Before using the unit for the first time clean the base (11) and the accessory as described below under “Cleaning and Storing” on page 38. Keep the manual close to the unit as it is part of the unit. The manual contains useful hints on operating and cleaning the unit.

Operation as Dehydrator

After unpacking the unit and the accessory, run the dehydrator for 30 minutes with empty dehydrating trays. Thereafter rinse the dehydrating trays in water and dry all parts well. This procedure is only necessary before first use.

  1. Place the base (11) on an even and level surface. Always make sure there is enough space over and beside the unit in order to prevent damages (e.g. to cabinets) due to hot steam escaping from the unit.

  2. Arrange the fruits/vegetables on the dehydrating trays. Place the dehydrating trays (4) on the base and connect the plug to power mains.

  3. Push the ON/OFF switch (10) to the left for dehydrating. The green power indicator LED (8) will turn on.

- The food dehydrator includes 4 stackable dehydrating trays. The air vents on the transparent lid allow air to be circulated. The air is circulated from the base of the dehydrator to each of the four dehydrating trays and removes moisture from the food.

[Non-Text]

Dehydrator

  • You can also use only one or two dehydrating trays if you do not want to dehydrate too much fruit/vegetables. Please always operate the unit with the transparent lid on the dehydrating trays.
    ■ Evenly spread the food to be dehydrated on the trays. Do not put one upon the other. Use only to 90% of the surface on the trays to allow air to circulate freely.
  • Depending on the moisture of the food itself and the humidity in the air, drying operation time can vary. Use the dehydrator in a dust free, warm and dry room. Well air ventilation is also important.
  • If you notice uneven drying during operation, switch off the dehydrator and re-position the dehydrating trays. Place the bottom tray on top and vice versa.
  • Fruit and vegetables dried in your food dehydrator will be different in appearance from those sold in health food stores and supermarkets. This is due to your food dehydrator uses no preservatives, no artificial colouring and only natural additives.
  • Records of humidity, weight of product before and after drying times, will be helpful to improving your drying techniques for the future.

Storing dehydrated Food

  • Cool down the food before storing as condensation in the container will cause mildew.
    ■ Always make a dryness test. Switch off the dehydrator before taking test pieces.
  • The consistency of dried fruits should be soft and pliable when properly dried.
  • The consistency of dried vegetables should be firm without soft spots.
    ■ Dried meat is leather-like.
    ■ Dried fish is dry and pliable.
  • The next day, after storing, check if there is still moisture in the food. If so, dry the food again.
  • Preferably use dry containers to store the food. Containers or glass jars with metal screw lids are ideal for storing dried food. Store fruits in

Dehydrator

a cool and dry area and as dark as possible. The ideal temperature for storing dehydrated food is 5 – 20°C.

Fruits

  • Wash fruits and remove any blemishes. Dry off fruits and slice in equal pieces. Remove stones from stone fruits like plums, cherries, peaches etc. before drying.
  • If desired, pre-treat the fruits. Pre-treatment makes fruits look better and increase the shelf life. Fruits taste better and dry faster. Use pineapple or lemon juice to prevent browning. Soak fruits for 2 – 3 minutes in the juice before drying.
  • Sprinkle fruits with brown sugar, cinnamon or coconut or with honey to give an interesting flavour. Blanche fruits with natural protective wax coating e.g. figs, grapes and prunes before drying. Blanching speeds up drying process. Immerse fruits in boiling water for 1 – 2 minutes and plunge into ice cold water. Slice blanched fruits in thin slices.
  • The mentioned times for dehydrating food are guidelines only. According to taste, prolong or decrease the time.

Vegetables

  • Wash vegetables and remove any blemishes. Cut vegetables in equal pieces.
  • Pre-treat the vegetables to speed up drying process. Vegetables with long cooking times require steam blanching. Bring a saucepan of water to boil. Place vegetables in a colander in the saucepan and cover. Blanch vegetables for 1 – 5 minutes.
  • Finally cool down vegetables in ice water, drain and dry off before drying.

Herbs

  • Wash herbs and remove any blemishes. Use also stems or leaves.
    ■ Evenly spread herbs on the dehydrating trays. Do not put one upon the other. Many herbs can be dried with stems.
  • Do not store herbs in paper bags as the oil will be absorbed by the paper.

Dehydrator

Flowers

■ Wash flowers and remove any blemishes.
- Use young flowers as full bloom flowers tent to loose their petals. Use also petals.
- Evenly spread flowers and the petals on the dehydrating trays. Do not put one upon the other. You can also dry some flowers with their stems.

Potpourri

- Place dried flowers in a large glass container; add 3 – 4 drops of perfumed oil to enliven the fragrance. Add more oil from time to time.

Meat

  • Wash meat and trim excess fat, sinew and bones.
  • Make sure the meat to be dried is always fresh! Slice into thin strips. Marinate the meat for 6 – 8 hours before drying in order to tender the meat. According to taste use either ready-made marinade or prepare your own marinade. It is necessary to add salt to the marinade to remove water from the meat.
    ■ Evenly spread the meat on the dehydrating trays. Do not put one upon the other.
  • If you notice uneven drying, switch off the dehydrator and move the bottom dehydrating tray up and the top tray down. The min. uninterrupted drying time for meat is at least 10 hours.

Fish

  • Wash the fish and remove the bones. The fish to be dried must be fresh! Slice the fish in thin strips. Sprinkle the fish with lemon juice and soak for half an hour in saltwater (250 g salt and 2 litres water). Dry off the fish before drying in the dehydrator.
    ■ Evenly spread the fish on the dehydrating trays. Do not put one upon the other. Use only to 90% of the space of the tray to allow air to circulate freely.
  • The min. uninterrupted drying time for fish is at least 10 hours.

Dehydrator

Fruits and Vegetable Rolls

- Wash fruits or vegetables and remove any blemishes. Dry off fruits or vegetables.

- Line the dehydrating trays with parchment paper (cut the parchment paper a little bit smaller than the diameter of the trays). Puree fresh, canned fruit or vegetables to a consistency that can be spread with a spatula over the parchment paper. Spread the puree and make sure the thickness does not exceed 5 mm.

- Chewy rolls are ready when the centres are no longer sticky to touch. Remove the fruit or vegetables while they are still warm to prevent sticking. Roll tightly and slice into desired portions.

  1. Fill the base with approx. 500 ml fresh water without adding spices such as stock, seasons, wine, salt etc. When using lukewarm water, heating time will not take so long.
When filling water observe the MAX marking inside the base.
  2. Place the washed and sliced food into the steam insert (3) and position the steam insert on the trivet.
  3. Close the steam insert with the transparent lid.
  4. Plug the power plug into the wall socket. Push the ON/OFF switch (10) to the right for steaming. The red power indicator LED (9) will turn on.

Water Level

- During steaming, always mind the water level. If water amount is too low, the unit can overheat and become damaged.

Steamer

- When filling the base with water make sure not to fill beyond the MAX marking. When filling the base up to the MAX marking with 500 ml water the unit will cook the food up to 30 minutes.

After Cooking

After cooking process, check whether the food is done. If you want to continue steaming, check the water level, add water if necessary, place the transparent lid on the steam insert and continue steaming.

  1. Remove the transparent lid only with oven gloves. Attention there is risk of burns!
  2. Pull the power plug and pour remaining water from the base.

Hints for Steaming Food

  • The unit is perfect for cooking vegetables, fish, meat and poultry. Steaming is a most gentle and healthy way of preparing food.
  • When cooking marinated food slightly dap off excess liquid form the food and then place the food into the steam insert.
  • Add spices after steaming.
  • Thaw frozen food such as meat, fish etc. prior to place it in the unit. Frozen vegetables do not need to be thawed.
  • Do not place the portioned food too close together, otherwise steam cannot rise sufficiently.
  • If possible portion the food into equal parts. Cut off thick stems and remove stalk (e.g. when cutting broccoli, cauliflower etc.) Always cut the vegetables in small pieces (strips, tips, cubes etc.). Remove the stems from the mushrooms.
  • Cut fish in pieces of max. 2 cm thickness, season and wrap in aluminium foil. Remove heading and tailing of the shrimps. Remove the scallops from the shells.
  • When steaming large parts, turn around during half time cooking.
  • Steam leafy and green vegetables for the shortest possible time as they will lose colour easily.

Westfalia 847399 - Hints for Steaming Food - 1

  1. Fill the base with approx. 250 ml fresh water without adding spices such as stock, seasons, wine, salt etc. When using lukewarm water, heating time will not take so long.

When filling water observe the MAX marking inside the base.

  1. Measure the desired rice amount. Wash and season the rice according to taste and put the rice into the rice tray (2). Now you can also add water/stock/additional supplements

Approx. 50 – 60 g dry rice is equal to approx. 1 portion of cooked rice. The max. capacity of the rice cooker is 600 g dry rice that is equal to approx. 12 portions of cooked rice.

50 g dry rice + 50 ml liquid in the rice tray

100 g dry rice + 100 ml liquid in the rice tray

  1. Close the rice tray with the transparent lid.
  2. Plug the power plug into the wall socket. Push the ON/OFF switch (10) to the right for steaming. The red power indicator LED (9) will turn on.
  3. Remove the transparent lid only with oven gloves. Attention there is risk of burns!
  4. The rice will be done after approx. 30 minutes. Pull the power plug if you do not further use the unit.

Hints for Preparation of Rice

  • Allow the cooked rice to rest for approx. 10 minutes before serving. The steam inside the unit will finish cooking process. Do to leave the cooked rice for longer than 10 hours in unit. Consume the rice within this period.
  • Rice does not need to be soaked.
  • It is controversial whether rice has to be soaked in water or not before preparing in the rice cooker. Those in favour argue that by washing the rice, the starch content will be washed out. Those against think that valuable soluble vitamins and minerals will get lost during washing.
  • When using soft or unpeeled rice, always use the indicated liquid amount for cooking, e. g. for approx. 100 g dry rice use approx. 100 ml liquid (water/stock etc.). When using long-grain rice or hard rice, use a little bit more water than indicated.
  • For preparing Sushi rice preferably use husked resp. polished rice.
  • When preparing rice with side dishes, make sure the supplements do not exceed 50% of the dry weight of the rice. Using too much supplements will lead to bad results. For this purpose preferably use white rice. Cut the side dishes in small pieces. The vegetable pieces should not be larger than 4 cm (thickness/length). Preferably place the vegetables on the top of the rice. Do not stir the vegetables.
  • When cooking discolouring food (carrots), the rice tray might become stained. However, this will not impair cooking process.

  • Pull the power plug and allow the base to cool down before cleaning.

  • Never clean the base in the dishwasher and to not immerse the base in liquids of any kind. Clean the base with a moistened cloth and less detergent. Preferably clean the base when the unit is still warm. By doing this calcification can be removed more thoroughly. Please make sure

natural_image Line drawing of a kitchen appliance with a lid and base, showing a drop in the top part (no text or symbols)

to seal the steam outlet with the cleaning cap (6). Make sure that water cannot get into the steam outlet.

  • The accessory can be cleaned in the dishwasher. Before and after each use clean the accessory thoroughly. Do not use aggressive chemicals or abrasives for cleaning in order not to damage the surfaces.
  • Please note that discolouring food such as carrots, pepper and tomatoes can discolour the plastic parts. However, discolouring will not impair cooking process.
    ■ Always dry well all parts before storing them.
  • Store the unit in a dry place and protect it from dust and dirt and extreme temperatures.
  • Keep the unit out of reach of children.
