltoaccesssthepilotburnercontrol valve(s).
4. Locatethepilotburnercontrolvalvesforeachpilotlightandturn themOFFbyturningthesmallforward-facingscrewclockwiseuntil tight.
5. Connect the equipment to the gas supply.
6. Apply soapaywatertoachconnection.
7. TurnONthemainsupplyvalve.
8.Lookforbubblesattheconnections.
9.Tightentheconnectionsasneeded.
LightthePilotBurners
1.Wait5minutestoallowanygastodissipate.
2.Tolightthepilotburners,holdaflamesourceoverthedesiredpilot burnerwhileslowlyturningitscontrolvalvescrew counterclockwise,adjustingtheflametothehedesiredintensity. RePEATforallpilotburners.
TesttheMainBurners
Afterlightingallofthepilotburners,ensurethateachmainburner functionscorrectly.
Afterthelightingthepilots,themainburnerscanbeignitedbypushing andturningthecontrolknobfromthe"off"positiontothedesired setting.Visuallycheckthathepilotlightnitesthemainburner.
Themainburnerscanbeextinguishedbyturningthecontrolknobback tothe"off"position. The pilotlightscanbeextinguishedbyshuttingoff thegassupplyattheshut-offvalveinstalledonthegasline.
BEFOREFIRSTUSE
Burn-IntheEquipment
- Rotatetegascontrolknob(s) tothemaximumsetting.
- Allow griddletoheat and burn-infor approximately 30 minutes. NOTICE: You may noticesmoking during this initial burn-in; this is normal.
SeasontheGriddleSurface
- While thegriddle is warm, rub cooking oil, shortening, beefsuet, or the like on the griddlesurface with a cleancloth.
- Heatthegriddletomediumhighhandallowittooperatefor approximately30minutes.
3.Rotatethegascontrolknob(s)tolowandallowthesurfacecool. - Removeanyexcessoilandwipeclean.
Repeattheprocess;oil,heatfor30minutes,cool,andwipeclean.

1.Verifythatthedriptyrisinplace.
2.Lightlyoilandwipethesurfacecleantoremoveanycontaminants thatmayhaveaccumulatedorhaveseepedfromthesurfaceand/or perimetersincelastuseandtoensureacleannon-stickcooking surface.
3.Ignitethemainburner(s)byrotatingthegascontrolknob(s).Adjust tothedesiredheatlevel.
4.Preheatthegriddlefor15minutes.
5.Cookthefood.
6. Emptythrieptrayperiodicallytoensureitdoesnotoverflow.
7.Donotallowoilorgreasetobuilduponthegriddle.Doingsocan leadocarbonbuild-up,whichcanadverselyaffecttheperformance ofthegriddle.
8. Allow the griddle to cool at the end of each cooking cycle.
AdjustingthePilotLight
Fromtimetotimethepilotlightintensitymayneedtobeadjustedto properlyignitethemainburners.
- With the pilot lightignited, useaflatheadscrewdriver turn the exposed slotted brass screw. Turn the screw clockwise to decrease intensity and counter-clockwise to increase intensity.
2.Determine the proper intensity toignitetheburner flames. Burners shouldignitefrompilotinunder4seconds.
CLEANING

- While the griddle is still warm, use agrillbrush or brick to remove burton food and grease.

4. Turnoff the griddle and allow it to cool.
5. Applyathincoatingofcookingoiltopreventcorrosion.
