Congratulations on the purchase of your new appliance.
You have selected a high-quality product. The operating instructions are part of this product. They contain important information about safety, usage and disposal. Before using the product, please familiarise yourself with all operating and safety instructions. Use the product only as described and for the range of applications specified. Retain these instructions for future reference. Please also pass these operating instructions on to any future owner.
Intended use
This sous-vide cooker is designed exclusively for cooking vacuum-packed foods. The appliance is not intended for any other purpose, nor for use beyond the scope described. The appliance is not intended for use in commercial or industrial environments. Claims of any kind for damages resulting from misuse, improper repairs, unauthorised modifications or the use of unauthorised spare parts are excluded. The risk shall be borne solely by the user.
What does sous-vide mean?
Sous-vide (French for under vacuum) or vacuum cooking is a special cooking method in which the food is first vacuum-packed in special plastic bags and then cooked at a low temperature in a water bath. The cooking temperatures remain under 100°C, which makes it a very gentle cooking method. The low temperatures change the products more slowly at a molecular level, making the cooking results all the more tender and juicy. In sous-vide cooking, the airtight packaging retains nearly all the flavour and nutrients, this making vacuum-cooked food particularly flavoursome.
The aromas of spices and other flavours become more intense under a vacuum. Therefore, use them sparingly and add more later if necessary.
Another benefit is that the core temperature can be controlled exactly - so the rule of thumb is: water temperature = core temperature. Overcooking the food is almost impossible if the temperature has been correctly selected as the individual ingredients do not get any hotter than the temperature of the water.
You will need the following accessories (not supplied) to cook using the sous-vide method:
- vacuum sealer
- special vacuum bags or plastic bags that are heat-resistant and contain no plasticizers or similar that can be absorbed by the food.
Safety information

DANGER - RISK OF ELECTRIC SHOCK!
▶ Check the appliance for visible external damage before use. Do not use the appliance if the mains cable or appliance itself has been dropped or there is visible damage.
The appliance may only be used in dry indoor rooms.

Never immerse the appliance in water or other liquids!
▶ Ensure that the electrical connections never come into contact with water! Allow the appliance to dry completely if it becomes wet.
▶ Do not allow any liquid to run over the appliance connector.
▶ Ensure that the power cable never becomes wet or damp when the appliance is in use. Route the cable so that it cannot be trapped or damaged in any way.
- Arrange for defective power plugs and/or cables to be replaced as soon as possible by a qualified technician or by our Customer Service Department to avoid the risk of injury.
▶ All repairs must be carried out by authorised specialist workshops or by the Customer Service department. Improper repairs may put the user at risk. They will also invalidate any warranty claims.
To completely disconnect the appliance from mains power, the power plug must be removed from the mains power socket. The appliance should be set up in such a way that you have unrestricted access to the mains socket at all times, and can pull out the plug immediately in an emergency.
- When unplugging the appliance, always pull on the plug rather than on the cable.

DANGER - RISK OF FIRE!
Before switching on, place the appliance on a level, stable, dry and heat-resistant work surface.
The appliance does not need to monitored continuously during use, but should be checked regularly. This is especially important if long cooking times are set.
- Do not use an external timer switch or a separate remote control system to operate the appliance.

WARNING - RISK OF INJURY!
This appliance may be used by children aged 8 years or over if they are supervised or have been told how to use the appliance safely and are aware of the potential risks. Cleaning and user maintenance tasks must not be carried out by children unless they are aged 8 years or over and are supervised. The appliance and its connecting cable must be kept away from children younger than 8 years old.
This appliance may be used by persons with limited physical, sensory or mental capabilities or lack of experience and knowledge, provided that they are under supervision or have been told how to use the appliance safely and are aware of the potential risks.
▶ Do not allow children to use the appliance as a toy.

CAUTION: hot surfaces
The surfaces of the appliance become very hot during use. During operation, only touch the control panel, the lid handle or the handles on the appliance.
▶ Never put your bare hands into the water when you are immersing the vacuum bag in the water bath or removing it.
▶ After use, the surfaces of the heating elements will still have some residual heat.
▶ Misuse may result in physical injury!
CAUTION - PROPERTY DAMAGE!
▶ Never operate the appliance without water. This could cause the appliance to overheat.
- Do not add any foods to the water bath unless they are firmly sealed. Any water getting into the food will produce unfavourable results or spoil the food.
The lid is fragile and can shatter if exposed to sudden extreme temperature changes. Therefore allow it to cool down before you immerse it in water.
▶ Ensure that the appliance, the power cable and the plug do not come into contact with heat sources such as hotplates or naked flames.

Cooking food at core temperature
The following tables show how cooked a piece of food (e.g. a piece of meat) is when the core temperature is reached. This does not change even after longer submersion in the water container ⑤ as the core temperature in the food is never higher than the set water temperature.
The core temperature is the temperature in the middle of the food.
We recommend the following temperatures for a certain degree of cooking:
| Food | Core temperature | Cooking level |
| Beef, lamb, pork and game | 49°C | blue - almost raw |
| 52°C-55°C | rare - cooked around the edge | |
