SAFETY INSTRUCTIONS
- Read all instructions carefully.
- Check the products rating label and make sure the water urn voltage is fit for your outlet voltage before using.
• The plug should be connected to the earth block. - Do not use the water boiler if the cord or plug is damaged.
- If the water boiler malfunctions or is damaged, please call customer services for checking and repairing.
- Switch off the button before removing the plug.
• Always switch off before trying to move the water boiler. - Grasp the plug when you remove it. Do not pull the cord.
- Do not let the power cord hang over edge of a table.
- Place the water boiler securely at the center of table.
- Do not switch on the water boiler if the water tank is empty.
- Do not place the water boiler near gas cooker, electric burner or heated oven.
• Power cord and plug can not touch water in the case of a leakage. - Please remove the plug from outlet, and cool off the plug before cleaning.
- Press the Switch Off button, and remove the plug after using.
• The appliance requires a 10-16 A plug. - The appliance is only to be installed in locations where it can be overseen by trained personnel.
- Do not remove the lid while boiling.
- Position the lid so that steam is directed away from the handle.
- Do not carry the urn while water inside.
- If the appliance is overfilled, boiling water may be overspill.
- BOIL DRY: The Urn has a preventive boil dry function, when the appliance burns out, this function will be activated automatically. First the boil-dry thermostat will cut out while the element over heat. At that time, please fill some water inside or wait until the element cool down, then turn on the switch again. In case of burn out, please always make sure there is at least 3 litres liquid inside.
- The mash tun becomes hot when in operation! Always use heat-insulation pot holders when gripping the handles.
- Never dip the mash tun into water. Always protect the electric power cable from mixture.
Note: In some countries, it is required by law to register the production of beer of self-use with the authorities.

Important note on connecting the pump
Place the unit on a raised surface. Otherwise it is difficult to connect the pump and pump/hose are in a sub-optimal position (see picture).

General Controller Operation
- Plug in the brewer.
- Turn on the power and the controller will display the current temperature in Centigrade.
- Press the STEP SET/START/OFF button to set the program.
- When 'S1' is flashing, press the TEMP button and SET- button or SET+ button to select target temperature, press the TIMER button to adjust the duration and press POWER button to adjust the heating power. During step 1 the power should be the highest setting.
- If you only want to program one step, press and hold the STEP SET/START/OFF key for 3 seconds to start heating up. Otherwise, press the STEP SET/START/OFF button twice and proceed to the next step. S2] starts flashing.
- After you have finished setting step 4, hold down STEP SET/START/OFF button for 3 seconds to start the program and the machine will start to heat up.
- The controller will turn off automatically when the program finishes.
- When one step has finished and the machine is ready to go to the next step, it will beep 9 times.
- Press the TEMP, TIMER or POWER buttons to change the values when heating or keeping warm. Set the target value using the SET- and SET+ buttons and wait five seconds. The target value is copied. Do not hold down the STEP SET/START/OFF key, this resets the programming.

General Key Functions
"STEP SET / START / OFF" button:
• After plugging in, press the button once to SET Step 1 and press the button twice to SET Step 2, Step 3 and Step 4
• After finishing EACH STEP SET for temperature, timer and power, hold down the button to START
- When the machine is on "boiling" or "keep warm", hold down the button to turn OFF the machine, and reset each step to run the brewer again
"POWER" button is to set the power between 500W - 2500W for boiling (changes by 100W each time it is pressed)
"TEMP" button is to set the target temperature between 30-140 °C (changes by 1 °C each time it is pressed). If you want to change to °F hold down the button for three seconds and change to target temperature 86-284 °F (changes by 1-2 °F each time it is pressed)
"TIMER" button is to set the time from 1 min-99 min (changes by 1 min each time it is pressed)
- SET-button is to lower the temperature/timer/power
- SET+ button is to increase the temperature/timer/power

Further Settings
After the fourth step (at least 1 step) set is done, hold down the "STEP SET / START / OFF" button for 3 seconds to START the operation.
You can see the "power", "target temperature" and "current temperature" and "mashing" lights for each step flash in turn while boiling. After reaching the target temperature, the target temperature and power of each step will flash in turn while keeping warm, and the timer will begin to count down.

After you hear 9 beeps the machine will automatically proceed to S2, S3 and S4 if they have been set. If you hear one long beep after the last step, the machine will automatically turn off and the display shows the actual temperature.
If you set the wrong data, you can hold down the "STEP SET / START / OFF" button for 3 seconds to turn OFF the machine to reset during a step operation, or unplug and plug the machine in again to reset.

How to set "TEMP"?
Press the "TEMP" button to set the target temperature for each step and press the "SET+" or "SET-" button to adjust by 1 °C or 1-2 °F. The default temperature is 102 °C.
How to set "POWER"?
Press the "POWER" button to set the target power for each step and press the "SET+" or "SET-" button to adjust by 100 W for each step.
How to set "TIMER"?
Press the "TIMER" button to set the target timer for each step and press the "SET+" or "SET-" button to adjust by 1 minute for each step. The default timer setting is 60 Min.
How long can the user set for step mashing?
99 minutes for each step (meaning a total of 396 minutes for all 4 steps).
What should I do if the boiling temperature is not as accurate as the thermometer?
Start calibration by pressing the „SET+“ &“SET-“ buttons simultaneously. Correct the displayed temperature by up to +10°C or -10°C by pressing the „Set+“ or „Set-“ button. Wait five seconds to accept the selected value.

CLEANING AND CARE
• Each part that has been in contact with the wort should be cleaned after brewing.
- Do not use a dish washer to clean small parts.
- Do not use acidic, alkaline or salty liquids to clean.
• Water or cleanser essence is suitable for cleaning.
- Pumping hot water through the circulation tube and anti-burn tube to clean is suitable.
