Frequently Asked Questions - 646-103 Melissa

Can I sharpen scissors with this sharpener?
No, the Melissa 646-103 is only designed for knives. Do not use it on scissors, bread knives, or electric knives with double-sided indentations.
What types of knives can I sharpen?
This sharpener can sharpen alloy steel, carbon steel, and stainless steel knives. It can also sharpen knives with single-sided bevelled indentations, but only in the right-side guides.
How do I sharpen a knife with a single-sided bevel?
Only use the right-side guides (fine sharpening) for these knives. Draw the knife very lightly through the guides to sharpen only the smooth side of the blade. Be aware that indentations will gradually wear away.
Why does the sharpener produce sparks when I use it?
Sparks are normal when sharpening high carbon steel knives. This is not dangerous. Simply wipe the blade with a wet cloth after sharpening to remove any metal shavings.
How often should I empty the metal shavings collector?
Empty the collector from time to time as needed. Remove the black covers over the whetstones, hold the appliance over a dustbin, turn it over and shake carefully to remove the shavings.
Can I use lubricant on the whetstones?
No, do not apply any lubricant to the appliance. The whetstones are designed to work dry. Applying oil or grease could damage the mechanism.
What should I do if the knife is not getting sharp after the first attempt?
Repeat stages 1 and 2 (precision then fine sharpening) several times until the knife reaches the desired sharpness. Some knives, especially tempered steel, may require multiple passes initially.
Is it safe to leave the sharpener unattended while plugged in?
No, never leave the appliance unattended when it is switched on. Always unplug it after use and keep children under supervision nearby.
How should I clean the sharpener?
Clean the exterior with a damp cloth. Do not use scouring pads, steel wool, or strong solvents. Never submerge the appliance in water. Allow it to dry fully before next use.
Can I use this sharpener for bread knives or serrated blades?
No, bread knives and serrated blades cannot be sharpened with this appliance. Only straight-edge knives that fit the guides are suitable.

KEY TO THE MAIN COMPONENTS OF THE APPLIANCE

  1. Left-side guides for precision sharpening (stage 1)
  2. Right-side guides for fine sharpening (stage 2)
  3. Cover plate
  4. On/Off button

1. 1. 2. 2. 3. 4. 3.

USING THE APPLIANCE

The appliance has two sets of knife guides: The left guide (1) is for precision sharpening, and the right guide (2) is for fine sharpening. The guides are precisely angled for optimal sharpening. Left -side and right-side guides sharpen both sides of the knife blade.

Unless otherwise stated, always start with precision sharpening, followed by fine sharpening.

  1. Dampen the suction cups under the appliance with a little water. Place the appliance on a flat, stable surface, e.g. kitchen counter and ensure the appliance is firmly in place.
  2. Plug in and switch on the power.
  3. Switch on the appliance by switching the on/off button (4) to "I".
  4. Stage 1 – precision sharpening: Slowly draw the knife back towards you through one and then the other left-side guide. Repeat the process three times. Do not press down hard on the knife or draw it too fast through the guide. Draw the knife through at a rate of 1 second for every 5 cm of blade.

  5. Keep the knife edge parallel with the table, unless sharpening the point.

  6. Sharpen the point by slightly raising the knife handle, so that the curved part of the blade is drawn through the guide.

  7. Stage 2 – fine sharpening: Slowly draw the knife back towards you through one and then the other right-side guide. Repeat the process three times. Do not press down hard on the knife or draw it too fast through the guide. Take around 3 seconds to draw the knife, depending on the blade length.

  8. Finish the fine sharpening by quickly drawing the knife a single time though each right-side guide (approx. 1 second duration).

  9. You must always wipe the blade with a wet cloth to remove any metal shavings when you have finished sharpening the knife.

  10. Repeat stages 1 and 2 until the knife is sufficiently sharpened.

  11. Turn off the appliance by pressing the On/Off button to "0" and remove the plug from the socket.

IMPORTANT! Never put the knife point first into the sharpener and push it forward. You must always draw the knife back through the sharpener towards yourself.

IMPORTANT! The appliance must not be used to sharpen scissors, bread knives, electrical knives with bevelled indentations or knives with bevelled indentations on both sides.

NOTE! You may have to sharpen the knife several times to achieve the required sharpness. It may be the case that the knife was previously sharpened incorrectly or badly, or the knife is made from tempered steel which is extremely hard. Repeat stages 1 and 2 until the knife cuts easily though food. In such cases, it will usually only be necessary to repeatedly sharpen the knife on the very first occasion. Carrying out stages 1 and 2 will be enough thereafter.

Particular care with knives with single-sided bevelled indentations

The appliance can sharpen knives with single-sided bevelled indentations.

  • These types of knife must only be sharpened in the right-side guides of the appliance, so as to only sharpen the smooth side of the blade.
  • Draw the knife very lightly through the guides.
  • Please note, that a small part of the indentations will be worn away every time the knife is sharpened, and eventually, they will be completely worn away.

CLEANING

When cleaning the appliance, you should pay attention to the following points:

  • Remove plug from the mains socket, and allow the appliance to cool down before cleaning it.
  • Never submerge the appliance in water and make sure no water enters the appliance.
  • Clean the appliance by wiping it with a damp cloth. A little detergent can be added if the appliance is heavily soiled.
  • Do not use scouring pads, steel wool or any form of strong solvents or abrasive cleaning agents to clean the appliance, as they may damage the outside surfaces of the appliance.
  • IMPORTANT! Allow to dry fully after cleaning before using again. Do not use the appliance if damp.
  • Do not apply any kind of lubricant to the appliance.

Emptying the metal shavings collector

From time to time it will be necessary to empty the appliance form metal shavings that accumulate in the collector behind the whetstones.

  1. Remove the black covers (3) over the whetstones. Loosen the cover in front and back with your fingers and lift it off.
  2. Hold the appliance over a dustbin and turn it over and shake carefully to empty the metal shavings.
  3. Replace the covers. Set the long stud into the rear recess first. Ensure the studs on each side of the cover are aligned with the appliance top holes and press into place until you hear a click. The covers can only be fitted in one position because of their curved shape.
