Ingredients

The waffle batter: (minimum 12 waffles)

450g self-raising flour
3 eggs
- 150g melted butter
375 g of milk
375 g lukewarm water
- 20g of fresh yeast
- a pinch of salt

Note: You can also use normal ready waffle mix or any other kind of recipes you find of waffles in this waffle maker.

Preparation

  • Weigh all the ingredients carefully.
  • Take two large mixing bowls and separate the eggs, the egg yolks go into the bowl for the batter, the egg whites we stiffen later. (Note: You can also use a food processor with whisk for preparing the batter.)
Whisk the egg yolks here with a whisk.
  • Then add the right amount of milk and fresh yeast to it. Beat with the whisk until the yeast has dissolved.
  • Pour the lukewarm water into the batter.
  • Sift the flour, then into the mixing bowl, and stir with the whisk until the batter is free of lumps.
  • Put the measured quantity of butter in a saucepan. Let it melt on low heat.
Pour the melted butter to the batter and stir in the meantime with the whisk.
  • Beat the egg whites to a stiff foam. Use a clean whisk and make sure that the bowl is degreased with a few drops of lemon juice and a pinch of salt. (Again, you can use a food processor with whisk.)
  • Fold in the whipped egg whites into the batter. Do it gently to keep as much air as possible in the batter.
  • Finally, sprinkle a pinch of salt in the batter and fold gently one last time.
  • Set aside the waffle batter in a warm draft-free spot and leave it for 20 minutes.
