Sicherheitshinweise

Please note the following safety notes to avoid malfunctions, damage or physical injury:
- Make sure the power mains correspond to the type label on the appliance.
- Persons with limited physical, sensorial or mental abilities are not allowed to use the unit, unless they are supervised and briefed for their safety by a qualified person.
- Never leave the appliance unsupervised when in use. Keep it out of reach of children or persons in need of supervision.
- Never immerse the appliance in water or any other liquids. Do not put it into the dishwasher. Do not use the appliance with wet hands.
- Never place the appliance near or on hot surfaces. The appliance becomes hot while in use! Use the appliance well away from walls and curtains. Do not use spiky objects in the appliance.
- Switch OFF the appliance and unplug it from the power supply before cleaning or when not in use.
- Always place the unit in a dry place. Never cover the air vents. Danger of fire!
- The device is not intended for continuous professional operation. The device is intended to be used in closed rooms only and in similar applications such as: staff kitchen areas in shops, offices and other working environments; farm houses; by clients in hotels, motels and other residential type environments; bed and breakfast type environments. The use in any other way is not considered as intended use.
- Never move the appliance by pulling the cord. Make sure the cord cannot get caught in any way. Do not wind the cord around the appliance and do not bend it.
- Keep all parts of the appliance clean at all times as they come into direct contact with food.
- Use only original spare parts which can be purchased from Westfalia.
- CAUTION: In order to avoid a hazard due to inadvertent resetting of the safety cut-off, this appliance must not be controlled by automatic switching devices such as timers.
- Should the appliance become damaged do not use it and have it repaired by a professional or contact our customer support department. Do not disassemble the appliance or try repairing it yourself.

■ Before using the first time, clean all parts of the appliance.
- Clean the appliance with a lightly moistened cloth. Use detergent as needed.
- Do not wash the appliance or the racks in a dishwasher or immerse it in water or any other liquids.
After cleaning, let the unit run for 30 minutes with no "load". Then rinse the racks in water and dry all parts. This act is only necessary for the first time.
Cleaning
- Unplug the dehydrator from the power supply and let it cool down before cleaning. Use a soft brush to remove food sticking. Dry all parts before storing the dehydrator.
- Do not clean the appliance with aggressive chemicals or abrasives in order not to damage the surface.
Assembling the appliance
■ Make sure that the dehydrator sits steadily on a solid, level surface.
- Stock the drying racks and connect the plug with a wall socket. The dehydrator is now ready for use.
Hints:
- This dehydrator includes 5 stackable racks and an overheat protection. The lid contains the motor and the On-/Off-switch. The air vents on the lid allow air to be circulated.
- Using a controlled heat temperature system, air is circulated from the top of the dehydrator to each of the five racks and the base to removes moisture from food.
- Depending on the moisture of the food itself and the humidity in the air, drying operation time can change. Use the dehydrator in a dust free, warm and dry room. Well air ventilation is also important.
- Fruit and vegetables dried in your food dehydrator will have a different appearance from those sold in health food stores and supermarkets. This is due to your food dehydrator does not use any preservatives, no artificial colouring and only natural additives.
- Records of humidity, weight of the product before and after drying times, will be helpful to improve your drying techniques in the future.
Drying Fruits
Preparation
- Wash fruits and remove any blemishes.
- Dry off fruits and equally slice in pieces of 5 mm in order to achieve the best drying efficiency.
- Remove stones from stone fruits like plums, cherries, peaches etc before drying.
- Pretreat fruits if desired. Pretreatment makes fruits look better and increase the shelf life. Fruits taste better and dry faster.
- Use pineapple or lemon juice to prevent browning. Soak fruits for 2 – 3 min. in the juice before drying.
- Sprinkle fruits with brown sugar, cinnamon or coconut or with honey to give an interesting flavour.
- Blanche fruits with natural protective wax coating e.g. figs, grapes and prunes before drying. Blanching speeds up drying process. Immerse fruits in boiling water for 1 - 2 minutes and plunge into ice cold water. Slice blanched fruits in thin slices.
Drying Fruits
- Evenly spread fruits on the racks. Do not put one piece on top of another.
- Only use up to 90% of the rack's capacity to allow air to circulate freely.
- To use the dehydrator efficiently, remove not-needed racks. If you notice uneven drying, switch off the dehydrator and move the bottom rack up and the top rack down. Dry for 8 – 10 hours.
Storing
- Cool down fruits before storing as condensation in the container causes mildew.
- Always make a dryness test. Switch off the dehydrator before taking test pieces. Drying fruit will be soft and pliable when properly dried.
- Check the content for moisture during the first week after drying. If moisture appears, dry it again.
- Containers should be dry, glass jars with metal screw lids are ideal containers. Store fruits in a cool and dry area and as dark as possible. The ideal temperature for storing dehydrated food is 5 – 20 °C.
Drying Vegetables
Preparation
- Wash vegetables and remove any blemishes. Equally cut vegetables in slices of 5 mm in order to achieve the best drying efficiency.
- Pretreat vegetables to speed up the drying process. Vegetables with long cooking time require steam blanching.
- Bring saucepan of water to boil. Place vegetables in a colander in the saucepan and cover. Blanch vegetables for 1 – 5 minutes.
- Cool vegetables in ice water, drain and dry off before drying.
Drying Vegetables
- Evenly spread vegetables on the racks. Do not put one piece on top of another.
- Only use up to 90% of the rack's capacity to allow air to circulate freely.
- To use the dehydrator efficiently, remove not-needed racks. If you notice uneven drying, switch off the dehydrator and move the bottom rack up and the top rack down. The drying time can be up to 12 hours.
Storing
- Before taking test pieces, switch off the dehydrator.
- Always cool down vegetables before storing. Dried vegetables should feel hard and firm with no soft sports.
- Check the content for moisture after drying. If moisture appears, dry vegetables again.
- Use dry glass jars with metal screw lids. Store vegetables in a cool and dry area and as dark as possible. The ideal temperature is 5 – 20 °C.
Preparation
Wash herbs and remove any blemishes. Use also stems or leaves.
Drying Herbs
- Evenly spread herbs on the racks. Do not put one piece on top of another. Many herbs can be dried with stems.
- Only use up to 90% of the rack's capacity to allow air to circulate freely.
- To use the dehydrator efficiently, remove not-needed racks. If you notice uneven drying, switch off the dehydrator and move the bottom rack up and the top rack down. Dry for approx. 8 – 10 hours.
Storing
- Check the content for moisture after drying. If moisture appears, dry it again.
- Do not store herbs in paper bags as the oils will be absorbed by the paper.
- Place herbs in airtight containers and in cool and dark places.

Drying Flowers
Preparation
- Wash flowers and remove any blemishes.
- Use young flowers as full bloom flowers tent to loose their petals. You can use separated petals as well.
Drying Flowers
- Evenly spread flowers on the racks. Do not put one piece on top of another. Dry the flowers with the stems.
- Only use up to 90% of the rack's capacity to allow air to circulate freely.
- To use the dehydrator efficiently, remove not-needed racks. If you notice uneven drying, switch off the dehydrator and move the bottom rack up and the top rack down. The drying time is approx. 8 – 10 hours.
Creating a Potpourri
Place dried flowers in a large glass container; add 3 – 4 drops of perfumed oil to enliven the fragrance. From time to time add more oil.
Drying Meat
Preparation
- Wash meat and trim excess fat, sinew and bones.
- The meat must be fresh! Slice the meat into strips. Marinate the meat for 6 – 8 hours before drying.

- Only use up to 90% of the rack's capacity to allow air to circulate freely.
- To use the dehydrator efficiently, remove not-needed racks. If you notice uneven drying, switch off the dehydrator and move the bottom rack up and the top rack down. The uninterrupted drying time for meat is 8 – 10 hours.
Storing

Drying Fish
Preparation
- Wash the fish and remove fishbone. Fish must be fresh!
- Slice the fish in thin strips.
- Sprinkle the fish with lemon juice and soak for half an hour in saltwater (250 g salt and 2 litres water). Dry off the fish before drying in the dehydrator.

Preparation
Wash fruits or vegetables and remove any blemishes. Dry off fruits or vegetables.
Drying Fruits and Vegetable Rolls
- Cover the base with parchment paper.
- Puree fresh, canned fruit or vegetables to a consistency that can be spread with a spatula, over the base of the food dehydrator. Spread the puree over the base, to a maximum thickness of 5 mm.
- Chewy rolls are ready when the centres are no longer sticky to touch.
- Switch off the device and remove the fruit or vegetables while they are still warm to prevent sticking.
- Roll tightly and slice into desired portions. Dry for 8 – 10 hours.
