Selecting chocolate
Suitable chocolates
- Chocolate with a high proportion of cocoa butter that is specifically made for chocolate fondues or coating chocolate. The proportion of cocoa should be at least 60%.
- If the amount of cocoa is below 60% it may be necessary to add a little vegetable oil (e.g. cocos oil). Otherwise the chocolate is too viscous and does not form closed loops on the tower.
Unsuitable chocolates
- Chocolate containing whole nuts, almonds or chips. These types of chocolate could obstruct the spiral.
- Do not add any solid or large pieces of chocolate when the motor is running. Never add cold or cooled liquids as this would cause the chocolate to cool down too quickly and might obstruct the auger.
- It's not recommended to use conventional chocolate bars.
Preparation
Melting chocolate
Melt the chocolate in an appropriate pot on the cooker (in a water bath) or in the microwave oven. Do not allow the chocolate to become too hot, as otherwise it will turn grey when it cools down. Make sure to stir from time to time to hinder the chocolate from scorching.
Selection for dipping
Prepare small-cut of fruits for dipping, depending on your preferences e.g. bananas, grapes, strawberries, apples etc. You can also prepare ice-cream cones, nuts, biscuits, waffles, marshmallows etc.
