Frequently Asked Questions - DF1800 ALASKA

What type of oil can I use in the Alaska DF1800 deep fryer?
Use oil with a high smoke point (e.g., corn oil, soybean oil, sunflower oil). Avoid olive oil, butter, lard, or flavored oils. Do not mix different oils.
How much oil should I fill?
Fill oil between the MIN and MAX markings inside the frying container. Do not exceed the maximum capacity of 2.5 liters.
Can I fry frozen food directly?
Yes, but fill the frying basket only half full and lower it slowly to avoid oil splashing. Dry food thoroughly before frying to prevent foaming.
Why is the working indicator light not on?
The green working light turns off when the oil reaches the set temperature and turns on when the heating element is active. If it never lights, check that the thermostat is set above 0 and the appliance is plugged in.
How do I clean the deep fryer?
Unplug and let cool completely. Remove the lid and basket. Wash the basket and lid with warm soapy water. Wipe the housing and frying container with a damp cloth. Do not immerse electrical parts in water.
How often should I change the oil?
Change oil every 3 to 4 frying sessions, or sooner if it becomes dark, smokes, or foams. Filter used oil after each use to extend its life.
What should I do if the oil catches fire?
Unplug the appliance immediately. Do not use water. Place the lid on the frying container to smother the fire. Use baking soda or a fire extinguisher if needed.
Can I use solid fat (shortening) in this fryer?
Yes, cut solid fat into small pieces and melt it slowly in a pan before pouring into the frying container. Never melt fat directly in the frying basket.
Why is there condensation under the lid window?
Condensation is normal during frying. Wipe it away before closing the lid for the next batch to prevent water from dripping into the oil and causing splashing.
What is the recommended frying temperature for French fries?
For frozen French fries, set the thermostat to 170°C and fry for 8-12 minutes. For homemade chips, do not exceed 170°C to reduce acrylamide formation.

Suitable Not suitable
Oil or fat with a high smoke point such as: pure corn oil, soybean oil, sunflower oilOil or fat with a low smoke point such as: olive oil, wheat oil, linseed oil, peanut oil, walnut oil, lard or butter

TIPS FOR DEEP FRYING FOOD

• Dry all food prior to frying. Foaming of oil or fat may be avoided.
- Defrost refrigerated food before frying or dip those 1 or 2 times shortly into the hot oil or fat.
- Deep-frozen food cools down the oil or fat considerably. Do not fry too large quantities of deep-frozen food at once.
• Make sure that the breadcrumb coating of crumbed food sticks to the food.
- Pay attention to the frying time and check the food irregularly during cooking through the window (1). Continue frying if needed.
- Salt or season food only after you finish the frying in order to avoid the frying oil or fat getting contaminated.

Acrylamide warning

The harmful substance acrylamide is produced when starchy food is heated to high temperatures, for instance, when deep frying chips as potatoes contain starch. In animal experiments, acrylamide has carcinogenic and mutagenic effects; it is possible that it has the same effects on humans. Thus, it is important to ingest as little as possible of this harmful substance. The formation of acrylamide increases substantially when starchy foods are deep fried at temperatures higher than 175 °C. To be on the safe side, STIFTUNG WARENTEST therefore recommends to set the deep-fryer to a frying temperature of not higher than 170 °C when preparing chips, for example.

COATING FOOD

Bread fish, poultry and dough to prevent it from sticking to the basket (16).

Type of coating Preparation
Egg coating Mix 2 whole eggs with 1 12 teaspoons of vegetable oil, and add a pinch of salt and pepper.
Crispy coating Beat 100 ml milk and 1 whole egg together. Combine 125 g flour and your favourite seasonings (salt, pepper, garlic etc.) separately. Dip food into milk and egg mixture, then coat with seasoned flour.
