INGREDIENTS

  • 2 x 200 g sirloin steak,
  • Black and white peppercorns, to taste

For the sauce

• 1 small onion, diced
• 1 clove garlic, minced
• 100 g mushrooms, sliced
- 15 g butter
• 200 ml double cream
• 200 ml beef stock
- 50 ml brandy
• 1–2 tbsp Worcestershire sauce
• 1 tbsp olive oil
• 1 tbsp Dijon mustard
• Salter and pepper, to taste

METHOD

Step 1

Leave the steaks out of the fridge for approx. 30 minutes to bring to room temperature.

Step 2

To make the sauce, heat the oil and butter in a fry pan and cook the onion over a medium heat until soft.

Step 3

Add the Worcestershire sauce, brandy and stock to the pan.

Step 4

Cook rapidly, deglazing the pan and stirring continuously.

Step 5

Add the mushrooms, mustard, garlic and cream and season with salt and pepper, to taste.

Step 6

Pat the steaks with kitchen paper and press the peppercorns into both sides.

Step 7

Select 'Steak' from the preset functions. Adjust the time or temperature if required.

Step 8

Using heat-resistant oven gloves, place the steaks inside the air fryer and close the compartment.

Step 9

Once the time has finished, remove the steaks and leave to rest for approx. 5–10 minutes.

Step 10

Serve with a choice of sides.

  • 4 lamb chops
    • 2 tbsp garlic, minced
  • 1 12 tbsp fresh
    rosemary, chopped
    • 1 tbsp fresh thyme
    • 1 tsp dried crushed red pepper
  • Fresh rosemary sprigs, optional
  • Salt, to taste

METHOD

Step 1

Mix together the garlic, thyme, chopped rosemary and red pepper in a large bowl.

Step 2

Sprinkle the mixture onto the lamb chops and rub in, then sprinkle with salt.

Step 3

Cover and refrigerate for approx. 2-3 hours.

Step 4

Select 'Manual' from the preset functions. Set the temperature to 200 °C and the time to 10 minutes.

Step 5

Using heat-resistant oven gloves, place the lamb chops inside the air fryer and close the compartment. Once the time has finished, check that the lamb chops are cooked through before serving.

Step 6

Garnish with the fresh rosemary and serve immediately with a choice of sides.

INGREDIENTS

• 2 salmon fillets, approx.
160 g each
- 2 spring onions
• 500 g Maris Piper potatoes
- 70 g unsalted butter
• 20 g fresh coriander, chopped
- 8 g wasabi paste

For the marinade

• 2 spring onions
• 100 ml light soy sauce
- 40 ml water
• 20 ml white wine vinegar
- 20 ml sesame oil
• 180 g brown sugar
• 2 garlic cloves

METHOD

Step 1

Make the teriyaki marinade by whisking all of the ingredients together until the sugar has completely dissolved.

Step 2

Marinate the salmon in the marinade for up to 24 hours before cooking.

Step 3

Peel the potatoes, dice into cubes and place in a pan. Fill with cold water and add a large pinch of salt.

Step 4

Bring to the boil then simmer for approx. 20 minutes until the potatoes are cooked through. Strain in a colander and return to the pan. Add the butter and mash until smooth. Add the wasabi paste and coriander and combine.

Step 5

Remove the salmon from the marinade and pat dry.

Step 6

Select 'Fish' from the preset functions. Set the temperature to 200 °C and the time to 14 minutes.

Step 7

Using heat-resistant oven gloves, place the salmon inside the air fryer and close the compartment.

Step 8

Once the time has finished, check that the salmon is cooked through before serving.

Step 9

Chop the spring onion and garnish the salmon. Serve immediately with the wasabi mash.

METHOD

Step 1

Cut the potato into chips approx. 1 cm wide.

Step 2

Place the chopped potatoes into a pan of cold water and bring to the boil. Parboil for approx. 3 minutes.

Step 3

Drain the potatoes and dry thoroughly using a paper towel.

Step 4

Select 'Chips' from the preset functions. Set the temperature to 200 °C and the time to 18 minutes.

Step 5

Coat the chips with 12 tbsp of cooking oil or oil spray. Using heat-resistant oven gloves, place the chips inside the air fryer and close the compartment.

Step 6

Shake the chips approx. every 5 minutes to ensure they cook evenly.

Once the time has finished and the chips are cooked through and crispy, remove from the air fryer.

• 1 orange pepper, sliced
• 1 courgette, sliced
• 2 tbsp olive oil
- 2 tbsp soy sauce
• 1 tsp mixed herbs
• Salt and pepper, to taste

METHOD

Step 1

Evenly coat the vegetables in olive oil and season with salt, pepper and mixed herbs to taste.

Step 2

Select 'Vegetable' from the preset functions. Set the temperature to 200 °C and the time to 15 minutes.

Step 3

Using heat-resistant oven gloves, place the vegetables inside the air fryer and close the compartment. Once the time has finished, remove the vegetables from the air fryer and check they are cooked through.

Step 4

Serve immediately drizzled with soy sauce.
