Practical advice

Only use good quality vegetable or corn oil, or light olive oil. Do not use oil that deteriorates quickly or lard. Do not mix different types of oil.

After some frying replace the oil or when it is dense or brown.

When frying different types of food, start with food that requires frying at a lower temperature, then move onto food that requires frying at a higher temperature. (Refer to the COOKING GUIDE)

When frying the same type of food a few times, wait 3–5 minutes between each fry. If the food is pre-cooked, is required a higher temperature and a lower cooking time in respect to uncooked food.

When frying chips insert slowly the basket into the oil, especially if using fresh or frozen chips (containing more water) otherwise the oil could overflow.

Never fill the basket more than halfway (1/4 to 1/2 is ideal), because the oil temperature may go below the optimal temperature and the frying will not be light and crunchy.

The frying times contained in this table are only indicative and must be adjusted according to the amount of fried food.
