Frequently Asked Questions - Gaia Klarstein

How long does it take to make yogurt with the Klarstein Gaia?
The preparation time varies depending on the milk type: 8 hours for whole milk, 10 hours for 2% milk, 11 hours for 1% milk, and 12 hours for skimmed, soy or almond milk. The glass jars are ready after the indicated time, the square container requires an additional 2 hours.
What type of milk can I use?
You can use whole, 2%, 1%, skimmed milk, soy milk or almond milk. Whole milk gives the best taste. Plant-based milks require a longer preparation time and produce a softer yogurt.
How to clean the yogurt maker?
Always unplug the appliance before cleaning. Never immerse the base in water. Clean the exterior with a damp cloth. The glass jars and lid can be washed by hand or in the dishwasher.
Can I use store-bought yogurt as a starter?
Yes, choose a plain yogurt with active probiotics, very fresh and with a distant expiration date. Do not use drinkable, flavored or fruit yogurt. You can also use freeze-dried starter cultures.
How to make Greek yogurt?
After preparation, place the yogurt in the included strainer, set it on the large container, cover and let drain in the refrigerator for at least 3 hours. The longer you let it drain, the thicker the yogurt will be.
Is the square container included?
No, the square plastic container is not included and must be purchased separately. The machine comes with 6 glass jars.
Do I need to boil the milk beforehand?
It is recommended to heat the milk to 35-43 °C to activate the cultures. If you use raw milk, boil it for a few minutes while stirring, then let it cool to the indicated temperature.
How to set the timer?
Press the 'Time' button several times to select the desired time (up to 12 hours depending on the milk). The screen shows the duration in hours or minutes. Once set, press 'Start/Stop' to begin preparation.
What to do if the yogurt is too runny?
Use whole milk and extend the fermentation time by 1 to 2 hours. Make sure the starting temperature of the milk is between 35 and 43 °C. For a firmer yogurt, strain it into Greek yogurt.
Can I make flavored yogurts?
Yes, you can add fruits, honey or flavors after fermentation, before refrigerating. Avoid adding acidic ingredients before fermentation as they can prevent setting.

YOGHURT PREPARATION

When you use your Yoghurt Maker for the first time you will need to

Milk (use one of the following): Whole milk, 2%, 1%, skim milk, soy or almond milk.

Note: Whole milk usually gives the best taste. Milk products have a lower fat content and take longer to prepare and prepare, resulting in a softer yoghurt.

Bought natural yoghurt with active probiotics (Buy the freshest available, which has the latest expiry date.)

Note: Do not use liquid or flavoured yoghurts or fruit yoghurts as starting culture. Freeze-dried yoghurt cultures are available in most health food stores.

You also need:

  • Timer (if the machine has an on/off switch)
  • Thermometer
  • Whisk
    • High pot or a large microwave-proof measuring cup
  • Liquid measuring cup
  • Measuring spoon

Preparation

Yoghurt from fresh milk (this method is not suitable for almond and soy milk)

1 Pour the milk into a saucepan or microwaveable measuring cup.
2 Heat the milk at medium temperature on the stove or microwave and stir occasionally. Keep an eye on the milk. As soon as it begins to boil, it will overflow quickly. Remove it from the stove immediately.

Note: If you are using raw milk, let it boil for several minutes, stirring constantly to prevent it from overflowing.

3 Set the milk aside and let it cool to 35-43^ C. If you put the milk in a bowl of cold water, it will cool down faster. Use a whisk and gradually mix half of the cooled milk into the yoghurt starter culture until a smooth mass is formed.

Note: If you use cultures from yoghurt that has already been made, the yoghurt should not be older than 3-4 days.

4 Then add the remaining milk and mix with a whisk until it is completely mixed and no lumps are left.
5 Pour the mixture into clean glasses up to just below the thread or into the rectangular plastic box, without the plastic strainer.

The following method is suggested for soy and almond milk

  • Heat the desired milk in a saucepan or microwave.
  • Heat the milk to 35-43 °C. Keep an eye on the milk and use a thermometer to avoid overheating.
    • Follow steps 4 to 6 of the above method.
