Frequently Asked Questions - 117002 BARTSCHER

Which ovens can I install this condensation hood on?
The hood is designed for Bartscher Kompakt 1/1 GN combi steam ovens, references D 6110 (code 117261) and D 10110 (code 117201). Simply place it on the top cover of the oven.
How to install the hood on the oven?
Place the hood directly on the oven lid, ensuring it adheres well. Make sure the power cable is not pinched. Remove the protective film before starting.
Do I need to connect the hood to a ventilation duct?
No, the condensation hood does not require connection to the ventilation system. The steam is condensed in the labyrinth filter and drained via the drain line.
How to connect the hood electrically?
The device is supplied with a 2.3 m cable without plug. It must be connected to a suitable multi-pole circuit breaker (0.3 kW, 230 V 50/60 Hz) by a qualified electrician, in accordance with applicable standards.
How does the condensation system work?
The drawn-in steam passes through an aluminum labyrinth filter. The temperature difference between the hot steam and the cold surface of the condenser causes condensation. The water is collected in an internal basin and drained through the drain hose.
What to do if the hood does not condense properly?
Check that the labyrinth filter is clean and the spiral hose is properly connected to the oven exhaust. Ensure the drain line is not blocked. The humidity sensor must be clear.
How often should I clean the filter?
The labyrinth filter must be cleaned regularly, ideally after each intensive use. It can be washed by hand or in the dishwasher. A dirty filter reduces condensation efficiency.
How to clean the exterior of the hood?
Use a soft damp cloth with a mild cleaning agent. Never use abrasive products, metal brushes, or water jets. Dry thoroughly after cleaning.
Can I use the hood without the combi oven?
No, the hood is designed exclusively to be mounted on a compatible combi steam oven. It only works as a steam condensation accessory.
What are the important safety precautions?
Always disconnect the device before cleaning. Do not use with wet hands. Surfaces may be hot after use - let them cool. All repairs must be carried out by a qualified professional.

  • Unpack the condensation hood and remove all packaging material according to the regulations valid in the country of installation.
  • The device must be used in properly ventilated room in order to avoid excessive condensation of harmful substances in the air.
  • Condensation hood does not require connection to the ventilation system, steam and vapours are condensed by the labyrinth filter and removed by the dripping trough.

  • Make sure that no flammable substances are stored or used in the vicinity of the device.

  • The device must not be started in the toxic or explosive environment.

Installation of the condensation hood

  • Put the condensation hood on the upper cover of the combi-steamer (section 4.2 "Technical data") and assure good adherence. Make sure that the supply cable is not blocked between the devices.
  • Remove the protective foil from the device before use. Remove the foil slowly in order to not to leave the glue residuals. Any glue residuals may be removed with use of proper solvent.

DANGER! Electric shock hazard!

The device can cause injuries due to improper installation! Before installation and connecting the local power grid specification should be compared with that of the device (see rating plate). Connect the device only in case of compliance!

  • Before connecting the power supply to the device, the local power grid specification should be compared with the value of voltage and frequency on the type plate. Permissible voltage tolerance is ± 10%.
  • A multipolar switch must be switched on between the device and the electrical installation, appropriate for the device's power. The switch with at least 3 mm opening must be easily accessible.
  • Connection to the power supply installation must comply with the applicable international, national and local regulations.
  • The device is supplied with the connection cable (2.3 m long), without plug.

5.2 Operation

Operation principle

The first steam released through the combi-steamer door passes through the labyrinth filter located on the front wall of the condensation hood.

The operation principle consists in metal (aluminium) condenser through which the sucked steam is passed.

Temperature difference between steam (hot) and aluminium surface (cold) causes steam condensation and collection by the internal trough under the condenser, which is then removed through the hose connected to the drain.

Then on the back wall of the condensation hood there is the spiral pipe connected to the combi-steamer extraction connection. That pipe is always in the state of slight negative pressure (during the hood operation) and collects vapours from the combi-steamer.

The condensation hood is equipped with the system of automatic humidity detection in order to adjust the motor speed, and therefore the suction force.

Before the first use

- The device should be thoroughly cleaned before the first use. Follow instructions in section 6 “Cleaning and maintenance”.

Device start-up

  • Connect the device to the main switch.
  • Start the condensation hood when required. It operates at the lowest speed after activation. Humidity is removed through the outlet on the combi-steamer back wall.
  • Humidity (e.g. after door opening) is detected by the automatic detection system sensor and the suction force is properly adjusted to absorb as much steam as possible.
  • When the device will not be used anymore it should be turned off with use of main switch.

6. Cleaning and maintenance

BARTSCHER 117002 - Cleaning and maintenance - 1

  • Clean it with a soft cloth only and never use any abrasive cleaning agents that could cause damage to the surfaces of the device.
  • Do not use any wire brushes or metal scrappers.
    ○ Housing of the device should be periodically wiped with soft cloth moistened with warm water and gentle cleaning agent.
  • All cleaned surfaces should be dried thoroughly.

Labyrinth filter cleaning

  • The labyrinth filter should be cleaned periodically.
o Remove the labyrinth filter (fig. below) and wash it manually or in the dishwasher.
