Congratulations! You have just purchased the Cuisinart® electric slow cooker (model PSC650E).
Continuing research into innovation and the care taken when developing this product together guarantee a very practical appliance for even, autonomous and energy-efficient cooking. The three gentle cooking settings will let you prepare your food without drying it out and with very little evaporation.

3 USE
A. Assembly instructions
- Before using the slow cooker for the first time, wash the ceramic bowl and the glass lid in warm soapy water or in the dishwasher then rinse well and dry.
- Wipe the inside and the outside of the base of the slow cooker with a soft damp cloth.
- Place the ceramic bowl in the slow cooker base and place the lid onto the bowl.
- Finally, plug in the retractable power cord. The slow cooker is now ready to use.
B. Operating instructions
Slow cooking involves cooking food very gently in its own juice or in a sauce, generally in a casserole. After adding a liquid, the preparation is then covered again with the lid and simmered over low heat for the preparation time called for in the recipe.
For traditional dishes (beef Bourguignon, mutton stew, Provençal stew, etc.) it is preferable to brown the meat over high heat before cooking it in the bowl to eliminate fat and give it a colour that will improve the taste of your preparation.
- Put the recipe ingredients in the bowl.
- Place the cooking bowl on the base.
Cover with the lid. - Turn the unit on.
- Set to the desired cooking setting (blue diode).
- Set the desired cooking time in 30-minute increments.
- When the cooking is finished, the unit will switch automatically over to the keep warm setting.
- Turn the unit off at the desired time or allow it to turn itself off after 8 hours.
Adjusting the timer: Lets you programme the cooking time according to the type of food.
Programming is divided into 30-minute increments over 24 hours. Once the cooking time finishes, the unit automatically switches to the keep warm setting (for 8 hours).

C. Cooking settings
SIMMER: for simmering over gentle heat (about 78^ )
You can use it to simmer delicate or fragile foods like fish or fruit that need to be cooked evenly. This type of cooking is also ideal for intensifying the blending of the flavours or aromas during cooking. It generally requires more time to cook this way and will vary according to the type of food to cook.
LOW: for traditional simmering (about 84^ )
At this setting, preparations can be simmered at a temperature usually recommended in cooking. This setting should be used preferably to cook staples and foods that are not very fragile (white meats like poultry, vegetables, deli foods).
HIGH: for quick simmering (about 96^ )
Lets you speed up the cooking process. The heat released for cooking will always be gentle but higher. This setting allows cooking foods that require cooking more and generally longer to allow the flavours and aromas to penetrate (chuck, shank, hock, shoulder, offal). The cooking time varies between 4 and 5 hours depending on the food to be cooked.
WARM: for keeping warm
This is not a cooking setting but it keeps the food warm once the cooking is finished. Keep warm starts automatically once the programmed cooking time has finished.
We recommend keeping the food warm for about 1 to 2 hours after cooking and then unplugging the unit.
4 ADVICE FROM THE CHEFS
- For quick and even cooking, cut the food before you begin.
- Avoid lifting the lid during cooking so that the ambient heat is maintained.
- Use the tip of a knife to test whether the food is cooked.

Always use the bowl provided with the unit to cook with the slow cooker.

Very little liquid is lost through evaporation when cooking in the electric slow cooker. The amount of liquid called for in your recipes should be adjusted to the appliance.
- Defrost frozen foods before using in a recipe.
- When a recipe calls for bouillon, it is best to use a hot bouillon to speed cooking.
- To thicken sauces, add beurre manie (mixture of butter and flour), or a little cream, at the end of cooking to prevent the sauce from curdling.
- Another technique is to add flour immediately after having returned the pieces of meat and the aromatic garnish to the bowl. Then, after cooking, add the cooking liquid for a thick and creamy sauce.
- By using the rack provided and adding some water to the bowl, you can cook delicate preparations, like crèmes brûlées, crèmes caramels, foie gras pâtés, fish loaves, etc. in a bain-marie.
- All recipes with a wine marinade base have a very pronounced flavour because very little alcohol evaporates during cooking.

6 CLEANING AND STORAGE
- Unplug the Cuisinart® and allow to cool before cleaning.
- Wash the ceramic bowl and lid in the dishwasher, or clean them with hot, soapy water. If food is stuck to the bowl, fill it with warm, soapy water and allow to soak before cleaning.
- If scouring is necessary, use a liquid detergent with a brush or a nylon sponge. Do not use an abrasive sponge.
- To clean the body of the unit, use a damp cloth and a little soft detergent. Do not use abrasive sponges or cleaning products. DO NOT IMMERSE THE BODY IN WATER OR ANY OTHER LIQUID.
7 SAFETY INSTRUCTIONS
Always follow the safety instructions to avoid injuring yourself or damaging the unit. Use this unit according to the instructions in this manual.

ATTENTION: The plastic bags in which the unit is wrapped or which are used for the packaging may be dangerous. To avoid all risk of suffocation, keep these bags out of the reach of babies and children. The bags are not toys.

Never immerse the hot cooking container in cold water.
- Never fill the slow cooker bowl to more than two-thirds its capacity.
- Never reheat frozen foods in the slow-cooker.
Always finish cooking that has started. - Follow the cooking instructions provided on the food packaging.
- Do not use outdoors.
- For household use only.
- Do not place the unit in a damp or wet place.
- Do not place the unit on or near a heating appliance.
- Do not use the unit on heat-sensitive surfaces or near inflammable materials.
- Do not place the bowl in the oven; do not use on gas or an electric element.
- Do not allow the cord to hang over the work-top, and do not let it touch hot surfaces.
- Avoid touching the hot surfaces of the unit.
- Allow the unit to cool before storing.
- If the bowl is damaged, stop using it immediately.

Always unplug the unit when it is not in use, when it needs to be moved or before cleaning. To unplug the unit, always pull on the plug, never on the cord.

Be particularly careful if using the unit near children. Store the unit out of the reach of children. Do not allow children to use the slow cooker.
- Do not use the unit if it has been dropped or if it appears damaged.
- If the power cord is damaged, it must be replaced by the manufacturer, its after-sales service or a similarly qualified professional to avoid danger.
- Do not attempt to repair the appliance yourself.
- Use of any accessories not recommended or sold by Cuisinart® could result in fire, shock or risk of injury.
- This unit is not intended for use by people (including children) whose physical, sensory or mental capacities are reduced, or by persons who lack experience or knowledge, unless they are supervised or have been given instructions beforehand on the use of the unit by a person responsible for their safety. Children should be supervised to make sure they do not use the unit as a toy.
