FUNCTIONANDPURPOSE
This equipment is intended to be used for cooking pizza and bread products indirect contact with ceramic decks. It is not intended for household, industrial or laboratory use.

- Remove all packing material and tape, as well as any protective plastic from the equipment.
- Cleananyglueresidueleftoverfromtheplasticortape.

WARNING

Donotinstallorusewithout4"legs.Useofthisequipment withoutlegscancausetheappliancetooverheatandcausea fire.
The included legs must be installed to comply with NSF. Turn the feet to adjust the legs until the equipment is level.

BThermostatControlDial. Usedtosetoradjustthetemperature oftheoven. Thenumbersonthedialcorrespondwiththeoven temperature. The "0" positionisoff.
CPilotLight. Thislight indicates that the oven is heating. Once the set temperature has been reached the light will go out. Equipment will continue to maintain heat and temperature with the light cycles on and off. This light is not a power "on" indicator.

BEFOREFIRSTUSE
Beforeusing,theCayenne ^® Pizza/BakeOvenitmustbethoroughly cleanedandburned-in.
CleantheEquipment
- SeetheCleaningsectioninthismanual.
Burn-intheEquipment
- Check that the ceramic decks are clean and dry.
- Plugtheequipmentintoaproperlygroundedelectricalsupply matchingthenameplaterating.
NOTICE: Damagetotheequipmentcanoccurifincorrectpoweris suppliedtoequipment. - Turnthethermostatcontrolto400°F(204°C)for45minutesto 1hourwiththeovendooropen.Youwillnoticeodorappearingdue totheceramicdeck(cooking/bakingsurface)burning-in.This is normal.
- Closethedoorandturnthethermostatcontrol500°F(260°C). Run theovenfor2hours.

Thetemperaturerangerequiredforpizzabakingisusuallyhigherthan forgeneralbaking.Ideallypizzashouldcookatapproximately500°F (260°C)to575°F(301°C).
Thepizzashouldbeallowedtobakeuntilthecheesebubblesandthe bottomcrustisbrown.
- Alwaysensure that the food products or pizzacrust is fully defrosted before baking.
- Rotation of the pizzaduring the baking cycle is highly recommended.
- Pizzawithaheavytoppingwillrequirealongerbakingtimeata lowertemperature.
