Preserving food

Hints for food preservation

• To ensure that the preserved food will keep for as long as possible, cleanliness and thorough preparation are essential.
- Fruit and vegetables should be of good quality, fresh and ripe.
• Additional information on the various methods of preserving fruit or vegetables is available in numerous cook books.

Preparing the food to be preserved

Wash the whole fruit or vegetables thoroughly and let them dry; do not cut them. Green beans and peas keep longer if you briefly blanch them first.

Preparing the jars, lids and lid fasteners

  • Glass jars, tins, bottles and all lids should be washed carefully in hot soapy water, then rinsed with clean water and placed on a clean cloth until the water has run off.
  • Check all containers, lids etc. for stubborn residues and damaged pieces.
  • Leave the rubber seals and fasteners in clear water until they are needed. Do not use any porous, damaged or over-stretched rubber rings or caps.
  • Fill the jars or tins up to 2 cm below the rim; when preserving pulpy items (apple purée etc.) leave 3 to 4 cm below the rim. When preserving sausage fill containers only three quarters full.
  • Close the containers tightly with their screw-on lids or clamps.

Preserving food

  • Put the grid insert inside the chamber. Do not place a cloth between the chamber bottom and the grid insert.
  • Fill the chamber with at least 6 litres of water.
  • Place the prepared glass jars on the grid insert in the cooker. The water temperature should be approximately that of the jars.
  • The highest glass jars (i.e. those on the upper level) must be 3/4 submerged. If both levels are being used, the lower-level jars will be completely submerged.
  • Attach the lid.
  • Connect the appliance to the mains power.
  • Use the temperature control to select the correct setting in accordance with the Preservation cooking timetable (see at the end of this instruction manual).
  • Timer-supported models:
To pre-heat, set the timer to ON/Continue (continuous operation), and afterwards to the desired time.
    • The pilot light comes on and the appliance starts heating up.
  • The actual preserving (i.e. cooking) process begins when the thermostat switches the pilot light off for the first time. The heating-up time is not counted in the cooking process. Depending on the quantity and temperature of the water in the chamber, this heating phase may take up to 90 minutes.
  • If boiling point is reached during operation although the thermostat has been set to a point below the MAX position, turn the thermostat slightly

lower so that the pilot light goes out. A significant amount of steam build-up indicates when the boiling point has been reached.

  • When preserving food, never go below the recommended cooking times; if in doubt, a longer cooking time should always be chosen.
  • Once the preserving process is complete, reset the thermostat to its OFF-position.
  • Disconnect the appliance from the mains outlet.
  • Remove the jars. Caution: beware of the danger of scalding. Place the jars on a cloth and use a second cloth to cover them.
  • Do not remove the clamps or lid fasteners from the jars until they have completely cooled down.
  • When using tins for preserving food, place them in cold water after preserving is complete.

After the preserving process

  • For several consecutive preserving cycles, the water in the chamber may be re-used.
  • Do not place glass jars in hot water: pre-heat the jars first.
  • Bottles should be closed immediately after the sterilisation process is complete.
  • It is advisable to mark the glass jars, tins etc. with their date and contents for later reference.
  • The best way to keep preserved food is in a dry, cool and dark environment.

- If the glass jars are not properly closed after the preserving process, their content will not keep long and should be used up as soon as possible.

Cleaning and care

  • Before cleaning the appliance, ensure it is disconnected from the power supply and has cooled down completely.
    • To avoid the risk of electric shock, do not clean the preserving cooker under running water and do not immerse it.
  • Do not use abrasives or harsh cleaning solutions.
  • A damp cloth with a little detergent is sufficient to clean the chamber, lid and grid insert.
  • Any lime deposits that may have formed should be removed from time to time with a commercially available, citric-acid-based descaling agent suitable for enamel. (For proper use of the descaling agent, refer to the manufacturer's information on the packaging). Caution: Do not use vinegar. Afterwards boil thoroughly with clean water. (The grid insert must be removed prior to descaling).
