FireHazard Donotinstallorusewithout4"legs.Useofthisequipment withoutlegscancausetheappliancetooverheatandcause afire.

CAUTION
Anyloosedirtormetalparticlesthatareallowedtoenterthegas linesonthisappliancewilldamagethevalveandaffectits operation. Wheninstallingthisappliance,allpipeandfittingsmust befreefromanyinternalcontaminates.Itsrecommendedthata sedimenttrapbeinstalledin-linebeforetheregulator.
ApplicableCodesandStandards
UnitedStates
Vollrathrecommendsthatallcommercialcookingequipmentbeprovided withaventilationsystemincompliancewithNFPA96:
- Cookingequipmentthatusesorproducesgrease(e.g.fryer,griddle), mustbeprovidedwithhoodsthataresignedtocapturegreaseand providefireprotection.
- Equipment must be installed in accordance with the requirements and approval of the AHJ "Authority Having Jurisdiction."
NOTICE: Postinstructionstobefollowedintheeventtheusersmells gas. Consultyourlocalgassupplierfortheseinstructionsand posttheminaprominentlocation.
NOTICE: The installation of this equipment must conform with local codes, or in the absence of local codes, with the National Fuel Gas Code, International Fuel Gas Code, ANSIZ223.1/NFPA54, or the Natural Gas and Propanel Installation Code, CSAB149.1, as applicable.
InstallandLeveltheLegs
Ensure the equipment is level in all directions. Begin by tightening each leg securely. Then, as needed at each corner, rotate the adjustable foot.
GasPiping
- Gaspiping must be sized to ensure sufficient pressure and flow to meet the full-rated gas input of the equipment.
- Connectiontoanexistingsystemrequiresthattheexistingsystemhave capacityequaltoorgreaterthanthefull-ratedgasinputofthe equipment.
- Jointcompound(pipedope)shouldbeusedsparinglyandonlyonthe malethreadsofthepipejoints.Suchcompoundsmustberesistantto theactionofliquidpropane(LP)gases.
PressureRegulator
NOTICE: All commercial cooking equipment must have a pressure regulator on the incomingserviceline for safe and efficient operation.
NOTICE: Priortoconnectingtheregulator, checktheincomingline pressure. Theregulatorcanonlywithstandamaximum pressure of 12 PSI (14 ^ WC). If the line pressure is beyond this limit, astep-downregulatorbeforetheregulatorprovidedwill berequired.
NOTICE: The appliance and its individual shutoff valvemust be disconnected from the gassupply pipingsystem during any pressure testing of that system test pressures in excess of 1/2 psi (3.5 kPa).
NOTICE: The appliance must be isolated from the gassupply piping system by closing its individual manual shutoff valve during any pressure testing of the gassupply piping system at least pressure equal to less than 1/2 psi (3.5 kPa)
- Thearrowforgedintothebottomoftheregulatorbodyshowsthegas flowdirection,andshouldpointdownstreamtotheequipment.
- Theregulatorprovidedwiththisequipmentisconfiguredforusewith naturalgas.FollowingtheinstructionsintheLPConversionKit,itcan bereconfiguredforusewithLPgas.
- The equipment comes fitted with a ^3/4 "N.P.T. male adapter for connection to the pressureregulator.
- Check the pressure of the incoming gas line. Theregulator can withstand maximum pressure of 14^(1/2 PSI) . If the line pressure is beyond this limit, a step-down regulator will be required.

Amanualshutoffvalveshouldbeinstalledinanaccessiblelocation within6ft.(1.8m)oftheequipment.
TesttheEquipment
CheckforGasLeaks
NOTICE: Matches, candle flame, or any other potential source of ignitions shall not be used for this purpose.
- Rotatethegascontrolknobsforthemainburner(s)totheOFF position.
- Removethegascontrolknob(s).
- Usea5/16"nutdrivertoremovethe4screwssecuringthefront panel. Removethefrontpaneltoaccessthepilotburnercontrol valve(s).
- Locatethepilotburnercontrolvalvesforeachpilotlightandturn themOFFbyturningthesmallforward-facingscrewclockwiseuntiltight.
- Connect the equipment to the gassupply.
- Applysoapywatertoeachconnection.
- TurnONthemainsupplyvalve.
- Lookforbubblesattheconnections.
- Tightentheconnectionsasneeded.
LightthePilotBurners
- Wait5 minutestoallowanygastodissipate.
- Tolightthepilotburners, holdaflamesourceoverthedesiredpilot burnerwhileslowlyturningitscontrolvalvescrew counterclockwise, adjustingtheflametothedesiredintensity. Repeatforallpilotburners.
TesttheMainBurners
Afterlightingallofthepilotburners,ensurethateachmainburner functionscorrectly.
Afterthelightingthepilots, themainburnerscanbeignitedbypushing andturningthecontrolknobfromthe "off" positiontothedesired setting. Visuallycheckthatthepilotlightignitesthemainburner.
Themainburnerscanbeextinguishedbyturningthecontrolknobback tothe"off"position. Thepilotlightscanbeextinguishedbyshuttingoff thegassupplyattheshut-offvalveinstalledonthegasline.

NOTICE: You may not notice smoking during this initial burn-in; this is normal. - RotatethegascontrolknobstoOFF.
SeasoningGrillGrates
- Allow the charbroilertocoolorheattoawarming temperature of approximately 200°F.
- Rubcookingoil, shortening, beefsuet, orthelikeonthecharbroiler grateswithacleancloth.
- Heatthecharbroilertomediumhighandallowittooperatefor approximately 30 minutes.
- Adjust the burner dial(s) to the lowest setting and allow the charbroilertocoolandstabilize atalowheat.
- Remove any excess soil and wipe clean.
6.Repeatheprocess;oil,heatfor30minutes,cool,andwipeclean.
OPERATION

TIP:Setthegrillgratesatanangle.Thiswillenableliquidstorundown thegratesandintothedriptray,whichwillreduceflare-ups.
- Verifythedriptrayisinplace.Addwatertothedriptray.Water vaporrisingfromthedriptrayandthroughthecombustionchamber willhelptoreduceflare-ups.
- Lightyoilandwipethegratescleantoremoveanycontaminants that may have accumulatedorhaveseepedfromthegrilland/or perimetersincelastuseandtoensureacleannon-stickcooking surface.
- Rotatethegascontrolknobstoignitethemainburner(s).Adjustthe knob(s)tothedesiredheatlevel.
4.Preheatthegrillgratesfor15minutes.
5.Cookthefood - Emptythedriptrayperiodicallytoensureitdoesnotoverflow. Checkthedriptrayfrequentlyandaddwaterasnecessary.
- Donotallowoilgreasetobuilduponthegrillgrates. Wipedown thegrillgratestopreventcarbonbuild-up, which could affect the performance of the grill.
AdjustingthePilotLight
Fromtimetotimethepilotlightintensitymayneedtobeadjustedto properlyignitethemainburners.
- With the pilot light ignited, use a flat head screw driver to turn the exposed slotted brass screw. Turn the screw clockwisetodecrease intensity and counter-clockwisetoincrease intensity.
- Determinetheproperintensitytoignitetheburnerflames. Burners shouldignitefrompilotinunder4seconds.
CLEANING


CAUTION

Hotsurfacesandfoodcanburnskin.Allowthehotsurfacesto coolbeforehandling.Donotdroporspillwaterontothe cookingsurfaceasitcansprayorsplatter.
Topreventflare-upsandtomaintaintheappearanceandincreasethe servicelife,cleanyourequirementdaily.
NOTICE: Donotcleantheequipmentwithsteelwool.
NOTICE: Donotusecleaningchemicalsorsoapsasthesecanbe absorbed by the cookingsurface and affect the flavor of the food. If necessary, use only clean water, oil, and/or a food graded greaser for the cleaning process.
NOTICE: Topreventcorrosion, donotallowthegrate(s) to remain unseasonedor without a thin coating of cooking oil.
Daily
- While the grates are hot (approximately 300^ F), use a grill brush or grill brick to scrub them clean.
- Inspectthegratesanddetermineiftheyneedtobere-seasoned. If theygratesdonotneedseasoning,applyathincoatofcookingoilto thegratestopreventcorrosion.
- Allow the char broilertocool.
- Remove, empty, and cleanthedriptray.
5.Cleantheexterioroftheunit.

- Removetheradiantbars.
- Inspectforwear.lfbarsareworn, orderreplacements.
NOTICE: Donotoperatethecharbroiler with worn radiant bars. This will reduce performance of the charbroiler and may cause flare-ups.

LavaRock
- Flipoverthelavarocks. This will enable any greasethath as accumulated on the top of the rock to burn off.
- Inspect the waffle grate for wear. If the grate is worn, order a replacement.
NOTICE: Donotoperatethecharbroilerwithaworngrate. This will reduce the performance of the charbroiler and may cause flare-ups. - Inspecttherocksforwear. Vollrathrecommendsreplacingtherocks whenthesurfaceisnolongerporous. Eventually, ashand contaminantswillplugtheholesandthelavarockwillnolonger capturethedrippingsandconvertthemtosmoke. Instead, the drippingswillrunoffandriskaflare-up.
