To reduce risk of injury or damage to the unit:
- Only plug this unit directly into a grounded electrical outlet thatmatches the nameplate-rated voltage. Do not use extensioncords or power strips of any kind.• Use unit in a flat, level position.• Turn o, unplug, and let the unit cool before cleaning or movingand when not in use.• Outside of unit should not be sprayed with liquid or foam.• Clean unit with something other than steel wool.• Keep unit and power cord away from open flames, electricburners, and excessive heat.• Operate in non-public areas, away from children—and attendthe unit during use.• Only operate properly functioning, undamaged units.• Clean the unit daily.• Do not set anything on top of the unit or door; never stack units.• The unit may be hot, even though the indicator light is o. FUNCTION & PURPOSE These units are intended to bake pizza and various breads in direct contact with ceramic decks. They are not intended for household, industrial, or laboratory use.
1. Remove packing material, tape, and protective plastic.2. Clean any glue residue left over from the plastic or tape.3. Place the unit in desired location.4. Plug unit into a properly grounded electrical supply matchingthe nameplate rating.NOTICE: Using incorrect voltage can cause damage andwill void the warranty.Item Model DescriptionPBO4-208240 PBOV-208240 Pizza/Bake Oven–208-240V CLEARANCE & ENVIRONMENT WARNING Fire Hazard, Injury, or Property Damage.Unit must be installed by qualified personnel in accordance with all federal, state, and local codes. Improper installation can result in injury or death. Unit must be used with included legs to avoid overheating and fire. • This unit should be installed adjacent to non-combustiblesurfaces in a flat location.• Ensure unit is level to avoid damage during operation.• Ambient temperatures must be at or below 104 °F (40 °C).• Install included 4" legs to meet agency requirements.• To avoid damage, plug the unit into a properly groundedelectrical supply that matches the nameplate rating.
1. Clean the unit per the Cleaning and Maintenance section.2. Turn Bake Control to 400 °F (204 °C) for 1 hour with the ovendoor open. Odors from burning in ceramic decks are normal.3. Close the door and turn the thermostat control to 500 °F(260 °C). Run the oven for 2 hours. OPERATION CAUTION Burn Hazard.Do not touch cookware, heating surface, food, or metal portions of the unit during operation.Countertop Pizza/Bake Oven
Removing the Door for Cleaning
1. Turn o and unplug unit and allow it to cool completely.
2. Open door to locate vertical locking tabs on the hinges;
use your finger to pull locking tabs so they are horizontal.
3. Slowly close the door until it will not close any further; then
lift up on the door so hinges release from receivers. Installing the Door
1. Line up the slot at the bottom of each hinge with the
receiver front so that hinges drop into place.
2. Fully open the door to the horizontal position.
3. Push the Locking Tabs back to the vertical position.
4. Close the door to ensure it is working properly.
OPERATION—PIZZA BAKING INSTRUCTIONS & TIPS
- The temperature range for pizza baking is usually higher than general baking, typically 500–575 °F (260–302 °C).
- Bake pizza until cheese bubbles and bottom crust is brown.
- Ensure food and crust are fully defrosted before baking.
- It is highly recommended to rotate pizza during baking.
- Bake pizza with more toppings longer, at lower temperatures.
- Follow cooking/baking instructions provided on pre-made food. FEATURES & CONTROLS A. Bake Light—turns on and off as the heating elements cycle. B. Bake Control— sets baking temperature between 150 °F - 750 °F (66 °C - 399 °C); 0 is off. Bake Timer (D) must be set for heating elements to operate. C. Bake Timer Light—indicates when the Bake Timer and Bake Control are set. D. Bake Timer—determines time in Bake Mode from 5-30 minutes or can be set to continuously ON. CLEANING & MAINTENANCE WARNING Electrical Shock Hazard. Keep water and other liquids from entering the unit. Liquid inside the unit could cause an electrical shock or short circuit. Do not immerse the cord, plug, or unit in water or any other liquid—or operate if the unit or cord are damaged or altered. WARNING Burn Hazard. To avoid burns and splattering, do not touch cookware, heating surfaces, or food—or drop water onto cooking surfaces while operating. NOTICE: Clean the unit daily. NOTICE: Do not use water on ceramic decks—or caustic chemicals, steel wool, or commercial cleaners on the unit.
1. Turn o and unplug the unit.
2. Protect your hands and remove hot food.
3. Allow unit to cool completely.
4. Wipe the outside of the unit with mild soap and a little water.
5. Completely dry the unit with towels or allow it to air dry.
6. Scrape out spillage on ceramic decks.
7. For hard-to-clean, baked-on food on decks:
a. Turn unit to the maximum temperature for 30 minutes. b. Allow unit to cool, then brush away deck residue.

Contact Vollrath Technical Services. Heating control malfunctioned. Pilot light does not work. The light has malfunctioned. SERVICE & REPAIR Serviceable parts are available on vollrathfoodservice.com. To avoid serious injury or damage, never attempt to repair the unit or replace a damaged power cord yourself. Do not send units directly to The Vollrath Company LLC. Please contact Vollrath Technical Services for instructions.
